Brasserie Bruis in Oude Stad

We had a wonderful, full dinner. We opted for the four-course meal, which was excellent value, especially considering the portion sizes. The accompanying wines were excellent.

Delicious food and great service. The time slot you get to eat is a bit short, though, to allow for a relaxed meal.

Nice french brasserie type of restaurant; they serve a 3/4/5 course set menu or a la carte. Food is very tasty and nice, dish size with our 3 course menu was a bit off but we enjoyed it nevertheless. They advised some nice wines to pair with our dinner. There is a small terrace with a few tables outside but you’ll have to reserve them or be early 😉 service is ok, sometimes a bit slow, but could be because during our visit, all tables seem to arrive at the same time.

We recently visited this restaurant and would like to share our experience in detail, as we believe it may help both future customers and the restaurant management. At first glance, the restaurant’s menu displayed regular dishes, with no particular indication that it followed a fine dining or tasting menu concept. The restaurant is called a “brasserie,” which usually suggests a casual dining experience with reasonably sized portions and à la carte options. After being seated and ordering our drinks, we were informed by the staff that they only offer a fixed full-course menu, which includes a starter, main course, and dessert. Although this was unexpected, we decided to stay, especially because we were interested in having meat for dinner. However, when the food was served, we were quite surprised by the portion sizes. For example, the entrecôte, which was the main dish, consisted of approximately 30 grams of meat — extremely small by any standard. It was very clear at that point that the restaurant was operating under a fine dining or tasting menu format, even though this was never clearly communicated to us when we arrived or when we ordered. In terms of quality, the food itself was quite tasty, and we found the price for this type of fine dining experience to be relatively attractive. However, we left disappointed because of the lack of transparency regarding the portion sizes and dining concept. In the end, we paid around €130. We arrived hungry and unfortunately left still feeling hungry. Had we been properly informed from the beginning about the nature of the menu and the very small portions, we might have made a different choice or at least adjusted our expectations. We hope this feedback is helpful for future guests, and we also hope the restaurant considers providing clearer information to avoid misunderstandings.

We made a reservation through the Dining with the Stars website and are so glad we chose this restaurant! The dishes were absolutely delicious and beautifully presented. The staff was friendly and welcoming. We also loved the cozy atmosphere and the great location.

Een leuk restaurant in het hart van Haarlem. De bediening vlot en attent. De gerechten op zich goed maar persoonlijk vond ik de balans in twee van de vier gerechten niet goed. Ook kan het iets creatiever. De wijnen waren goed.

Fantastically good. Lovely casual atmosphere, the boys are having a great time, but what you get on your plate is anything but casual. Great refined flavors.

Tiny wee portions. Scallops were carpaccioed with a scattering of shrimps . The sea bass was the tail end and must have measured less than 2cms. The chips were packet chips . so that was my main course 2cms of sea bass and a bowl Of microwaved chips!!!!!!! A very obvious feeling when I mentioned the dissapointung amount of fish being server. We are so over novelle cuisine Was the mayonnaise actually Hellmans? Sea bass are obviously mutant in Holland.

What a wonderful evening we had! We started outside on the terrace with a glass of bubbly and some appetizers. Then, inside, we enjoyed a four-course meal. There were also plenty of options for vegetarians, and it was even possible to customize a vegetarian dish on the menu (I don't like asparagus). The staff was very friendly and personable. We truly felt like guests. The food was beyond delicious. Highly recommended for a fantastic evening!

Food is fine, but I find the concept of compiling a mandatory menu disturbing. Quality of the food deserves a slightly better setting. Better chairs and more space between tables. Very noisy and conversations at adjacent tables can be followed verbatim. Service ensures that the glasses remain filled.

Was Valentine's dinner, super tasty, nice service, really good...!

