We ate a fruit tart. But the crust was like pizza dough. I don't understand how it's become so popular.

I'd read the reviews and was intrigued, but in person I was even more satisfied. A haven of peace and serenity with excellent cuisine for both sweet and savory eats. Prices are absolutely reasonable for the quality of the food, and the staff are friendly. Excellent.

This morning I was looking forward to my muesli breakfast at this place. Every time I come to Maastricht, it never happens. I ordered coffee with an extra shot and wanted a muesli breakfast from the menu. After that, I planned to buy a sandwich and a pie to take with me for my workday today in Maastricht. The boy brought this coffee (see photo); it looks terrible. Anyway, it tastes bitter and weak too. Then he came to announce that the muesli breakfast wasn't available because there was no yogurt or limited edition, would you like something else? Instead of telling Herberts, I was left without breakfast with tasteless coffee. I wanted to pay and voiced my complaint. I have to pay €6.75 for this failed coffee 🤬; no discount or free offer was made, which is what I would have done. I will never come here again, so I didn't buy a pie or sandwiches either.

An incredibly well-baked vlaai. The yeast dough is brown on the outside, still moist on the inside, and almost crispy at the edges. The filling isn't too sweet, with a perfectly balanced consistency. The price is also very reasonable for the amount served. And yes, by the way, the Liège waffles are also delicious. Unfortunately, there are far too few seats; you should expect to have to eat your pastries, for example, behind the bakery. The shop is also very cramped and busy, but the staff are friendly and helpful.

The water-powered mill grinds the grain. It's always open for tours. Behind the mill is the bakery, where you can watch the bakers at work. The café/bistro has very friendly staff. A bearded young man deserves special mention; he's happy to offer advice and takes his time if you can't decide right away. Both the sweet and savory pastries are delicious. The paninis look rustic and very appetizing on the wooden boards they're served on. Unfortunately, the dining area is tiny, and you're lucky to get a seat. I often buy baked goods and/or flour to take home.

Very friendly staff, lovely atmosphere. The bread, cakes, and focaccia are excellent. The fresh whole-grain bread, in particular, is incredibly delicious and aromatic.

I went to film at the Bisschopsmolen for a school assignment, and afterwards I went back to learn how to bake vlaai myself. The result was delicious and the staff is friendly.

Delicious flan, bread, and treats. Whenever I'm in Maastricht, I have to stop by. Sitting down for coffee is harder; there's never a spot. So we opt for takeout so we can sit elsewhere.

We had a fun workshop today. However, it is advisable to have employees wear a hairnet over the filling. There were hairs in the filling. Even when we got home, we found more hairs in the pie. Otherwise, the explanation was good.

Unique location, working with their own milled (spelt) flour. Delicious and honest food. And personal opinion: a bit too much vegetarian. Take a look at places like Limburgs varken (Livar) for honest meat.

During our day trip to Maastricht, we visited the old mill and the bakery. We opted for the apple tart, which we enjoyed, although it was a touch too sweet for our taste.

Good pies. For that price, amazing pies. We tried strawberry and apricot. Cozy environment. Would be even cozier if the pies were warm too.

Unfortunately, I bit into two cherry pits twice. Not worth repeating. It is an expensive pie if you end up with a toothache.

This is a mill with a bakery and cafe attached. We went early, at opening time, to the cafe for breakfast. Unfortunately, most items had not yet been baked, and there were very limited options for breakfast. If you're looking for a good breakfast, if it's early in the day, I would recommend going elsewhere. We were told it's better to come later, around 10:00, then more options would be ready.

Delicious pies & waffles, but service needs improvement The food here is genuinely good the Limburg pie slices (Vlaaipunt) and the waffles were both really tasty, and you can tell they use quality local ingredients. That part was a solid experience and worth trying if you’re passing through. However, the service was unfortunately a letdown. The staff seemed quite overwhelmed and struggled to properly guide us through the options. When we asked whether any pies contained red berries, we were simply told “no” yet there were clearly relevant options available on display. In the end, we had to physically point at the pies we wanted rather than having anyone walk us through what was available that day. It felt like the team was either understaffed or not well-prepared to handle customer questions, especially for visitors who aren’t familiar with the menu. Speaking more slowly and clearly, and actually knowing the day’s selection, would make a huge difference. The product itself deserves more stars but the experience around it brings the rating down. With better-trained and more attentive staff, this place could easily be a 5-star stop in Maastricht.

An excellent bakery with a colossal, centuries-old history! Worth a visit. Excellent pies, especially the apple or cherry ones. They're keeping the secret. You can get a whole pie or just a slice. There's coffee and tables to relax, but seats are tight... It's a lucky break... this place is popular. Here you can see the working mechanism of a water mill, which still serves its purpose! Definitely recommended.

This is highly recommended! On one side of the shop you can buy whole or half pies, and the other side is one where you can also take a slice and eat it in the little room next door. They have savory and sweet options; everything is delicious. The staff are friendly and work well and in an organized manner, despite the crowds. It was a very pleasant experience. I would definitely want to return next time!

