The store's decor was very appetizing. And the bread was indeed delicious.

The coffee and cake were delicious. The only downside was that we sat down at a table inside that hadn't been cleared yet. The server came and cleared the table, but unfortunately didn't clean it, even after we asked her to.

Simply delicious breads and pies

If you organize a flan baking workshop and know how many people are coming, and then, out of the mere 2 choices (cherry and apple/nut), only apple/nut remains after half the customers have left, then you are very poorly prepared. Our entire table of 6 people could therefore only make apple/nut. The gentleman himself didn't really see the problem, just explaining that everything was sold out. And that for €35 pp! You do get 2 cups of coffee or tea and a piece of flan, though.☹️ Furthermore, the dough is already prepared (you cannot do this yourself), so it is simply a matter of rolling it out, placing it in the tin, filling it, and sealing it.

Best flatbread ever! The friendly staff works flat out; it's really busy on weekends. The decor is simple, which suits the historic mill very well.

The products this mill produces are truly top-notch in quality. You can taste the freshly ground flour – it's fantastic. Five stars for that. The café is, of course, a tourist hotspot and very busy during peak season. Unfortunately, I have to deduct two stars because they don't seem to care much about food hygiene. Everything in the café and bakery is handled with unwashed hands. It's disgusting when the employees' hands touch money, operate the touchscreen cash register, and then pack my luggage with those greasy, unwashed fingers.

I recommend this place to enjoy an excellent Limburgse vlaai!

In the Bisschopmolen in Maastricht, between Koestraat and Pieterstraat, there is a bakery that always bakes fresh flans and bread. Everything is very fresh. Naturally, you can buy all these products here. In addition to the bakery shop, you can eat the flan and other light lunch dishes in a small lunchroom. Furthermore, it is possible to visit the Bisschopsmolen, and you can also buy the flour that has been milled there. This is absolutely worth a visit if you are in Maastricht. It is the place to be.

The vlaai was delicious and not too sweet! And you can see a historic watermill in operation.

A curious place to have a slice of cake, we liked it but we've had better.

For years, whenever we visit Maastricht, we have enjoyed something delicious at this beautiful, authentic bakery, and today was no different. There was also a table available immediately. Unfortunately, today we were ignored three times by the waitress on duty, while customers arriving after us were already able to order. After trying to get the waitress's attention for the fourth time, we just got up and left the place very disappointed. And it's not like we only sat there for 5 minutes (more like 20 minutes). It is certainly a shame, but that won't stop us from coming back next time to enjoy all those delicious treats 😮‍💨

Friendly staff, vlaai is tasty, breakfast setup very basic, not really recommend it for an extensive breakfast or brunch. Coffee is from machine, and unfortunately one with oakmilk is not possible.

The lady who served me was very friendly! My cherry vlaai almost fell onto my pants! Nobody put such wide straps on the vlaai! That's inconvenient when eating! The vlaai was warm because it was displayed in the shop window; is that okay for product testing?

The best Vlaai I’ve eaten on this holiday. The homemade cherry lemonade also tasted good. It is quite busy there, so you sometimes have to wait a bit for a table. A drink we ordered was forgotten, but it was quickly resolved upon inquiry.

I went to this place with my son in 2024, and we loved the apple tart! We've had others in other places and even in other cities in the Netherlands, but this was undoubtedly the best.

The wait for a table was extremely long. The Liège waffle was nothing like a real Liège waffle. However, the open-faced sandwiches and the waffle were decent. We ordered three colas and were only brought one. The waitress asked if we needed any more drinks and we said, "Yes, we're missing two colas," so she only brought one... The place itself is quite nice, though.

The craftsmanship of the cakes 🎂, pastries, and bread is very impressive. The staff is very friendly, and the atmosphere is pleasant.

Very tasty! I had the cherry/apple one, and the vegan one with apple and rhubarb was also delicious. We were there on Saturday, and unfortunately, it was so crowded that there wasn't a seat to be had. Still, highly recommended!

Excellent ambiance with the sound of water while you have a drink, the "Vlaai" cakes are excellent, if you like sweet things I especially recommend the apple and walnut one.

Everything is nice. The Vlaai is as delicious as expected👍The only thing confused us is how(where) to wait for the seat. We thought we need to line up to be seated but later found out that we were supposed to "find" seat on our own.

We picked up five slices of flan in different flavors here to take away. The flan was quite pricey and not very special. The service from the employee, who calmly explained everything and then neatly packaged all the slices, was good.

Enjoying a Vlaai (a fruit pie made with seasonal fruits) is a specialty of this area. Also, I recommend checking out their takeout shop next door for handmade cookies. They offer samples, and the berry cookies aren't too sweet. They were wonderful souvenirs to bring back to Taiwan for my elders, who raved about how delicious they were!

