The vlaai was absolutely delicious, and there was a great variety to choose from. Everything tasted fresh and well balanced.

A visit to Limburg, and Maastricht in particular, isn't complete without a slice of Limburg pie. It's delicious here and highly recommended. The dough is a bit more bread-like than I'm used to, but that's precisely what makes the pie so tasty. Perhaps the pies from the more well-known chains have become a bit too commercialized. The only drawback is the long wait to get a table. Therefore, a point deducted for service & atmosphere, otherwise absolutely fantastic!

Cherry was so delicious. Staff was friendly. It was very crowded so we had to take our pies to go. If you are in Maastricht, you should try.

Wonderful bakery. We stumbled upon it once thanks to a cycling tour by Bram Tankink. Since then, it's been our favorite place for a Limburg pie whenever we're in Limburg ✌🏼

The Limburgse Vlaai and the hot chocolate were absolutely delicious. If we're in the area, it's a must-visit; you can't get any fresher. The service is very friendly and polite. The waiting guests are usually a bit whiny, it's very popular and the seating is quite limited. But we'd gladly come back again and again, and we highly recommend it.

I bought two small pies at the store, and they were perfect. I also bought a small Christmas loaf for €8.50, and that was such a disappointment! The loaf was very dry, stale, and the almond paste had dried out. No nuts or cherries. I'll buy it at the supermarket next time; it's much tastier and much cheaper!

Very tasty pie, a large slice and not expensive. Fresh ginger tea with as much honey as you like :) Friendly staff. We had to wait a bit, but it was definitely worth it!

This place is special for the old running water wheel (I think GG says it’s been running since 1100?), but their vlaais are equally special. Their appelvlaai with nuts is my favorite! Always stop by for a slice when I’m in the mood for it :)

This place is amazing. It has a water powered mill that presumably is used to grind grains to then prepare the breads. I ordered a coffee, waffles and a croissants. American coffee was strong and the bread is incredible. I highly recommend and would visit again. Atmosphere is great and staff is friendly.

Delicious pie! We chose the crumble and gooseberry. Delicious! Unfortunately, there was no room inside; it was very crowded. But with our pie in hand, we explored the area further.

The servant keep asking us; did we order or no (for more than 2 times!)zzz so they align together but overall the service was OK… not too great though…. but the pastry taste so amazing!

On Saturday morning, a friend and I ordered a cappuccino, pastries, and a croissant. The pastries were not fresh and ice cold—they were from yesterday—and tasted completely off. The cappuccino was served 20 minutes before the pastries, so it cooled down quickly by the time the pastries arrived. Overall, the experience was disappointing.

I really wanted to try this famous pie—everyone was raving about it, so much so that anticipation was high! We even stood in a long line, thinking we were about to sample a true "local masterpiece." But, frankly, the pie was a huge disappointment. The dough was raw, dense, and completely undercooked—all you could eat was the filling. The taste didn't live up to our expectations or the time it took to get there.

Wow, what a beautiful place! All the fresh products made with only natural ingredients—just what's necessary and no additives. Just the way it was meant to be! You can taste it too. The atmosphere and decor of the bakery are also very nice, very authentic. I'd love to come back here again and again.

Dirty place and rude and clumsy staff during service!

It looks nice, but the pie (both apricot and cherry) was really not good. The fruit tasted like frozen fruit, and the pie was soggy and soft. Such a shame. The interior looks very nice, but the staff struggled to cope with the crowd and were somewhat surly and curt (perhaps tired). The store is simply too narrow and can't handle the number of customers. The pushiness of many guests unfortunately also significantly diminishes the experience.

We tried the forest fruit pie, which was nice, but I wouldn't say it's the only pie I'd want to eat in a perfect world. There's also a mill next door. It was nice there.

