We had a great experience with the 5 menu course. We asked for a supplement of the Cote d beouf and we had one of the best steaks that we ever had. We had a dry aged maturated meat for 9 weeks. It’s not fair to point only one dish out of the menu but the Albergine was definitely standing out at the end of the night. The staff is extremely friendly and the ambience is unique and cozy.

We had a wonderful meal in the fully covered, atmospheric courtyard. We chose the 6-course plant-based menu. It was very flavorful, varied, and beautifully presented. The accompanying juice menu was also surprising, with all sorts of different fermented flavors, etc. A truly enjoyable experience. The staff was very friendly, and the service timing was perfect. Overall: a fantastic experience!

What. Was. This! What an incredible experience this gem in Nijmegen is! The decor is beautiful and the service is exceptionally friendly, with a thorough explanation of the concept. But the food and drinks are of an unprecedented level! The chef conjures up flavors you wouldn't have thought possible using vegetables, herbs, and weeds (and a bit of meat or fish). Everything is captivating, surprising, and unique. Special wines or homemade juices complement the experience. Top-notch. And as if that wasn't enough, our dog was more than welcome too 🤎

What a fantastic little restaurant! Small, with incredibly friendly service, a lovely menu with delicious and original dishes, and an extensive wine list. Both the restaurant and the courtyard are very atmospheric. A true gem, in my opinion. We'll be back soon!

We had a fantastic meal and a wonderful welcome. The food was delicious and unique. We truly had a wonderful culinary experience. It was great that they were so accommodating, as it was quite warm in the restaurant. (Maybe we should get some air conditioning sometime?) We enjoyed the presentation and the flavors of the dishes so much that we forgot to take pictures.

We had such a wonderful time! The garden setting, the knowledgeable staff, and then the food. We'd never eaten such innovative food before. The Koji Kult is a must. One of our guests had various dietary requirements, and they handled them expertly. We'll definitely be back. Highly recommended!

I tried to spontaneously go to another restaurant on a Friday evening and when i got there they told me they were booked out months in advance but "why don't you try Flores"? I called Flores with no expectations, they'd just opened for the day and i spoke to the owner, a very kind gentleman that told me they'd be able to find me a seat at the kitchen bar and to go ahead and come over. When i walked in, out of the corner of my eye i spotted the Michelin green star. I was going for a quick bite but oooh, things are changing now! I was greeted by the owner who i spoke to on the phone, a super friendly silver haired man, showed me a couple of choices and i sat down at the very corner of the kitchen bar, out of everyone's way, in a comfortable bar stool with a little candle, directly looking into part of the kitchen. Watching the chefs cooking and plating all night was like watching ballet. Plus i had a preview of what was to come. The owner told me they have a set menu, to choose how many courses and to choose wine or house made juice. I selected six courses and juice, I was asked about dietary restrictions, told them gluten and dairy free and the experience commenced. Three and a half hour meal where every dish is your favorite until the next one arrives. The dishes were thoroughly explained by the excellent staff who spoke great English. If the Michelin distinction was not already a hint you quickly understand that everything is fresh, locally sourced, sustainably farmed and they use every edible part of an ingredient. The juices were all home made, extremely but refreshingly unexpected - made of flowers, baked hay, fermented carrot peels, sage, camomile, strawberry, rhubarb, buckwheat, smoke, tomato, sweet potato, Douglas fir, I mean absolute brilliant insanity. The dishes kept on coming and they each had some exquisite twist. The charcuterie of dried and fermented vegetables - amazing. The textures, the flavors.. I already love beets and carrots but they served them to me three different ways and i just sat there in disbelief of how amazing they tasted. Even something as simple as a gluten free bread roll with a flaky salt and oil made of onion peels served as an appetizer was a triumph. A hazelnut cream with a base of three kinds of green beans/peas topped with local fruit, edible flowers and delicate herbs with a dairy free sauce was like eating spring, i don't know how else to describe it. I thought that was my favorite, but then the crawfish came, i could have eaten an entire bowl of it. For sure that was going to be my favorite, i thought, but then the chicken came. Juicy, sauced to perfection, with a patch of crispy sweet skin. That's the highlight of the night, right? Wrong! The ice cream nestled in crispy black currant leaves with juniper was like a punch in the face but in the best way. A flavor explosion that just put an exclamation point on the evening. And all that for a very affordable price allowing me to leave a big tip as well. A little piece of delicious sugar cone came with the bill. Here's the bottom line. Incredible experience. The food is inventive, planned, prepared and plated to perfection, the drinks are surprising and flavorful without being sugary. Rich adventurous flavors, interesting textures, unexpected combinations and drink pairings. Locally grown, sustainably sourced, incredibly delicious. The service is absolutely stellar, they all seem to love working there. The owner is a lovely person. The pacing is great, the amount of food is perfect. The entire experience was more than fantastic. I hope to return some day and find they now have 3 Michelin stars. They surely deserve them. Well done, Flores, well done!

Had dinner at Flores for the second time. My first experience was good (February 2025). Unfortunately, the vegetarian menu was disappointing this time. Especially the bread balls and the seitan dish were not very inspiring and actually not tasty. The service is correct, but lacks some warmth. Too bad - I had expected more.

