We dined at Salty Seafood on a Sunday evening and it was truly a fantastic experience. From the moment we walked in, we were greeted with exceptional hospitality, and the service remained consistently high throughout the evening. It was clear that the team truly enjoys what they do—that makes a huge difference. The restaurant itself is atmospheric and thoughtfully decorated, but what truly stood out was the food. We opted for the 6-course menu, and each dish was perfectly balanced in terms of flavor. There was a lovely variety of flavors and techniques, with surprising fish varieties you don't find everywhere. We especially appreciated their conscious approach to ingredients: almost every part of the fish is used, which feels sustainable and respectful. A huge plus! Another lovely detail: during one of the courses, a matching non-alcoholic drink was even served—carefully prepared and perfectly paired. Extra credit for that. In short: an evening full of flavor, experience, and hospitality. Definitely recommended to experience for yourself.

I hadn't been there for a while, and it was wonderful to be back and enjoy the delicious food and drinks. My taste buds were awakened with a fine bisque and the chef's oysters. Then we enjoyed four delicious and refined fish dishes, each gradually increasing in flavor intensity. Instead of dessert, we finished the dinner with the exquisite bisque and a few more of the chef's oysters :-)

This restaurant is highly recommended. Every dish was absolutely top notch. We had let them know in advance that one of us was less fond of cheese and very creamy. And they individually adapted the dishes for that person. They do everything they can to give you a nice evening. We also chose the wine arrangement. And got a good explanation of the wine why it went well with the dish. We also did an oyster tasting in advance where you could really taste the differences between Zeeland and Irish oysters. It is not cheap, but worth every euro.

In short: excellent. We had two fish menus and three vegetarian ones. Both we and our guests were thrilled. The quality of the food is excellent, and the ambiance and location are beautifully casual. We'll be back on our next visit to Zwolle—although Zwolle is definitely worth a detour anyway; it's a beautiful, pleasant, and friendly little town where, on a summer evening, all hell breaks loose—the whole city is on its feet, wonderful. We had a really great meal here. We chose the 6-course menu with matching wine arrangement, and the quality of the food was top. Beautiful, refined flavours and creative dishes, all perfectly prepared and beautifully presented. The hostess and service were also excellent: friendly, professional and with a lot of knowledge of both the food and the wines. A really warm welcome and very good service! The only point I would like to mention personally is that the portions were on the small side for me. Even though I am not a big eater, I still needed something to eat at home afterwards. I have never been so hungry after a dinner at this level, and I thought that was a shame, because the food was so delicious that I would have liked to have had a bit more of it. Given the price-quality ratio, I would therefore not recommend this restaurant.

SALTY SEAFOOD ZWOLLE Fish shops turned street-food joints are a staple in the Netherlands. You know the scene, plastic chairs, grease-stained tables, lekkerbekjes and kibbeling, maybe a blob of remoulade and a Hollandse Nieuwe to wash it down. I’ll snag a ‘bakje kibbeling’ first thing, arriving in Holland. And frankly, give me a perfectly prepared fish dish over a massive steak any day. Then, in 2022, Zwolle, the town I called home for years, welcomed Salty Seafood, the city’s first serious seafood restaurant. It’s run by Chef Nino Willems (Beluga, De Kromme Watergang, seven years at De Librije as sous and pastry chef) and partner Aysen Bilal (former Maître d’ at De Librije and Poppe, now curating fearless wine and cocktails, red wine with fish, yes they do). They squeezed 22 seats into a cozy street between the main squares, opposite a former church. On a sunny day, you half expect to hear French spoken in the air. Inside is like a bistro in Bordeaux, warm, relaxed, no airs, no attitudes. The bar doubles as the chef’s counter, the kitchen is barely bigger than one station at Locavore NXT, yet fully open. Each seat feels like a chef’s table. I suspect this might be the future of fine dining: small, accessible, high-end. Nino’s roots are Zeeuws, developing a love for seafood early on. Now, he’s been crowned Gault‑Millau’s “New Chef on the Block 2024” for making “refined fish dishes that remain accessible.” My dining partner and I served our plates back so clean they might’ve gone straight to the cupboard. Silence fell over every course as we savored each bite. Accessible is not boring here. These dishes are like still lakes with hidden currents, flavors that take you deep without losing you in the rip. And wine pairing? On point. We went with a six-course tasting plus oysters. Every dish was fish, except dessert. When each course finished, I felt a twinge of regret, not because they were small, but because I simply didn’t want the flavor ride to end. I like fish. I’m not afraid of flavor. Fishy taste isn’t sloppy here, it’s replaced by precision. That’s what makes Salty Seafood so compelling. Though fish is not a big hit for the Dutch, this place shows how fish can fuel your soul all night long.

