Fantastic experience and a definite bucket list item! We loved the ambiance at the place and the fact that all different chefs serve their course to you. Flavours were unique, well-balanced, innovative and looked like art. I loved how they were able to play and work with structures that surprise you, especially since it’s all plantbased. We chose the non-alcoholic drinks pairing which was perfect. Very unique flavours and ways of fermentation and brewing that paired well with the food. It was an unforgettable experience. One of the best dining experiences in a very long time. We had to wait a long time, but it was worth it. Upon entering you are already welcomed very friendly, the staff is very hospitable and not so stiff (we think that is a plus point). But of course you come here for the food, that is seriously unprecedented! I think I have never eaten anything like it, it was delicious, surprising, amazing and above all enjoyable. The butter, the tofu, the cheese, the bread, the meat radish, it is all an experience!

One of our best food experiences ever! We had high hopes for De Nieuwe Winkel, and they did not disappoint. From the moment you step inside, you feel extremely welcomed. The cozy surroundings and the open kitchen makes for a special night, and the acoustics sound panels make it easy to hold a conversation. The food is obviously the no 1 element and it is extremely flavorful. Full of unique tastes and each dish is presented as a small piece of art. We had the spring awakenings menu, where dishes like the white asparagus, the sea fennel blossom and ocean-inspired desserts were unforgettable masterpieces. Highly recommend to visit this restaurant if you are looking for an exceptional dining experience!

A star restaurant but completely vegan. A 'must-go' for vegan fans. It is highly recommended for those who are not (always) vegan. Just try it once...... and then...... it's taste, taste and more taste. I thought the dishes were original and often very beautifully prepared. From your table you can see the brigade working with tweezers to get the beautiful work on the plate. The service is pleasant and at the beginning of the evening it immediately became clear to us that we were going to play here. The drinks in the package are varied, not too many and not exclusively alcoholic. The botanical drinks are just as delicious as everything else. In terms of wine, not one stood out for me. And after about 4 hours of dining we were done with the flavors of miso, fungi, mushrooms and ferments. And yet... the chickpea 'butter' with hazelnut oil with the delicious sourdough.... delicious. When we left, they had certainly not forgotten that my wife was wearing a scarf. Moreover, they had set up a small side table for her clutch. Here they have understood well that original and good food goes hand in hand with top-level hospitality. If you can get a reservation, you should go! p.s. We achieved the latter relatively quickly (within a few weeks) via the waiting list!

I don't find it easy to judge the New Shop. Over the years I have had about 30 Michelin experiences (1-2-3 stars) and this visit was ultimately incomparable. For me, the food was most comparable to an experience I once had in Barcelona, ​​where they cooked molecularly in the style of El Bulli. You don't know what you are tasting and that sometimes causes confusion, but it is also very fun and special. At De Nieuwe Winkel they cook completely plant-based, which makes them unique and very authentic. The atmosphere here is very relaxed and cozy and many employees say something like "nice to have you here". The waiters joke and really try to make you feel at home. In principle very nice, but sometimes a bit too much and a bit cramped for me. The service is also casual, they are not very stuck on etiquette, such as serving the lady in the company her food first and such. You gotta love it a little bit. I certainly want to feel at home, but I also want to go out for an evening and really experience that experience (which also suits such an expense). The tables are not too spacious and it has an industrial, modern design. I found the chairs uncomfortable, especially for such a long seat that you have in these types of restaurants. I didn't think the acoustics inside were too good either, a lot of chattering. Understanding each other was not easy, let alone employees who all used unfamiliar terms (in English). With many dishes I wondered what was happening in my mouth and what exactly I was tasting. If you have the Symbiotic Culture of Bacteria and Yeast (SCOBY) of a fungus, then I have a hard time identifying it. That dish was very tasty by the way. The dish "Red Meat", which actually consists of a kind of pulled pork made from red radish, was a good example of my total experience. Very special to experience the meaty structure, but the taste was not necessarily my favorite. The pairing with the dishes (wine, beer and botanical) was also surprising. I've certainly had drinks that I've never had before, but whether it was the best pairing ever because a winemaker does everything by hand or because the wine is not filtered? That's what I asked myself. Was it special? Certainly. Unique even. Was it creative? Absolute. Well cared for? Without a doubt. Friendly? Beyond question. Were they the tastiest things I've ever had? I can't say a resounding "yes" to that. There were a number of gems of dishes, but also some dishes of which I did not think the taste was excellent and sometimes I also thought that they would be even better with a meat or fish component. That is not their concept and that makes them incredibly authentic, but for me that made it an 8.5 and not a 10. As far as I am concerned, a concept should not limit you, but perhaps my preference is a bit more classic. All in all, in terms of food, it was a truly unique experience, but I do have the idea that authenticity, discovering new things, surprise and "wanting to do things differently (and perhaps also environmentally responsible)" sometimes take precedence over taste and experience. That is of course their right and they really create something special, but in the end it all comes down to whether it was tasty. That was it, but I have also eaten better in star restaurants. I am very grateful that I was able to have this experience, I certainly wouldn't have wanted to miss it and I will recommend it to anyone who wants to experience something unique. It should be said that this restaurant is certainly not for everyone. I don't think I'll be going back anytime soon to have a nice meal there. Well, I don't do that so quickly anyway, because there is so much new to discover in culinary fine dining land. Thank you for the beautiful evening and good luck!

