Really good atmosphere, with a theme of “Coulisse” (behind the scenes). Super nice service with very delicious food. Each dish is memorable, even more impressive with the explanations of the staff. The sommelier is very professional, he suggests great wine paring (can be customized a bit) based on our preference. A lovely birthday celebration choice!

If you want to see a constructive review this is it: We had the lunch menu for 2, with coctails and some extra apetizers. Food overall was quite underwhelming and mediocre. Flavor-wise it was too heavily focused on bitterness and sourness. This was the case with every single course on the menu. Therefore, the flavor design of the entire menu was very much unbalanced and you’re left with a bitter taste during and after each course. In some of the courses, the additional ingredients were overpowering the main ingredients, in both amount and flavor. With degustation portions, such as these, it is especially problematic, because we were looking to mainly taste and enjoy the main ingredients. The bitter and sour flavors did not always match well with the dish. For instance, a bitter flavoring of the scallop was unfortunately not enjoyable. We didn’t appreciate that the tendon of the scallop was left in. Furthermore, the desert was dissappointing. It was a goat yoghurt mousse, with rhubarb and vanilla. However, the vanilla was almost non-existent in the flavor profile, and there was a parsley/ or basil sauce (2 waiters said different things), which was too prominent in the dish, making it, again, just bitter and tasting like a yoghurt with pesto. Which is not very apetizing. Keep in mind the mysterious pesto tasting sauce was not mentioned in the menu, yet it was the most prominent flavor of the dessert. Morevover, the waiting time between the courses was too long for the amount of food you recieve. Each course was very small and eaten within moments. We sat there for 2 hours already and yet we still haven’t had the main course (the 5th dish). By the end of the lunch, we were still hungry. Drinks: We chose to go with the coctails instead of the tasting menu. Their signature coctail tastes very good. Vermouth spritz was fine too, but they serve all their coctails with small thin pieces of ice cubes, which may be uncomfortable to drink. Especially if your teeth are sensitive, you can’t enjoy the drink because of the ice. They didn’t provide a straw with neither of them, which is fine, but when I asked for one, again because my teeth are sensitive and it hurt, I was told they don’t have any. Very strange in my opinion. Atmosphere: The interior is very crusty. The windows, walls, leather couch and the wine display cabinet were all dirty to the point you won’t overlook it. The sofa along the wall was way too deep and uncomfortable, so that you can’t pleasantly lean back into your seat. It also had a weird oily hand print on it, and the chairs were stained too. Overall, the staff was nice, but we wouldn’t come back and I don’t understand how this place has a michelin star. All of this for the cost of 270€ altogether.

An absolute gem of a restaurant. From the moment you walk in, you can tell this restaurant knows what it’s doing. From the ambiance to the service, to the amazing and unique dishes, our dinner was lovely. We took some family here to visit and couldn’t have been more pleased. The most disappointing part was hearing of their closing in May (but here’s to hoping for a “rebirth” in some way sometime in the near future)!

Celebrated my birthday here. Note that it is lower in price point than other michelin restaurants and more informal. This was however also reflected in our experience. Staff is friendly, but many mistakes were made. Ordered their 4 glass wine pairing - received and paid for 6 instead. We let it slide since we liked the wines. Explanation of wines did not match with the right course (i.e. " this wine pairs well with the flavours of dish XYZ" while we were at dish ABC) which was then corrected multiple times. Made us doubt whether the sommelier was experienced and whether we received the correct wine pairings. It also seemed as if they were understaffed. We picked this restaurant because we like the infusion of asian flavours, but there was a lot of repetition of the same umami flavour profiles and ingredients (e.g. shisho as main flavor in multiple courses which tastes strong), which was a bit disappointing. Explanation to the dishes were sometimes very brief and not more than what was already mentioned on the menu as if the staff forgot or did not want to spend time to do so. Presentation of dishes was nice. Personal preference: we like to have some bread early on while waiting for the remaining courses, especially if the waiting time is relatively long. Here you only receive bread during one of the last courses before moving on to dessert. Ambiance overall was nice. There is no music if that is your preference. If you are unlucky with your table, you may be sitting tucked away or right in front of the door.