The pie was delicious, super fresh, and the service was friendly, but sometimes the customers were rude. We were waiting patiently for a spot, and a few ladies just stepped in front of us. It might be a good idea to put up a sign indicating where guests should wait until they're shown to a spot. I certainly won't waste any time on it; I have the time, and if someone insists on going first, that's fine. But these days, there are also quite a few people with a short fuse.

A must try Vlaai (traditional limburg pie, one kf maastricht pastry icon!) the strawberry one is really niceee and big portion! We share 1 for 2 people! The mint tea is also nice! They have dine in place with quite small capacity <3 sooo warm also beside there is a beautiful old mill

The cookies are delicious. I tried the apple and apricot tart, and honestly, it barely had any apple in it; it was all peach (it seemed like it was in syrup), so it could be much better. It's also very nice to be able to see a glimpse of how a mill works. I've attached a photo with the schedule :)

Mediocre sandwiches Didn't get a plate for breakfast Cups are still dirty Disappointing

The first time I came here, I received a very friendly welcome, which is why I'm now a regular visitor. The staff was incredibly kind; she noticed it was my first visit and explained the preparation and ingredients of the products. They use only a few ingredients in their bread, which is quite remarkable compared to the ingredient list of bread from a supermarket. The bread also tastes very rustic and pure. The pies are heavenly and traditionally made without artificial additives. If you happen to pass by, definitely pop in, even if it's just for a coffee and pastry.

We had the apple and nut pie, and it's highly recommended. My partner had apple juice, and I had a cappuccino. We had to wait a bit for a seat, but it was worth it. The queue for a seat is on the left at the entrance. You can go through to the right for takeout. Lots of selection and extremely good quality. I've never had such a delicious pie! The slices are lovely and large, too. 👍

After reading the good reviews and seeing how nice the place looks, my wife and I went here for a slice of pie with a nice cup of coffee. Unfortunately, we were a bit disappointed with the pie. The crust was delicious, but the filling was too wet on both occasions. This made the texture less than ideal, and it was a bit awkward to eat. Fortunately, the flavor was fine. The coffee they serve is Blanche Dael, which is normally very good, but here it was a bit weak. It's a shame. But otherwise, the service was excellent and the atmosphere is pleasant.

The Limburger vlaai was truly delicious, as were the baked goods and sandwiches. The staff was also very friendly and helpful. It's inconvenient that there are only a few seats, and we had to wait about 10 minutes for a free spot, but the place is very popular. The price/performance ratio was very good. We would come back if we're in Maastricht again.

I love the Belegde Boterham 😭, good coffee too! Nice place ;) Update: The bathroom is not clean at all, it smells really bad, its spaces are very small so if you come during meal times or high flow you must wait for a table.

Seen that is was 5th on thinks to do in the area. So decided to go and have a look and it didn't disappoint! Friendly staff and amazing food!

Despite the long queue, the staff took the time to help with a challenge with one of the children, and the pie was very tasty.

The best pie in Maastricht, with the sound of the watermill in the background. Honest prices, honest products. Delicious sandwiches too, a simple concept: a good slice of bread topped with fresh ingredients like ham, cheese, olives, and vegetables. Worth the wait for a seat. All the pies we've tried since then at other outdoor cafes were nothing compared to this.

Must visit. The coffee, sandwiches, people, atmosphere ... Everything is amazing here. Even the locality is right out of an 80s postcard. But, reserve a table. The place is extremely crowded and everyone wants to eat here.

There are 2 doors, don't be mistaken to go to the wrong door, because they "don't sell by slice, only half pies". Upon paying, there were people behind us that were given pie slices... Maybe it was because we were tourists... We asked them to cut the halfs we bought into slices, but "they don't cut pies"... Anyways, thats it. The pies were quite good, we tried the Apple and nuts and the Gooseberries. We had to tear them apart by hand. They didnt even gave us napkins. The ambiance we couldn't apreciate given the hurry of the employees. Even tho the pies were good, the service was not.