Amazing experience, what an amazing flavours you can create with vegan food. So many special food preparations are really impressive. Some dishes take them 3 days to prepare. De Nieuwe Winkel is difficult to assess, because the completely plant-based menu continuously stimulates and challenges you. No, not all courses are equally 'conventional', because what do you actually taste... but this literal food for thought is so exciting and innovative. In terms of layout and innovation of the dishes, De Nieuwe Winkel plays the Champions league. What could be improved is creating balance in the menu itself. The tail has quite salty snacks on a number of occasions. While the very bitter chicory dish at the beginning of the evening is so good because it is neither salty nor sweet. At this two-star level, the wine pairing (or botanical drinks arrangement) could be improved. Some very nice wines, but also a few 'mwah'. Every wine in such a place should be good. Fortunately, there is no difficulty in switching between arrangements, or exchanging for another glass. Fortunately, we do not see this reflected in the bill. In retrospect, we would have preferred to skip the champagne aperitif at 25 euros per glass... Compliments to the young but skilled black brigade. Every detail was seen, but everything with a free and humorous manner. Top! In terms of experience, we were focused on the open kitchen. We liked this, but the whole thing could be a little more spacious. It felt a bit busy, also due to the lively acoustics (some dishes were given an English explanation, which was incomprehensible). Giving a little more space, the lighting a bit darker, perhaps a solution for the bags on the floor... this would further fine-tune the experience. And yet, in conclusion, De Nieuwe Winkel is worth it, both financially and taking into account the hysterical reservation process. For fans of vegan food, but certainly also for Burgundian cuisine, this restaurant is truly a once in your lifetime experience.

While I'm still enjoying it, I'd like to write the review since everything is still fresh. When I made a reservation six months ago, coincidentally at a very random time on a random day without really thinking about it, I didn't actually know exactly where I was making a reservation. I knew it would be a completely plant-based menu and I had heard a lot about it. I just thought it would be 'funny' to experience it once. Partly because I am not vegan but am interested in gastronomy. I have to come back to 'funny' for a moment because there is nothing funny about this. The cooking is serious with the most ridiculous techniques and presented at a particularly high artistic level. Cheers! During the Uber ride to the restaurant, our driver said 'oh the new store is not for me, I just want meat'. I believe that everyone should decide this for themselves, but this menu was of unprecedented level. What I mean by this is that you, as a non-vegan, are not short of anything for flavors like these and that those prejudices can be thrown out immediately. Man, I can keep writing. The hosts worked around you like a kind of dance with excellent wine pairing. The alcohol-free pairing is just as good. In the background you could hear the kitchen staff shouting 'BON' in unison when the chef gave an order, wonderful. 1 warning to the newbies: it's quite a ride with a lot of flavors flying around so be prepared. I go to sleep wonderfully as a satisfied person. Thanks to everyone. Was an experience I will never forget. Congratulations again!