I thought it was going to be a tourist trap, but I can only say that the tarts are truly delicious. We tried cherry, apple with walnuts, and apple with cherries. Absolutely fantastic.

They also offer a flan baking workshop, which seemed really fun to me. Unfortunately, the workshop consists exclusively of rolling out pre-made dough and filling it with pre-made filling. It also felt incredibly rushed, just to earn money as quickly as possible. It was a real shame… the flan was tasty though :)

A really great place for flan. They are baked fresh here and served warm. Given how busy it is, it is a popular spot, and rightly so.

A very good pie. Fresh ingredients, a buttery crust, and a generous fruit filling that doesn't taste artificial or overly sweet. I wouldn't say it was the best pie I've ever had, but it was definitely above average and worth trying if you're in Maastricht. A solid stop for a coffee and a slice of pie.

Delicious pastries not to be missed when visiting Maastricht; unfortunately, it's very crowded, so finding a seat to enjoy them is unlikely.

I ordered the Broodje Limburg for €5.95. I would rate it three considering the taste is not that special but the price is a bit expensive for a small serving size. There are better sandwiches with similar prices in other nearby restaurants. I also ordered abrikoze taart which is dry at the base of the cake which makes the texture in the mouth also dry. The vlaai is delicious and not too sweet. Overall, I would rate this three stars.

The slices of cherry/apple pie were very tasty. But we were seated in a corner near the kitchen and had to wait because it was very busy. It was interesting to see the watermill with the grinding system in operation, along with the accompanying information.

The two of us went for breakfast twice. The staff were very helpful and translated the Dutch menu into English for us. Each time we had a coffee, a croissant, and bread with spread and cheese. Everything was delicious, and we also had a piece of cake for dessert. You absolutely have to try it! We'd love to come back.

We ordered a cappuccino, a cherry-apple tart, and a croissant filled with apricot jam. You definitely should try these they were our favorites. They weren’t overly sweet, which we really appreciated, and the coffee was fresh and well-made. It does get quite busy on weekends, so you’ll need a bit of luck to find a table, just like we did. But if you manage to get a seat, even for a short while, it’s a lovely place to relax and enjoy your coffee and pastries.

The cherry apple pie was just average. The cinnamon rolls, on the other hand, are much better made in many Taiwanese shops.

Super nice place and great that they have vegan flans and they are super tasty too. Now just make a whole lot of people happy again and add a vegan rice flan to the assortment and vegan whipped cream.

The bakery has a great and pleasant atmosphere. The server, Wesley, is VERY polite. The apple juice and the apple and walnut pie are very good. I highly recommend it.

I'd read the reviews and was intrigued, but in person I was even more satisfied. A haven of peace and serenity with excellent cuisine for both sweet and savory eats. Prices are absolutely reasonable for the quality of the food, and the staff are friendly. Excellent.

This morning I was looking forward to my muesli breakfast at this place. Every time I come to Maastricht, it never happens. I ordered coffee with an extra shot and wanted a muesli breakfast from the menu. After that, I planned to buy a sandwich and a pie to take with me for my workday today in Maastricht. The boy brought this coffee (see photo); it looks terrible. Anyway, it tastes bitter and weak too. Then he came to announce that the muesli breakfast wasn't available because there was no yogurt or limited edition, would you like something else? Instead of telling Herberts, I was left without breakfast with tasteless coffee. I wanted to pay and voiced my complaint. I have to pay €6.75 for this failed coffee 🤬; no discount or free offer was made, which is what I would have done. I will never come here again, so I didn't buy a pie or sandwiches either.

An incredibly well-baked vlaai. The yeast dough is brown on the outside, still moist on the inside, and almost crispy at the edges. The filling isn't too sweet, with a perfectly balanced consistency. The price is also very reasonable for the amount served. And yes, by the way, the Liège waffles are also delicious. Unfortunately, there are far too few seats; you should expect to have to eat your pastries, for example, behind the bakery. The shop is also very cramped and busy, but the staff are friendly and helpful.

The water-powered mill grinds the grain. It's always open for tours. Behind the mill is the bakery, where you can watch the bakers at work. The café/bistro has very friendly staff. A bearded young man deserves special mention; he's happy to offer advice and takes his time if you can't decide right away. Both the sweet and savory pastries are delicious. The paninis look rustic and very appetizing on the wooden boards they're served on. Unfortunately, the dining area is tiny, and you're lucky to get a seat. I often buy baked goods and/or flour to take home.

I went to film at the Bisschopsmolen for a school assignment, and afterwards I went back to learn how to bake vlaai myself. The result was delicious and the staff is friendly.

We had a fun workshop today. However, it is advisable to have employees wear a hairnet over the filling. There were hairs in the filling. Even when we got home, we found more hairs in the pie. Otherwise, the explanation was good.