One of my favourite dining experiences in Amsterdam! Service was warm and welcoming. Our server was attentive and really wonderful to chat with as he guided us through the menu. Additionally, thank you for the local recommendations! The food was quite eclectic, but not overwhelming. I mean this in a very good way. Flavours were pushing the boundary of obscurity, while maintaining deliciousness! I loved the interpretation of ingredients, really showcasing seasonality and balance of flavour. Disappointing Michelin Star Experience – Tasteless Dishes and Poor Service I’m honestly puzzled as to how this restaurant earned its Michelin star. Our experience was far from awful, but it didn’t live up to the standard I expected from a Michelin-level establishment. It felt like many of the dishes were incomplete—flavor-wise, they could have been much more refined. They seemed to focus so much on innovation that they forgot the most basic rule of cooking: the dish should taste good. Sadly, most of what we tried was either bitter or sour. Perhaps there’s a personal preference from the chef for these flavors, but even when it comes to palate cleansers, it didn’t make sense in many dishes. Out of the 8 courses we had, I only enjoyed two, and one of those was oysters, which hardly counts as a “dish” in the traditional sense—it’s just oysters. That’s a disappointing result when you’re paying for a multi-course, Michelin-star experience. Another issue was the service, which was subpar at best. They forgot to remove crumbs from our table until we pointed it out. This kind of oversight is not what you’d expect in a Michelin restaurant. Furthermore, multiple different waiters attended to us, which made the experience feel more like a casual bistro than a fine-dining restaurant. The lack of consistency in service only added to the overall disappointment. Overall, based on my experience, the food was not tasty and the service lacked the attention to detail you'd expect from a Michelin-starred venue. Unfortunately, it was the first time in my life that I found myself sitting in a Michelin restaurant, wishing for the meal to be over. Definitely not worth the visit, and I won’t be returning.

Coulisse has a wonderful kitchen staff. All dishes have a perfectly balanced spectrum of flavors. While all other waiting staff members were performing like one expects in a fine dining restaurant, it seemed our waiter either lacked training or doesn’t care enough. Coulisse in Amsterdam has a lot going for it, earning a solid 4 stars in my book. The atmosphere is great—trendy and relaxed, with a buzz that makes for an enjoyable night out. The service was also on point; attentive without being overbearing, and the team was knowledgeable and friendly. The food, however, was a bit hit-or-miss for me. While I usually appreciate a creative twist on classic dishes, some of the flavors here felt like they were trying a bit too hard to impress, to the point of complexity. I’m all for innovative cuisine, but I didn’t quite connect with the combinations. That said, if you’re a fan of unique, experimental flavors, Coulisse might just be your spot.

I made an online reservation, paid the fee, and arrived expecting a pleasant experience. However, my reservation wasn’t found, and I ended up seated near the restroom. Interestingly, two days before my visit, I received an email confirming they were expecting me. Despite that, the service struggled: food arrived slowly, and the dishes were often served in the wrong order. Being a solo visitor, I spent three hours seated near the restroom on a quiet floor, isolated from the other guests, with up to 20-minute pauses between plates – a truly “unique” experience. To make matters worse, the amount I prepaid online wasn’t deducted from my final bill, something I noticed only a couple of days later. They did process a refund after I reached out via email, which I appreciate. Initially, I didn’t want to share this, but I feel genuinely disappointed. This evening was supposed to be a highlight of my holiday, and between so many amazing options in the city, I chose this place, which has now become the biggest regret of my trip.

All dishes were very tasty, there were many vegetarian dishes in the menu. Due to few proteins and carbohydrates in the menu, you will not feel very satiated afterwards. My advice: add fish or meat to the course and bread as a side dish during all courses up to and including the main course.

Couldn’t believe this level of cuisine was around the corner all this time. Felt like in another world inside the beautiful place this old theater hall transports you through kind and knowledgeable service and unique flavors and composition. Celebrated an anniversary here and it was magical. We did the 7 course taster menu with wine pairings. At the first course it went straight intou top 5 restaurants of all.time. 6 courses later and it became the best meal I've ever had The thought and experimentation that has gone into some of the dishes is trulyind blowing. Particular impressed at how each meal has."something" you didn't expect but didn't know you needed to ask for until your eating it. Hard to make sense. There was an egg plant taco like meal.servednon a napkin, which initially makes no sense, then after your first bite you haphazardly wolf the entire thing down creating a mess that requires a napkin! More.examples like that for every course. But just so memorable and an incredible tasting experience

Everything was A-M-A-Z-I-N-G. The experience took approximately 4 hours. We had a 5 course meal but all in all it felt like 10. Because starter consisted of 3 meals, then we were complimented by Chef with an incredible saffron and zucchini grilled fish. There was a main course afterwards and a 3 step dessert. We ordered a non-alcoholic pairing which was insane and complemented the food perfectly. The owner of the restaurant invited us to the kitchen and sang Happy Birthday to me. Thank you Simon for that! I wholeheartedly advise you this place. It is not only my opinion, I also came here after my local friend’s recommendation.