The star goes to the service, because it was fine. The food was really downright bad. Salmon as a starter. Especially leek rings, you had to search for salmon with a magnifying glass. Cod as a main course was tasteless with only two tasteless ravioli with it. Dessert, cheese was fine, but little. I even didn't like the very expensive wine that was recommended to us. If it were a cheap eatery you would already be disappointed, but Bruis pretends otherwise and unfortunately they don't deliver. Much room for improvement. In response to your answer. Google is only posting this now, but it has indeed been written before. The menu as described was certainly your menu then. Also the main course. I will adjust my review, because I ate at your place again afterwards. Again little and tasteless. Then I had the hamachi kingfish and the sea bass. The other 5 people at the table with other dishes were also not satisfied. For ladies it is already far too little, but the men ran to the snack bar afterwards. By the way, we also mentioned this in the restaurant, because we thought that was polite. We didn't get the idea that anyone cared, unfortunately.

Kleine, smaakloze gerechten voor teveel geld. De dure wijn was ook niet lekker. Ganzenlever op het menu 😳?! Niet voor herhaling vatbaar.

Mooie gerechten met goede wijnen in een ontspannen sfeer. De tomaat-tartaar was verrassend en heerlijk, de overige gerechten ook. Mijn partner had als nagerecht het ijs met kruimel en dat vonden we wat karig en simpel, ook in vergelijking met het millefeuille nagerecht (heerlijk). Vlotte en vriendelijke bediening, absolute aanrader, dit restaurant.

Bruis in Haarlem is a wonderful place for a relaxing dinner. The atmosphere is warm and stylish, the staff friendly and the dishes are fresh and tasty. The Beef Wellington is especially recommended! Whether you come by for an extensive dinner or a tasty bite to eat, you are always in the right place at Bruis. Definitely recommended, especially if you want to celebrate your birthday somewhere with a nice group!

Heerlijk!! Erg lekker eten, super verse vis en goede smaak combinaties. Het menu heeft voor ieder wat wils met ook nog specials buiten de kaart om. Leuke tent, gezellig knus en jonge bediening die allemaal erg hun best doen.

Honestly, the dishes were so well executed. Simple dishes but very technical and we could taste it back. Dining here is a celebration.

Restaurant Bruis certainly offers a pleasant dining experience, but there are some areas for improvement. We enjoyed a birthday dinner with six people and the food was good. The service was friendly, attentive and fast, which certainly added to the experience. However, there are a few points of attention, especially for a restaurant that wants to position itself at a higher level. First of all, the balance in the dishes. With the agnolotti, for example, the ratio between the pumpkin and the other ingredients was not optimal, making the pumpkin flavor too dominant. With the starter, only a specific ingredient was removed due to an allergy, was it in excess? This was ultimately at the expense of the complexity and balance of the dish. Even with the duck breast the ratio with the other ingredients is not perfect, We also ordered the chef's menu, via delicious.nk, but it would be nice if more variety was offered or more advice was given, especially when it comes to wine. The wine choice was actually left completely up to us, where some guidance would certainly be appreciated. Finally, we got the feeling that because we had reserved via an external site such as lekker.nl or devork.nl, we were given slightly less choice than if you reserved directly via the restaurant. This somewhat detracts from the overall experience. All in all the food was good, but for a restaurant with higher ambitions there is still room for improvement. Now the price per person of approximately 100 was not in proportion to the experience provided.

Nice atmosphere. Reasonable food, just not in relation to the price level. Certainly not in combination with a supplement. Service is friendly, sometimes appears disinterested and repeatedly comes to the table (much) too quickly, which definitely comes across as rushing. The bill was incorrect on 4 points. Nice for once, but not for repetition.

I can recommend this restaurant 100%. The food is fantastically tasty and looks like art. The breaks between dishes are neither too long nor too short, so you have a relaxing evening. The atmosphere is intimate and the acoustics good. No unnecessary (loud) music, as is the case in many restaurants. Boudewijn served us well and very friendly. The only downside: the ultimately animal-unfriendly foie gras (or foie gras) on the menu. We would love to come back!