An interesting experience. As if you have ended up in an Alex van Warmerdam film, but not quite what we had hoped from a culinary point of view. The food is at times brilliant but also a bit monotonous and intensely salty: slightly too much vegetables boiled down to Marmite content. One course was downright burnt and I sent it back. No wonder the whole room was blue... Another try was better but still way too salty. The portions were also very small, so we were still hungry when we left and woke up during the night. Cheese arrangement is nice, but I think Jay&Joy (available at Ekoplaza) based on cashew is better. Service was good and explanation of the dishes was also good. However, the pumping room was 'not available' (not temporarily occupied) and my girlfriend had to pump in the toilet. That's unforgivable. You must facilitate a pumping room, even if it is only an improvised space. We could laugh at the military ritual where they chant table numbers and stamp their feet, but it is not very chic. It is very distracting. The room is beautiful, but very poorly ventilated and the acoustics are poor. At one point it was completely blue and very warm. Afterwards my clothes smelled like I had barbecued. I don't think that's the intention. All in all, an interesting experience but far too expensive, not very good and above all a bit alienating.

Finally had dinner at De Nieuwe Winkel. This has been on my wishlist for years. You really have to make an effort to make a reservation. The welcome was extremely friendly and the kitchen staff was also well instructed and greeted all guests. Because the kitchen is largely or perhaps completely open, this is also possible. That makes the atmosphere very nice, there is a lot to see. As many as 12 chefs stood endlessly and with a lot of patience with tweezers, doing the final preparation of the dishes, very funny to see. We got a nine course menu. But with the delicious broth as soon as we were seated, there were 10. Up to and including, I think, dish 6, all beautiful, delicious and special. After that it started to taste very similar. I found the flavors to be quite sweet across the board. My wife found them 'too high' in taste during the evening. A nice description for simply 'too salty'. Almost nothing had a nice fresh taste (except in the first dishes with chicory). Maybe this has to do with the turnip and pumpkin season, but I found that it became more and more noticeable the further we went. But I like fresh and that sourness. I also missed the freshness in the desserts. I then wonder: before the menu is finalized, do the chefs eat all the courses one after the other at the pace at which guests are served. I get the impression not, but we know...... there is no arguing about taste and preferences. We had a nice evening and beautiful experience.

The food is very special. We had a very nice meal. Unfortunately, the alcohol-free package was disappointing. They were tasty drinks but we expected more. The drinks were also on the sweet side. Case in point “the emperor's clothes”. Very disappointing. The restaurant itself is an echoing sound box, making it not really possible to have a conversation. I was very disturbed by the staff. The chefs perform a kind of military ritual from time to time, which adds little, except that it distracts even more from the conversation at the table. The service is over the top jovial. It made me feel as if you were sitting there as a guest, applauding the staff. Sour is predominant in the food, and the aftertaste is always very stale. Like you smell potting soil. You can taste craftsmanship in the first bite. With the second bite you think “it should be tasty too” and from the 3rd bite you are eating happily. I gave up after 6 dishes (including amuse-bouche). My table companions bravely persevered and were given a viariation on risotto that was so bitter that one of them had to gag. It was one big overhyped play.

I have been to Noma in Copenhagen and several other Michelin-starred restaurants but Nieuwe Winkel is truly special. The food will make every omnivore a fan of vegan food & the staff is so down-to-earth and friendly. The prices are still reasonable for the quality of the food and amount of wine you get. The dishes will definitely stay with us. Now the key question: did we like it? Certainly, we generally ate good to very good food. If you look purely at the flavors (and therefore forget about the concept for a moment), I was not as blown away in terms of flavor intensity and refinement as with a number of other things. Food was fresh and very original, but alas, extremely salty (since most of the ingredients were fermented) thus you become very thirsty. Hence, you spend a lot of money on a lot of drinks. Also, all of the courses are so micro-sized and supposed to be top-class and artsy, that after having spent a fortune, you'll still feel hungry and in need for some fries at the local cafeteria around the corner. But, I guess as goes for everything, tastes differ! I suppose for the upperclass and true "food connaisseurs", it's an amazing experience and it deserves its Michelin stars. Being just a pleb, it's difficult to enjoy something that expensive, meanwhile bearing so little nutritional value. To finally end this elaborate review : knowing what little food people in a lot of 3rd world countries over the world have and that just one course in this reataurant equals about a week's family meal in, let's say Burkina Faso, well... It becomes so much less fun eating out in these sort of establishments.

