Ayub, the bald man, has been running this one-man business 6 days a week for years, all alone, which means that you sometimes have to forgive him for not being open when you are preoccupied with his fries. His fries are the best in Amsterdam for me. Just the right thickness, always fresh, always clean fat. Ayub is always prepared to criticize me with a critical eye on my request to fry the fries for 30 seconds longer than his timers are set to get it optimally crispy to my taste, and then does this with reluctance without any further commitments. His fries are actually almost a shame to eat with mayonnaise or other sauce, although he is also famous for his satay sauce, which I tend to save for his chicken spring roll, which is also top notch. He cuts the fries fresh every day in small quantities (no more than a full pre-frying basket) and is only open for a few hours a day, which means that the fries are pre-fried at most three hours earlier and do not dry out or become tough. Sometimes due to sudden crowds it runs out and you have to take it for granted to wait fifteen minutes for even fresher fries. So first world problems. This is certainly not fast food but Craft. Ayub has a rare good fries and I can only hope that he can keep this up for many years to come

Very friendly owner, but the fries were too salty, and although nice and crispy, they tasted spoiled and fishy! Unfortunately we had to throw them away. This has happened twice now so unfortunately we won't be back

Als ik zin heb in friet, haal ik alleen als de kale man open is. Dit is de enige plek in mijn buurt waar de frietjes lekker krokant zijn en lekker zout. Als ie er niet is, dan is al het andere alleen maar een teleurstelling!! Het is kale man of niet!

Absolut erstklassige Fries/Fritten aus handgeschnittenen frischen Kartoffeln. Sehr zu empfehlen: "Speciaal" mit Curry statt Ketchup, und die selbstgemachte "Sate".

Friet was knapperig en perfect bruin! Alleen. Zo. Verschrikkelijk. Zout. Volgende keer vraag ik een frietje zonder zout. Dan denk ik wel dat het 5 sterren waard is (overigens ik vind dat ik normal gesproken al vrij zout eet in vergelijking met veel mensen die ik ken)

Simple little fries snackbar in Oost (on Javastraat directly across from the Albert Heijn). The proprietor uses a special type of potato and makes delicious fries. Crispy. Hot. Fresh. One of my favorite fry spots in Amsterdam.