Excellent bakery with friendly service and delicious baked goods. My family also stayed at their “Bakker & Bed” b&b and it was wonderful! Diana and her team are so welcoming and warm. Everything we had, from the croissants and pain au chocolat, to the traditional Limburg pie and loaves of bread, was top notch. We will definitely return if we ever come back to Maastricht, a lovely place!

We discovered Bisschopsmolen in Maastricht through the WDR program "Grenzenlos köstlich" (Boundlessly Delicious). We had "real Limburgse Vlaai" (real Limburgish custard), which comes in six different varieties – delicious! Friendly and fast service, pleasant atmosphere. We'll definitely be back on our next visit.

We visited Bisschopsmolen in Maastricht and loved it. It’s a small, cosy spot with a lovely atmosphere. The cherry Limburg pie was fresh and delicious, and the open sandwich was very fresh also. Coffee was great too. Being a working water-powered mill adds a special touch, and the service was friendly and welcoming. We waited 15mins for a table but definitely worth a visit.

We ordered cakes and waffles to go. There was a queue, but the service was quick. The apple pie and the waffle were good, but some of the other cakes were a bit sour.

Just a place that feeds of gimmick and tourists. Definitely not impressed with the pie I tried. Probably one of the most boring ones I’ve had in recent history

Tasted super fresh apricot tart and received good assistance with the purchase of sausage rolls to take home. Good, beautiful, honest products. Highly recommended! It was very nice to see the watermill in operation. The picture is complete.

Absolutely disappointing experience. I bought a Limburg cake from a mill shop in Maastricht expecting something similar to a traditional tart, but this was nothing close. The taste was simply awful — overly greasy and dominated by a heavy, unpleasant buttery flavor. The filling was even worse: the jam tasted cheap and artificial, with no depth or freshness at all. On top of that, it lacked any real sweetness, making the whole cake feel flat and unbalanced. Overall, it was dry, flavorless, and frankly not enjoyable in any way. Definitely not what you’d expect from a local specialty. I wouldn’t recommend it to anyone. If you want to try a real tart, cake, or pie, go to Italy. Otherwise, just stick to fries.

Came here specifically for the vegan flan. The young saleswoman said, "We don't have that anyway." Okay, weird, it says so on the website. Grabbed waffles and bread; they were dry and expensive. Not worth a repeat visit for us; we totally don't understand the hype surrounding this bakery!

We love visiting this place and always bring back freshly baked bread and various other treats. The Brussels waffles with real rock sugar are especially delicious. In the small adjoining café, you can enjoy their homemade specialties, such as Limburger Flaai in many variations, right there on the spot. The old mill wheel is still in operation and can be viewed.

The pies in the window look delicious, and the line in front suggests you're in the right place. Unfortunately, I found the pie to be very mediocre; the ratio of dough to (fresh?) fruit was off. A lot of rather dry dough and very little fruit.

Actually, I wanted to try it out when I passed by a month ago, but it was too crowded, so I gave up. This time, I made a point of getting up early and arriving at the restaurant at 9:20 sharp. There weren't many seats available for dine-in (only 4 or 5), but luckily we got a table. We ordered coffee, juice, croissants, cinnamon rolls, and cherry pies. Everything was very fresh, and it's definitely worth coming in.

After we buy the pie we kindly ask them to slice it. Because we were going to eat it outside. At first they refused it since it was hot?? After we leave the shop we needed to go back because it was very difficult to cut it with a wooden fork. Again we kindly asked them to slice it and this time the pie was not hot anymore. They charged us 2 euros just to slice the pie we bought 5 mins ago.

I visited this lovely local café/bakery to try Limburgse pie. The pie was really tasty — homemade and comforting, like something your mom would bake. I genuinely enjoyed it. The staff were very friendly and helped me choose both the pie and the tea, which I really appreciated. Overall, a cozy, home-style bakery with a warm atmosphere — definitely worth a visit.

Authentic place to enjoy a slice of pie. Staff can be a bit hard to find, which is a bit of a shame. But the pie was excellent.

Our visit to this cozy bakery in Maastricht was a real highlight. The warm, inviting atmosphere made it easy to feel at ease. We were particularly impressed by the wide variety of delicious pastries. The bakery is the perfect place for a little indulgence, whether for a coffee or simply to sample the regional specialties. A visit is worthwhile for anyone who appreciates good pastries and authentic flavors.

A visit to Limburg, and Maastricht in particular, isn't complete without a slice of Limburg pie. It's delicious here and highly recommended. The dough is a bit more bread-like than I'm used to, but that's precisely what makes the pie so tasty. Perhaps the pies from the more well-known chains have become a bit too commercialized. The only drawback is the long wait to get a table. Therefore, a point deducted for service & atmosphere, otherwise absolutely fantastic!

Wonderful bakery. We stumbled upon it once thanks to a cycling tour by Bram Tankink. Since then, it's been our favorite place for a Limburg pie whenever we're in Limburg ✌🏼

The Limburgse Vlaai and the hot chocolate were absolutely delicious. If we're in the area, it's a must-visit; you can't get any fresher. The service is very friendly and polite. The waiting guests are usually a bit whiny, it's very popular and the seating is quite limited. But we'd gladly come back again and again, and we highly recommend it.