Every now and then we come to Flores. It was phenomenally good again! The service is very competent. They work hard & walk briskly to provide everyone with dishes, wines, juices. Yet they take the time at the table with explanations and a chat, which gives you the feeling of dining there as a guest, calm and relaxed, despite their high work pace. Regarding the kitchen; for us this was a step more refined, compared to previous visits. Compliments! Everything is in balance. Sweet, sour, bitter, umami, but also spicy hints. The latter was very much to our taste. The menu had a bit more balls, to put it bluntly. In summary. A particularly nice evening, in a beautiful ambiance, in a place where they know what they are doing. And those Koji greens… I still dream of them ;)

Delicious 6-course dinner with exceptionally special and fine dishes that are truly distinctive. The tables in the garden behind make you feel like you are in a Mediterranean atmosphere where it is good to stay. We enjoyed a delicious 5-course menu in this beautiful restaurant that focuses on sustainability and local products. We love good food and enjoy eating out, but this chef managed to surprise us every time with delicious new flavors, such as a hazelnut milk combined with a watercress cream that tasted like wasabi or a foam of baker's yeast. Add to that the friendly and helpful staff, a beautiful and contemporary furnished environment (we sat in the garden which can be completely covered with a retractable roof, it was nice and warm and cozy on this cold and wet evening) and you understand that we had a fantastic evening!!

Interesting dishes, most of the time I did not understand what I was eating, despite the staff's effort to explain in English what was served. We took the tasting menu, and there were many small dishes. Consistently a bit too salty after a while. The empty waffle was with a salty cheese. Nice staff who really want to hear your opinion, and who provide alternatives if there is something that is not appreciated. The meat was tender, but a little too "rare" for my taste. They throttled it a bit more for me though. Expect about €90/person, and then two of us only drank water. It was good and carbonated in a carafe, which was replaced several times during the evening. There is a lot for vegetarians 🌱. Beautiful patio to sit on.

Restaurangen är vacker speciellt i utedelen, som att sitta i en stjärnhimmel. Vi tog avsmakningsmenyn, både vegetariskt och med kött. Köttet var väldigt mört men knappt halstrat. Många små, innovativa och kreativa rätter. Mycket för vegetarianer. 🌱 Genomgående ganska salt meny. Tom stroopwafeln var med en salt ost i, och lite sylt. Den hade vi uppskattat mer utan salt. Trevlig personal som är genuint intresserade av ditt omdöme. Vi fick genast ett alternativ när det var en av rätterna som inte uppskattades av alla. Kan dock inte påstå att det är det godaste jag har ätit. Vi drack massor med vatten som vi fick in i nya karaffer, utan att man behövde säga till (oftast). Räkna med nästan 290€ för 3 personer på 5/6 rätters menyn. Men det var iallafall många rätter och man blev rejält mätt. Personalen gjorde sitt bästa för att översätta till engelska när de beskrev rätterna.

On our first visit we could only score 10's for the food. Original & surprising. There was some objection about a game dish that was downgraded to minced meat, but the response was very professional. The wine list is impressive. The temperature was freezing cold outside and a bit chilly inside, but even there the response was alert. You not only feel like a customer, you also are one. With compliments for the expert and friendly service.

Amazing food, amazing restaurant and amazing service. We really enjoyed it. How the juices are somehow matching the wines, to give the same experience. Bravo. We came already a few times, and we are always amazed, surprised, by the new tastes you put on our plates and in our glasses. The service, so friendly, professional, relax, creates that easy, cosy, comfortable atmosphere. Time flies. Go here! Definitely one of my favorite restaurants in Nijmegen. The food is fantastic with great service. If you manage to sit on the patio, it is highly recommended, because of the trees and glass roof with lights. It is an expensive restaurant, but the price and quality are right!

Het team van Flores houdt echt van hun zaak en heeft een aanstekelijk plezier om wat ze hebben bedacht en gemaakt met hun gasten te delen. Dat alleen al is heel inspirerend aan het bezoek aan Flores. De rode draad is fermentatie, een kunst die ze goed beheersen en die tot bijzondere smaaksensaties leidt. Vaak een heel subtiele rooksmaak, dan weer een beetje zilt of umami. De begeleidende wijnen verrijkten de belevenis ook weer op een verrassende manier. Het ene uitstapje naar het eigen sap beviel wat minder. Wellicht goed om net als bij wijn even voor te proeven, want het kan iets heel persoonlijks zijn. Het werd verder prima opgelost. Voor de passie waarmee alles werd gedaan, de gastvrijheid en vooral de bijzondere en creatieve beheersing van kook- en bereidingstechnieken vonden we het bedrag alleszins redelijk. In 1 woord FANTASTISCH om zo het nieuwe jaar te beginnen. Wat een prachtige spijs-wijn arrangement hebben ze in elkaar gezet. We hadden gekozen voor een 6 gangen menu Flores. Elke hap, elke slok hebben we van genoten. We gaan vaak naar restaurants en ook af en toe naar sterrenrestaurants. Gisteren heeft ons rijtje van pareltjes aangevuld met dit prachtige pareltje. We zaten aan de bar bij vader Willem. Ontzettend leuke avond gehad. Het is zo ongedwongen in de zaak, het leeft en is totaal niet stijfjes. Einde van de avond zijn we naar het achtergelegen gedeelte gegaan voor het nagerecht en de koffie. Prachtig! Dank team Flores voor deze mooie avond.