Bruis is a beautiful business, very centrally located in Haarlem. The starter (Iberico pate with foie gras and mustard seeds) was very good. The main course (pastured lamb) was disappointing. Meat was very raw even for lamb. Decoration was good. Dessert was okay, nothing special. The wine list was extensive, with also a nice selection of German wines. The menu is somewhat limited. The number of dishes for which a supplement is charged is many. Especially if 20 euros for the tournedos is charged on top of the menu price. That is a bit excessive and therefore not done. I don't think you should charge people who order a bottle of wine for tap water, 5 euros for a small portion of fries with often the last leftovers (small fries) is also a bit on the high side. There were 2 gentlemen serving. They both did their best to make it a successful evening.

In this restaurant you actually just secretly want to lick your plate. Had a wonderful vibrant evening with great dishes. Good service from the staff.

Very nice little restaurant. We had a private lunch in Bruis. The menu was nicely tailored to the birthday girl, a dessert with eggnog and chocolate was specially created for her. A perfect Beef wellington was also served. Very attentive service and very tasty food. We will be back!

We regularly eat at a star restaurant. Bruis reaches this level! The young team sets the bar high and you notice that in everything. You can taste it in the beautiful dishes and the service is knowledgeable and professional. And yet you have the feeling of being in a very informal place. This is a very nice combination!

Heerlijk gegeten! Bijzonder vriendelijke bediening. Daarnaast is er veel kennis van wijn wat de ervaring helemaal compleet maakt.

We know ratatouille and so we were very curious about this sister of Ratatouille. We were warmly welcomed by host Lucas who is co-owner. Bruis is a very nice and cozy restaurant in the heart of Haarlem. We started with a delicious glass of champagne accompanied by oysters. Wonderful start. Lucas is a very driven young entrepreneur and hosting is in his DNA. He proposed a 5-course menu and of course we went along with it. Bruis also has a very nice wine list and the sommelier recommended two nice bottles that matched the dishes seamlessly. We started with housemate salmon and shrimp, followed by a nice piece of red mullet, crispy sweetbreads (yes, that's how it should be!) and a beautiful lamb fillet as the main dish. The menu ended with beautiful dessert. What a nice atmosphere in this restaurant, great menu and top wines. And what's also nice is that the menu is reasonably priced! Well, we were tempted to drink more expensive wines, but there are plenty of options on the menu for every wallet. Congratulations to the team, we would love to come back!

This very good restaurant is located in a very small and cozy street. Nice hosts in the service. Not all tables have the same amount of privacy, but we had a nice round table with linen in a corner. Nice wines, attractive menu with nice "vegetarian" dishes. Duck liver, sweetbreads... both great!

Heerlijke avond gehad! Een zeer mooi restaurant op een van de mooiste locaties in Haarlem centrum die zeker hoog thuishoort in het vaandel van absolute ‘parels’ van deze stad. Vanaf binnenkomst tot en met het laatste eind continu onwijs goede service gehad.. Super vriendelijk en gastvrij personeel(met in het bijzonder Boudewijn en Lucas) die allemaal weten waar ze over praten en daarmee een zeer aangename algehele ambiance creëren. Dan de gerechten, wauw.. Stuk voor stuk heerlijke mooi opgemaakte gerechten van topkwaliteit. Zeer gevarieerd, wij hadden o.a. de paté, geitenkaas, tarbot en de tournedos. Je proeft dat deze met liefde door de chef en zijn team worden klaargemaakt. Gepaard met daarop een prachtig samengestelde wijnkaart is deze topzaak in een woord als ‘magnifiek’ te omschrijven. Wij komen zeker terug!

Het was fantastisch eten. Superleuk personeel. Aanrader voor iedereen.

Heerlijk gegeten. Lekkere hapjes vooraf zoals gebakken chorizo en goede oesters. Onze favorieten waren het voorgerecht, een heerlijke roodbaars ceviche, en een tussengerecht van boterzachte kabeljauw in geweldige ponzu beurre blanc saus. Super lekker! Wijnen zijn wat aan de prijzige kant maar pasten goed bij de gerechten. Wij komen zeker terug.