Very unique and good combinations of Scandinavian flavor. We liked a lot of the dishes creativity. Some of them were really special. The modern art on the wall is in my opinion a good choice, it gives a good atmosphere. This dinner was for my partners birthday, it was a nice touch that their congratulations to him was written on the menu card. It would have been nice if the waiters would have mentioned his birthday in person, but that is something to improve;)

Dined in on Feb 24th. Two persons, two 7-courses menus with drink pairing. Wine and non-alc. My partner's drink for the dish was forgotten. Twice. I had to ask for the waiter and tell them to bring it. I chose the cheese platter before dessert and this was also forgotten. I had to remind the waiter when they were bringing the dessert, so they had to take the dessert back, take the cutlery, the drink, then bring the cheese platter with the appropriate cutlery and a different drink. Serving seemed chaotic. It looked like every waiter was waiting every table. We were served by 4 or 5 different persons at different times - there was not one person assigned to our table. Price quality ratio was also disappointing. Almost €400 in total for 2 people with pairing, which is expected at a one-star establishment, but not given the serving above. Also, not when the main meat dish in the menu is pigeon. I had chosen wine pairing and had one drink for each course, but in the end there was an extra drink added on my bill (a glass of port, if I recall correctly). I don't understand why it was not included in the pairing. The marshmarrow in the menu is not a typo

We recently attended the Vanderveen collaboration event with Coulisse, and it was an absolute delight. The event was a culinary journey that began on the second floor with a warm welcome of sparkling wine, followed by exquisite amuses. We then descended to the first floor for the main course, and finally returned to the second floor for dessert accompanied by a chill DJ – a seamless and enjoyable experience. The food, as always, was outstanding with layers of flavor that showcased Vanderveen’s culinary expertise. A star in its own right, their bread was a masterpiece – warm, crispy on the outside, and delightfully soft on the inside. Wine pairing was also on point! What made the evening even more special was the great service and attentive staff. The Vanderveen and Coulisse collaboration event was a memorable experience. I can’t help but hope for more events like this in the future!!!

We had booked a table for 7 and paid for the reservation fee of EUR35/person. Then they charged us EUR7 for the card booking fee. The card fee was not indicated anywhere on their website and also not reflected in the receipt. We asked why and they simply replied that "credit card charges cost them money too." The food was good, but not worth the price. Wine was good and the service was also pretty good. When we paid for the final bill, they deducted the the EUR35/person booking fee, but since we ended up with 5 people and not 7, they only refunded us for 5. Their reasoning was they had to prepare food for 7 and not 5. We ate the 7 courses, we had lots of drinks... did they really prepared food for 7? They didn't know if we were going for the 5 courses or the 7 course, so how could they have pre-prepared all the food for us? What about walk-ins? Do they simply turn them away because they have no food for them? At the end, we decided not to tip them because charging us EUR7 for the card fee, then taking EUR70 from us because we ended up with 5 people are simply not professional and not very good customer svc. No wonder the restaurant was only 20% occupied.

What a meal! This 6 course menu (which was closer to 9 with all the little extra bits) was a very exciting experience. There were some ingredients I knew I didn't like but when confronted with them here they tasted delicious and I saw them in a whole new light. The service is very attentive and the cocktails were amazing! Honestly can not thank the team enough for the fantastic night. A heads up though the menu can run almost 3 hours.

Ate at Coulisse with my sister to celebrate our birthday. The food was all excellent and the service very friendly. I did miss some background music and the lighting was too bright in my opinion, making the atmosphere a bit chilly. Unfortunately, I wasn't feeling well halfway through the evening and we asked for the bill. Even though we only ate half the menu, we had to pay the full price. This left an unpleasant aftertaste in the evening. Afterwards I contacted the restaurant about this and they spoke to me kindly. They indicated that the costs for staff/purchasing had already been paid and it was not up to them if guests wanted to end the evening earlier before the entire menu had been served, for whatever reason. It's a shame that it had to turn out this way, in my opinion it was not very hospitable and did not think along. Wouldn't go back here.