We ate delicious fresh and superbly prepared fish in a delicious multi-course menu. The oyster tasting as an extra starter was a party!

What a nice little restaurant this is. You can watch the chefs preparing the food. The dishes are small, but tasty. The soup was excellent. The only downside was that there was quite a lot of time between the dishes, and almost everyone in the restaurant was eating at the same time but also waiting. 45 minutes between 2 dishes is a lot in my opinion. The staff was very friendly. Recommended if you have plenty of time!

Haven't eaten this well in a long time!! April 2025 Finally a chef with courage again! Real flavors! Use the products and reuse them in every possible way. Good combinations, the chef just knows what he is doing. I was a bit disappointed in all the kitchens over the last two years because they were very flat and finally I come to a kitchen where they serve real flavor explosions again. Yes, I'm a fish lover, but even as a meat lover you have to like this. Of course, one fish is not the same as the other and you like one more than the other, but the way it is prepared is so good that everything is actually tasty. The owner is also very nice Skilled and perfect for the job! Hats off to these 2 young entrepreneurs. Hopefully it will remain small and personal, which is a good thing for the restaurant! It's all about good food!! In a nice friendly atmosphere without too much fuss!!

Last week I ate at Salty Seafood for the first time, after hearing about it many times in Zwolle. The concept is interesting: they work together with a cutter and take the bycatch, resulting in unique dishes. Today we were served dry-aged monkfish as the third course—definitely the highlight of the evening. The monkfish was perfectly prepared, served in a beautiful sauce with beetroot. The natural sweet taste and lobster-like texture of the fish made an excellent combination. Unfortunately, the rest of the experience was a bit disappointing. The appetizers did not surprise in terms of taste, and the portions were downright small. I normally expect a feeling of satisfaction with a four-course meal, but that did not happen here. This was especially disappointing given the restaurant's reputation. The bread was delicious, but I didn't think the butter with black garlic was anything special. For comparison: I recently ate a sandwich with three types of butter in another restaurant, and at Suikerije in Zwolle I was served smoked butter—that gave it that little bit extra. The oysters were fine, but nothing special. The second course and the main course were good, but the dessert was not convincing. Given the Gault Millau rating, I honestly expected more. Fortunately, the wine pairing was fine. The wines matched the dishes beautifully and were carefully chosen, which added a positive note to the evening. Still, it says enough that we stopped by the FEBO after four courses. This is not normally something I need after an evening of fine dining. The fact that the portions were too small was not just a feeling, but a fact. Although I like to eat fish, I like it when there is some variety in between. That's a matter of taste of course, but all in all I wouldn't return to Salty Seafood anytime soon. Zwolle simply has too many quality restaurants that I would rather go to.

The food is delicious, very carefully and tastefully prepared. But a number of peripheral issues detract from the evening. It is a tiny restaurant, you sit really close together with only 50cm between the tables (for 2) without anything in between. The couch against the wall is absolutely miserable. There is only 1 shared toilet. If you want to eat luxuriously, you expect more comfort. The pace of the 6 courses was also just a little too slow, so we sat for almost 4.5 hours. I don't think we will come back here, even though the quality of the food was great.