No pictures of pie for now (there are plenty of those in other reviews), but I do show the 11th-century mid-stroke watermill on the Jeker River in Maastricht. This mill has been used since 2005 to grind spelt grain for local farmers. It also supplies milling products to the Gulpener Brewery for brewing Korenwolf beer, among other things. In the adjacent bakery, you can find various types of bread or a delicious slice of pie. Above the bakery is a B&B where you can stay with four people, including breakfast. If you'd like to try your hand at pie baking, you can also take a pie-baking workshop there.

We walked past here at 9:00 a.m. and were called by the smell of freshly baked bread. After walking around Maastricht, we returned late in the afternoon. The place was quite full, but a table for four just opened up (there were two of us). The food and drinks were good and tasty. The sandwiches were excellent, and the staff was friendly. UNTIL... someone came in (probably the owner) and started looking away from people, even saying there were people waiting for a table. While they were still having their drinks. We were also looked at several times because we were still enjoying our drinks, even though we had just finished our sandwiches. This place is clearly failing due to its success. Which is a shame, because the sandwiches were delicious. The window by the water wheel was open, which was nice for the warmth, but a slightly rotten smell wafted in. Would I recommend this place? For the sandwiches, yes.

Iets buiten het centrum in het verlengde van de pittoreske Koestraat bevindt zich de Bisschopsmolen. ( 11 de eeuw en ooit in het bezit van Godfried van Bouillon) Nu is het een bakkerij met een smaaklokaal. Duurzaamheid is er prioriteit. Keuze uit een 8 tal vlaaien. Mmmm.

When you say Maastricht and pie, you're talking about De Bisschopsmolen. By far the BEST pie I've ever had. Every time I visit Maastricht, I always head straight to De Bisschopsmolen. An absolute MUST when visiting Maastricht. And for a reasonable price, a delicious cup of coffee and a slice of pie. Delicious! The staff is incredibly friendly. Lots of ❤️!

Our first time having vlaai and it was incredible. I had cherry, each piece of fruit was plump and delicious. I would travel across the Atlantic for another slice.

Possibly the best bread I've ever had in my life. The spelt baguettes and loaves are out of this world. I buy a bunch of them every time I visit from Utrecht and stick them in my freezer. This place is a treasure to have in the Netherlands.

Vegan options, nice to see water mill working

Visited couple times and i won’t be lying when i said: reserve before coming (if possible) because the place is small yet everyone wants to eat vlaai here. Other pastries also available (broodjeworst, also a favorite from this place). Recommended to pack some pieces home for your loved ones because you haven’t visited maastricht without vlaai from their place.

I went to the Bisschopsmolen Bakkerij first and bought vegan cookies. Very fresh and delicious. But vlaai slices can be purchased next door. Next door shop has seatings with drinks also. Best place to try fresh vlees and bakery items. Staff are very friendly as well.

Unbelievably rude. I'm the only customer in the shop waiting for the shop assistant to finish putting some stickers on packaged food, a (regular?) customer comes in just while she's finishing and he gets helped immediately as if I were invisible! Goodbye!

The best pie would be a gross understatement. The best life experience almost covers it. We had two pieces taken away, very well made and super tasty. Know that life will only go downhill after that. I think this is the quality you offer to extraterrestrial life to convince them of your good intentions.

The Bisschopsmolen is a beautiful, historic watermill in the center of Maastricht and the oldest working mill in the Netherlands. Here, traditional baking is still done every day with freshly ground spelled from the region. The pies are without a doubt the best in Maastricht, fresh, tasty and made with love! Really recommended, great cakes, great breads

The absolute highlight was the apple-hazelnut pie – truly the tastiest I have ever tasted! Next to the bakery is a small, cozy coffee shop, perfect for a short break. The staff is very friendly, the products are local and the prices are great. Outside you can see the large water wheel turning and inside you can discover the rich history of the mill. A tasty and educational outing. I will definitely come back!