Beautiful restaurant and professional service. For a One starred restaurant I was expecting more. The taste composition is adventurous but generally experimental and missing a punch. There is a ton of complexity involved but then you get hit by for example a very overwhelming brown butter/brown sugar mix and that would be all your taste bud can recall. The prix menu is six course and there are two supplement presented to us. We chose the lobster supplement but forego the cheese course. Lobster is excellent. Overall I agree with the general review that there is tremendous effort that went into it but got lost in the joy of simplicity of food. The dinner typically lasts 3.5 hours so plan on being there for a while.

Waarom geef ik nog 5 sterren? Het is onwijs duidelijk dat dit restaurant 6 sterren zou moeten ontvangen. Nog niet eens 3 jaar open en voor Michelin als voor iedereen die hierin loop is het zonder twijfel een perfecte avond. Alle gerechten zijn bijzonder maar niks is fout. Ga all in maar alsjeblieft blijf normaal!

Mijn favoriete restaurant in Amsterdam. Het eten is geweldig, de sfeer en de bediening zijn absoluut top. De locatie is heel bijzonder, warm en gezellig; echt sfeervol. Simon en Tim zijn een gouden duo! Tot snel weer!

Voor de vierde keer bij Coulisse gegeten, en het was weer geweldig goed. Koken op zeer hoog niveau, met perfecte service en perfecte wine-pairing. Ik snap dan ook niks van die paar recensies met weinig sterren (trollen?), want alles klopt hier.

This was our third time at Coullisse, and it felt even better than previous times; every dish was amazingly creative full and of subtle flavors. The same for the non-alcoholic drinks paring that we enjoyed a lot. The only (minor) negative was the music, of which we could pretty much only hear the bass tones. It increased the general noise level and meant that we needed to raise our voices.

Average with a long wait, 4 of the 6/7 dishes were great, the rest had to much going on, like the watermelon soup, didn't taste of water melon didn't taste of tomato just something in between. Honestly it was a bit disappointing.

Given it’s a Michelin restaurant and thats why you most likely come here it simply is not adding up. The food really is not thought through, combinations not interesting at all. The best part of the meal was the Turbot which was not a part of the main menu but an add on. The lamb which was the “main” of the tasting menu was on a watery sauce with a weird mix of vegetables. Honestly not worth it if you want a great meal.

Their Vegetarian 7 course dinner is great. I went for the non-alcoholic drink pairing, and it was one the best. All drinks supplemented the flavor of the course. Exceptional.

DEZAMAGITOR . . Un mare copac de plastic in incapere, osparii nu stiau ce fac, unul isi baga degetele in gura si apoi umbla prin farfurii( il vedeam cu totij ). Ostaparii plictisiti . Parca erau obligati sa serveasca la mese . Muzica extrem de proasta ( aproape inexistenta) . Mancarea .. Am luat tasting meniu... extrem de mult a durat 4 ore, nu exista a la carte , a venit uneori rece , carnea ( miel am luat ) cruda ... ( fara sa intrebe cum dorim ) . Desertul dezechilibrat , fff acru . Foarte multe vinuri in carte in comparatie cu meniul ,.am fost cu persoane dragi mie si toti lucram in industria horeca MARE DEZAMAGIRE, ceed ca au luat steaua michelin pe pile

Make sure you are NOT going on a night when they serve outdoors - the nuance and subtlety of the excellent dishes gets lost with all the distraction outside. Surprisingly good non-alcoholic drinks pairing, must be reserved ahead, but try it! Also tasty vegetarian options.

On our IJsselmeer bike tour, we also stayed overnight at the Yotel in the north of Amsterdam. We had planned to go to the Mexican restaurant across the street for dinner, but it was a private gathering. However, we lingered outside for a while because a three-piece rock band, using an old American road cruiser as a stage, was playing loud and catchy music for the group. We opted for Plan B and went to Bar Boeket, and we weren't disappointed. Unfortunately, it was very chilly that evening, so we couldn't sit in the lovely outdoor area. The bar itself played chilled music, and we found a nice spot. A large bottle of still water was offered on the house—very nice service! Then we ordered the unusual Estaminet Pils from Belgium, something different from the ubiquitous Heineken. We ordered food from the daily menu: white fish for my companion and Limburg Zuurvlees with fries for me, all of which tasted delicious. Conclusion: We really liked the Boeket bar; when the weather is nice, you can also sit outside.