Beautiful dishes, nice wines, nice service. An asset to Zwollywood 1 gender-free toilet is not much, as is the coat rack, but there is no space..... All in all: RECOMMENDED

Once again we had a fantastic meal at Salty. If you are a lover of refined fish dishes, then this is an absolute must!! A nice wine list with not too exaggerated prices makes it complete!

The 4 courses was fantastic and very tasteful. From the special soup to the dessert, it was so delicious that I had to control myself not to lick my plate with every course. Atmosphere a little less because there were only two of us in the restaurant, so the atmosphere was slightly less, but that did not affect the dining experience.

An absolute pearl in the middle of the Zwolle city center. Truly sublime cuisine and sublime choice of wines. We sat at the bar and could clearly see how the food was prepared with attention and extreme attention to detail. Service was very friendly and efficient. We were there on Saturday and ate the 6-course North Sea menu. Creativity and absolute mastery in the compositions of the courses made our visit a real experience. If there were 6 stars, Salty would get them. So I'll stick with 5. All the way!

Mediocre experience. There was an hour of waiting time between dishes 4 and 5. When we wanted the bill after 5 dishes, it took some time and we found out too late that 6 dishes had still been charged. The day before at BrassBoer was much, much better.

Friendly staff and good food. Fresh fish and beautifully presented. However, in my opinion small portions for 5 courses, while you still pay a lot for your food. The air conditioning was also blowing enormously (the lamp above the table turned all evening and the candles visibly flickered), after asking this remained the same. That was very disappointing. No repeat for us, despite the beautiful concept.

What a treat to eat here. We opted for the 7 course menu and everything was equally delicious. From the appetizers, the bread, the oysters and all courses. Delicious wines included. I have now been able to enjoy this wonderful restaurant a few times. The food, atmosphere and service are fantastic. The fish soup appetizer is delicious and I can't wait until I can get a whole plate of this at the salty seafood shop. I have eaten here with both a small and a large group and both times it was really great. The food is not only carefully prepared but also carefully selected, it is nice to know that they mainly work with sustainable and local products. Highly recommended for an evening meal! And if you are looking for more casual dining, I can recommend that you go across the street, the salty seafood bistro is also really great.

Nice little restaurant. Hip young people. Top dishes. Small kitchen, but completely quiet due to good preparation. That has such an influence on the atmosphere! All attention for the guests. And nice wines of course.

Heerlijke avond gehad. We waren erg benieuwd hoe een hele avond alleen maar vis zou zijn. Maar verbazingwekkend wat ze allemaal met de vis kunnen bereiden en hoe lekker het allemaal is. De verschillende smaken in één hap, het klopte gewoon. Ook de bijpassende wijnen die aangeraden werden, door de erg vriendelijke gastvrouw, pasten overal goed bij. Heerlijke avond gehad, we hebben echt genoten. Zeker een aanrader.

Vandaag hier op het terrasje gezeten en bijgekletst met een vriendin. We hadden allebei een verse muntthee. Ik wilde eigenlijk mijn go to, dat is een (iced)koffie met havermelk, maar ze hadden geen havermelk helaas. Alsnog genoten van de thee, goede service en gezellige sfeer op het plein.

Fantastische ervaring! Samen met een vriend voor het 5 gangen diner incl wijn arrangement gekozen, en dit is zeer zeker een aanrader! Sfeer was zeer aangenaam, gastvrouw met passie en zeer veel kennis van zowel gerechten als de wijn spijs combinaties. Creativiteit van de chef was verrassend, gerechten waren mooi, hoog op smaak en gewoon ontzettend lekker!

Heerlijk geluncht bij bistro . De kreeftenbitterballen moet je proeven. Als je van vis houd zit je hier goed en nog betaalbaar ook. Wijn ook heerlijk.