I bought two small pies at the store, and they were perfect. I also bought a small Christmas loaf for €8.50, and that was such a disappointment! The loaf was very dry, stale, and the almond paste had dried out. No nuts or cherries. I'll buy it at the supermarket next time; it's much tastier and much cheaper!

Very tasty pie, a large slice and not expensive. Fresh ginger tea with as much honey as you like :) Friendly staff. We had to wait a bit, but it was definitely worth it!

This place is special for the old running water wheel (I think GG says it’s been running since 1100?), but their vlaais are equally special. Their appelvlaai with nuts is my favorite! Always stop by for a slice when I’m in the mood for it :)

This place is amazing. It has a water powered mill that presumably is used to grind grains to then prepare the breads. I ordered a coffee, waffles and a croissants. American coffee was strong and the bread is incredible. I highly recommend and would visit again. Atmosphere is great and staff is friendly.

The servant keep asking us; did we order or no (for more than 2 times!)zzz so they align together but overall the service was OK… not too great though…. but the pastry taste so amazing!

Delicious pie! We chose the crumble and gooseberry. Delicious! Unfortunately, there was no room inside; it was very crowded. But with our pie in hand, we explored the area further.

On Saturday morning, a friend and I ordered a cappuccino, pastries, and a croissant. The pastries were not fresh and ice cold—they were from yesterday—and tasted completely off. The cappuccino was served 20 minutes before the pastries, so it cooled down quickly by the time the pastries arrived. Overall, the experience was disappointing.

I really wanted to try this famous pie—everyone was raving about it, so much so that anticipation was high! We even stood in a long line, thinking we were about to sample a true "local masterpiece." But, frankly, the pie was a huge disappointment. The dough was raw, dense, and completely undercooked—all you could eat was the filling. The taste didn't live up to our expectations or the time it took to get there.

Wow, what a beautiful place! All the fresh products made with only natural ingredients—just what's necessary and no additives. Just the way it was meant to be! You can taste it too. The atmosphere and decor of the bakery are also very nice, very authentic. I'd love to come back here again and again.

It looks nice, but the pie (both apricot and cherry) was really not good. The fruit tasted like frozen fruit, and the pie was soggy and soft. Such a shame. The interior looks very nice, but the staff struggled to cope with the crowd and were somewhat surly and curt (perhaps tired). The store is simply too narrow and can't handle the number of customers. The pushiness of many guests unfortunately also significantly diminishes the experience.

We tried the forest fruit pie, which was nice, but I wouldn't say it's the only pie I'd want to eat in a perfect world. There's also a mill next door. It was nice there.

The pie was delicious, super fresh, and the service was friendly, but sometimes the customers were rude. We were waiting patiently for a spot, and a few ladies just stepped in front of us. It might be a good idea to put up a sign indicating where guests should wait until they're shown to a spot. I certainly won't waste any time on it; I have the time, and if someone insists on going first, that's fine. But these days, there are also quite a few people with a short fuse.

A must try Vlaai (traditional limburg pie, one kf maastricht pastry icon!) the strawberry one is really niceee and big portion! We share 1 for 2 people! The mint tea is also nice! They have dine in place with quite small capacity <3 sooo warm also beside there is a beautiful old mill

The cookies are delicious. I tried the apple and apricot tart, and honestly, it barely had any apple in it; it was all peach (it seemed like it was in syrup), so it could be much better. It's also very nice to be able to see a glimpse of how a mill works. I've attached a photo with the schedule :)

The first time I came here, I received a very friendly welcome, which is why I'm now a regular visitor. The staff was incredibly kind; she noticed it was my first visit and explained the preparation and ingredients of the products. They use only a few ingredients in their bread, which is quite remarkable compared to the ingredient list of bread from a supermarket. The bread also tastes very rustic and pure. The pies are heavenly and traditionally made without artificial additives. If you happen to pass by, definitely pop in, even if it's just for a coffee and pastry.

We had the apple and nut pie, and it's highly recommended. My partner had apple juice, and I had a cappuccino. We had to wait a bit for a seat, but it was worth it. The queue for a seat is on the left at the entrance. You can go through to the right for takeout. Lots of selection and extremely good quality. I've never had such a delicious pie! The slices are lovely and large, too. 👍

After reading the good reviews and seeing how nice the place looks, my wife and I went here for a slice of pie with a nice cup of coffee. Unfortunately, we were a bit disappointed with the pie. The crust was delicious, but the filling was too wet on both occasions. This made the texture less than ideal, and it was a bit awkward to eat. Fortunately, the flavor was fine. The coffee they serve is Blanche Dael, which is normally very good, but here it was a bit weak. It's a shame. But otherwise, the service was excellent and the atmosphere is pleasant.

The Limburger vlaai was truly delicious, as were the baked goods and sandwiches. The staff was also very friendly and helpful. It's inconvenient that there are only a few seats, and we had to wait about 10 minutes for a free spot, but the place is very popular. The price/performance ratio was very good. We would come back if we're in Maastricht again.