Unique location, working with their own milled (spelt) flour. Delicious and honest food. And personal opinion: a bit too much vegetarian. Take a look at places like Limburgs varken (Livar) for honest meat.

During our day trip to Maastricht, we visited the old mill and the bakery. We opted for the apple tart, which we enjoyed, although it was a touch too sweet for our taste.

Good pies. For that price, amazing pies. We tried strawberry and apricot. Cozy environment. Would be even cozier if the pies were warm too.

Unfortunately, I bit into two cherry pits twice. Not worth repeating. It is an expensive pie if you end up with a toothache.

This is a mill with a bakery and cafe attached. We went early, at opening time, to the cafe for breakfast. Unfortunately, most items had not yet been baked, and there were very limited options for breakfast. If you're looking for a good breakfast, if it's early in the day, I would recommend going elsewhere. We were told it's better to come later, around 10:00, then more options would be ready.

Delicious pies & waffles, but service needs improvement The food here is genuinely good the Limburg pie slices (Vlaaipunt) and the waffles were both really tasty, and you can tell they use quality local ingredients. That part was a solid experience and worth trying if you’re passing through. However, the service was unfortunately a letdown. The staff seemed quite overwhelmed and struggled to properly guide us through the options. When we asked whether any pies contained red berries, we were simply told “no” yet there were clearly relevant options available on display. In the end, we had to physically point at the pies we wanted rather than having anyone walk us through what was available that day. It felt like the team was either understaffed or not well-prepared to handle customer questions, especially for visitors who aren’t familiar with the menu. Speaking more slowly and clearly, and actually knowing the day’s selection, would make a huge difference. The product itself deserves more stars but the experience around it brings the rating down. With better-trained and more attentive staff, this place could easily be a 5-star stop in Maastricht.

An excellent bakery with a colossal, centuries-old history! Worth a visit. Excellent pies, especially the apple or cherry ones. They're keeping the secret. You can get a whole pie or just a slice. There's coffee and tables to relax, but seats are tight... It's a lucky break... this place is popular. Here you can see the working mechanism of a water mill, which still serves its purpose! Definitely recommended.

This is highly recommended! On one side of the shop you can buy whole or half pies, and the other side is one where you can also take a slice and eat it in the little room next door. They have savory and sweet options; everything is delicious. The staff are friendly and work well and in an organized manner, despite the crowds. It was a very pleasant experience. I would definitely want to return next time!

Excellent bakery with friendly service and delicious baked goods. My family also stayed at their “Bakker & Bed” b&b and it was wonderful! Diana and her team are so welcoming and warm. Everything we had, from the croissants and pain au chocolat, to the traditional Limburg pie and loaves of bread, was top notch. We will definitely return if we ever come back to Maastricht, a lovely place!

We discovered Bisschopsmolen in Maastricht through the WDR program "Grenzenlos köstlich" (Boundlessly Delicious). We had "real Limburgse Vlaai" (real Limburgish custard), which comes in six different varieties – delicious! Friendly and fast service, pleasant atmosphere. We'll definitely be back on our next visit.

We visited Bisschopsmolen in Maastricht and loved it. It’s a small, cosy spot with a lovely atmosphere. The cherry Limburg pie was fresh and delicious, and the open sandwich was very fresh also. Coffee was great too. Being a working water-powered mill adds a special touch, and the service was friendly and welcoming. We waited 15mins for a table but definitely worth a visit.

We ordered cakes and waffles to go. There was a queue, but the service was quick. The apple pie and the waffle were good, but some of the other cakes were a bit sour.

Tasted super fresh apricot tart and received good assistance with the purchase of sausage rolls to take home. Good, beautiful, honest products. Highly recommended! It was very nice to see the watermill in operation. The picture is complete.

Absolutely disappointing experience. I bought a Limburg cake from a mill shop in Maastricht expecting something similar to a traditional tart, but this was nothing close. The taste was simply awful — overly greasy and dominated by a heavy, unpleasant buttery flavor. The filling was even worse: the jam tasted cheap and artificial, with no depth or freshness at all. On top of that, it lacked any real sweetness, making the whole cake feel flat and unbalanced. Overall, it was dry, flavorless, and frankly not enjoyable in any way. Definitely not what you’d expect from a local specialty. I wouldn’t recommend it to anyone. If you want to try a real tart, cake, or pie, go to Italy. Otherwise, just stick to fries.

We love visiting this place and always bring back freshly baked bread and various other treats. The Brussels waffles with real rock sugar are especially delicious. In the small adjoining café, you can enjoy their homemade specialties, such as Limburger Flaai in many variations, right there on the spot. The old mill wheel is still in operation and can be viewed.