Amazing restaurant to visit if you are in Nijmegen! The staff is friendly and knowledgeable about the dishes they serve (I don't speak Dutch and all the information was provided to me in English, which was very helpful!!) We had the pleasure of having Elroy, owner of Flores, come to our table and chat with us about wines and the history of the restaurant. We even went to the cellar!! We had a wonderful evening, with excellent company!!! If you go there, you should try the wilde gans (Wild goose), the charcuterie and the dessert!! 🧡

What an amazing experience. The food was flavourful, with a lot of textures. We can see that the chef and his/her team is passionate and go a bit experimental. The service is perfect, smooth and they even brought a little attention for my birthday. Finally, a huge thanks to the sommelier. She is passionate and happily shared her knowledge.

Flores has reinvented itself from once an upscale steak joint to a top quality vegetarian restaurant. Parsley root, dahlia root, mahogany oil, marigold, it's all surprising and particularly refined in taste. There is an extensive range of organic wines. We were most surprised by the different juices that always add something to the dish through fermentation and so on. As far as I'm concerned, keep it up.

Great restaurant with a green Michelin star. Made it a special weekend and we were not disappointed. A beautiful menu with homemade juices made wine and meat unnecessary. Something you don't expect turns out to be possible. The cote de boeuf was perfect, but remarkable because it tasted as you would expect. The rest was a big surprise and therefore a great pleasure because it is even tastier than you have ever tasted the vegetables. And Gouda stroopwafel certainly deserves a savory brother as far as I'm concerned: the cheese waffle from Flores from Nijmegen.

Expectations change as the restaurant becomes more expensive...there is undoubtedly a lot of care put into the food, but the (vegetarian) courses are very similar. Lots of mousses and foam and relatively little variety in structure and taste. After-sales should be looked at. Your coat suddenly appears to be hanging on the coat rack at the entrance, but no one is there to say hello.

Had a delicious meal at fine-dining restaurant Flores! We had one vegetarian and one vegan menu, with a wine and juice pairing. We started with a vegetable charcuterie—alone reason to go to Flores, truly unique! Beforehand there was tomato in different preparations, each with its own taste. The goat butter (also served with the bread) was the tastiest butter ever. The first intermediate course, kohlrabi with an almost meat-like structure, was my favorite, the combination with yellow chili rounded it out. The second course matched the wine a little less. The main course brought unique flavors such as buckwheat, hogweed seed and celeriac, the tempeh turned out very well. The cheese dish was like a savory stroopwafel and red cabbage was surprisingly tasty. The dessert of hazelnut, malt and sea buckthorn was also special. The service was excellent and the wine paired well with each dish. The juice pairing was fun and certainly better than fresh, but often didn't match as well as the wine. Overall, definitely recommended for an evening of dining.

We had a fantastic time at Flores. And almost every time something new came on the table, we were so impressed that while eating we could only say how 'really, really delicious' this was. (This applied to the non-alcoholic drinks, the drinks and the 6 courses). We also find the service very nice and good and relaxed, experts who remember exactly what you can and cannot eat, handle it very smoothly and always put the right goodies on the table without taking notes. The explanation of the food is also great: they can tell you exactly what special food you are being served without it taking too long or requiring too much expertise to even understand what you are eating. And we also really like the atmosphere. Especially if you can sit on the patio.

Had a great evening at Flores! An extensive vegetarian dinner starting with a delicious vegetable charcuterie with a glass of kombucha. Every dish with matching juice was a feast for the taste buds. Everything was delicious to taste and the patio is great to sit on. Nice service, nice explanation of the dishes. We enjoyed it! Team Flores, you are more than worthy of the green Michelin star!

The food was good, the dishes were made with taste and attention and with nice/special ingredients. The people in the service could pay more attention to the guest. We got a bit of that familiar 'my colleague will be with you shortly' feeling. When I asked which flower the petal on my dish was, I got a look of just-eat-it-and-yes-it's-a-petal. The second person I asked asked about it and said it was a dahlia. I immediately expected that service. Another point for improvement is the toilet where 2 empty toilet rolls were floating around and other iniquities. But again: good food.

Beautiful but noisy location in the Stevenskapel. Simple design but well suited for coffee and pastries. Lunch also looks well taken care of. Small scale and no terrace. But you are really in the middle of the beautiful church.

Went here tonight for a bite to eat without any expectations. The menu changes every day, but you can let us know any dietary requirements in advance. We ate better than expected and had a nice atmosphere with friendly and attentive service! Enjoyed a small aperitif with a tasty amuse followed by 3 more courses and for a very small price. Also a delicious extensive drinks menu. Definitely recommended, we will definitely come back!