Mooie zaak, zitten daar graag aan de bar. Mooie gerechten, mooie wijnen. Starten met de oesters en champagne is een aanrader. Daarnaast is de service iets om voor terug te komen

Leuke zaak met mooie wijnen. Porties van het eten te klein. Een hoofdgerecht heeft het formaat van een voorgerecht. Raar ook dat je kunt kiezen uit een aantal gangen maar een tussengerecht mag niet een begingerecht zijn. Je moet dus starten met een voorgerecht! Anders betaal je een supplement?!?!?! Die logica ontgaat mij volledig. Ook jammer dat als je sla als bijgerecht besteld dit alleen sla is met een paar kruimels Parmezaan, zonder dressing of iets anders. Cote du boeuf wel erg smaakvol bij mijn mede tafelgenoten.

Heerlijk eten en leuke bediening

(We were there in July) The quality of the food is absolutely sublime. You have to like to take your time, savour, share. The wine list is amazing! And you will have a sommelier if needed. A beautiful upscale brasserie with charming staff. And fresh flowers 🌹 We have taken : Œuf poché Proeverij van texels lam Crème brûlée Wine : château Citran 2010.

Leuke (maar krap opgestelde) brasserie. Goede wijnkaart, vlotte service, lekker eten. Verbeterpunten: er stond een onverwacht supplement op de rekening, ik vind dat je dat vooraf moet communiceren. En de vintage port die ik bestelde stond duidelijk al enige tijd open. Als je vintage port per glas verkoopt (waarvoor hulde) vind ik dat je deze met de coravin moet openen. Nu was de sjeu er af en dat is zonde voor zo'n mooi product. Navraag bij de bediening leerde dat deze idd al enige tijd open stond maar er werd geen oplossing voor het probleem gezocht.

Eten was lekker. Service was goed, leuk tentje. Enige wat ik mee wil geven is dat er bij de kazen wel wat uitleg had mogen worden gegeven dat ben ik normaal wel gewend. Verder geen aanmerkingen

Een fantastische avond. Heerlijk gegeten. Een enthousiaste keukenbrigade. Het eten opgediend door een uiterst vriendelijke, behulpzame en kundige dame. Een hele gezellige avond gehad.

Mijn eerste ervaring bij brasserie bruis en ik kan u vertellen dat dit niet de laatste is. Een zuster bedrijf van ratatouille dus de verwachting was hoog. Ze hebben dit dubbel en dwars waargemaakt. Brioche foie mijn all time favourite! De gasten in de bediening hebben de juiste kennis van wijn en kunnen aan al je wensen voldoen. Prijs kwaliteit top. Sfeer is top! Kortom hier moet je een keer geweest zijn. Oja bijna vergeten te vermelden. Een tip van Lucas(als ik de naam goed onthouden heb) crème brûlée met supplement foie.. niet over nadenken maar gewoon doen! We zien jullie snel!:)

Eten niet spectaculair en heel lang wachten op je eten. Een bon uiteindelijk met verrassingen, wat dan uitgelegd wordt maar wel prijzen wat vooraf nergens omschreven is. De wijnprijzen zijn echt absurt en totaal niet in verhouding met de sfeer/kwaliteit van het restaurant. 1-malig gedaan en ook de laatste keer.

Via socialdeal met extra tussengerecht. Verrast door de heerlijke gerechten en goede bediening, keurig netjes verzorgd.

Heerlijk mooi opgemaakte gerechten

Prijs kwaliteit moet altijd in balans zijn en dat was het niet. Zowel op kwaliteit en kwantiteit voldeed het niet aan wat je mag verwachten. De zalm als voorgerecht was saai en zonder een smaak die je bij bleef tijdens het eten, het hoofdgerecht was oké maar ook weinig bijzonder. Het hoogtepunt was eigenlijk het vegan dessert en het bolletje honing ijs.

Wederom een super ervaring bij Bruis. Elke gang was perfect en afgesloten met de Côte de Boeuf special.

Weer heerlijke gegeten bij Bruis. We begonnen met de shared starters en eindigen met tarbot en net op de kaart gezette cote du beouf voor 2. Probeer vooral de Paté en coûte en brioche froie.