Personally, I quickly get annoyed in the catering industry by the quality, both of staff and of the food or advice. This is why we have decided to no longer go to a normal restaurant 4 or 5 times a year, but to go to a more luxurious segment less often. The new store offers catering of the highest level. When you enter, you are greeted very personally by all the staff (including the kitchen staff), you sincerely believe that they are happy that you are there. The staff is clearly trained and clearly experienced. They know they are there to make your evening as pleasant as possible. They do this, among other things, by entering into an informal conversation with you, quickly understanding what we "the guest" expect from them and having each dish served by the chef who made it, with the beautiful story and the beautiful story behind each dish. possibility and accessibility to ask questions about this. Nothing felt forced, of course there is an attempt to upsell, but that also fits with the accompanying story. Every course was a surprise, and every bite was different than I expected. Everything I was presented with was beautifully presented, prepared with love and using almost only local ingredients. Also, each course was completely different from the previous one, but still fit together perfectly. This in combination with local or home-made drinks that perfectly accentuated the food. As someone who describes themselves as a meat eater, I was afraid I would miss this... but not a single course needed "meat", better yet, this showed me how incredibly delicious vegetarian food can be! Compliments!! The location is beautiful, but it does feel a bit crowded and it took some time to find where exactly it was. This makes it a bit noisy and you notice that each table talks a little louder to hear each other. The price of the food matches the service you receive and the preparation method (which sometimes takes hours), especially when you consider that the ingredients are picked locally in many cases. I think the price of the drinks, especially the botanical non-alcoholic drinks, was a bit on the high side (the beer was the cheapest). The coffee and the accompanying story were also delicious, but I am personally more of a fan of an espresso. Compliments for the kitchen but also for the great service. 2 stars is actually still too few.

Had a fantastic experience in the restaurant. Difficult to explain exactly why I give 4 instead of 5 stars, I would give it an 8.5 on a scale of 10. To start with, the service and attention (also from the chef himself) are great. As many other reviewers indicate, the attitude of the staff is casual and informal. Very pleasant. The dishes we received were beautiful to look at and many also tasted very good. That didn't apply to everything, however. There were a number of dishes that we simply found less interesting. What ultimately makes me decide on 4 stars is the fact that the drinks served with the dishes simply do not match good wine. That can also be ordered, but I felt that there was a bit of direction in the direction of this arrangement. And to finish, I would have really liked a good double espresso. The coffee served is interesting and has a nice story behind it, but I still missed that small cup with a nice crema. Had a great evening, I realize that these are very personal things so I advise everyone to come along and form your own opinion!

Wauw! This plant-based restaurant will show you how it’s done. As this is the first plant based restaurant in the Netherlands with Michelin stars I really wanted to go! The dishes were really surprising and flavourful. Our table looked right in the kitchen and it was amazing to see how much effort was put in every single plate. WOW!! Ate at the Nieuwe Winkel in Nijmegen. Botanical Gastronomy: a plant-based cuisine awarded two Michelin stars: a traditional star and the new green star for sustainability. Chef Emile van der Staak and his wonderful team provided an evening-filling experience in taste, smell, texture, atmosphere and conviviality. You can taste Emile's love for (local, indigenous) plants in the fantastic dishes. Where every dish has been given a special touch. Taste comes first, that's clear. How that taste is achieved is an experiment. Or as Emile explained to us yesterday: through calculated failure you discover special gems. Pick. To smell. Samples. Analyze. Fermenting. To dry. Roasting. To cook. Until there is something on your plate that surprises and overwhelms you. Well and it did, not normal! The 13 dishes we were served were so incredibly delicious! A sublime balance between sweet, sour, salty, bitter and umami in every dish. With a layering and depth that few chefs can match with almost 100% plant-based dishes. The evening started with a crispy potato 'paper' sprinkled with fermented leek powder. wow! Then a double amuse of tomato gazpacho fermented for 4 months that you drink through a straw, with your nose between the freshly picked peppermint, lemon verbena and lemon balm leaves, making a great combination of taste and smell. With a delicious buckwheat container filled with fermented baker's yeast that tastes like soft but intense cheese, where the fresh herbs and flowers give a surprising note. Then we were served a dish of leaf stalks with native hogweed, green asparagus and celery stalk wrapped in the chlorophyll on a mouse of oxidized green pumpkin seeds. How delicious it is. Then beetroot with black garlic with a green oil from blackcurrant leaves. A botanical drink was served with elder, licorice and malt. What a combination. The chewy beetroot and black garlic, with the licorice flavor of the drink was amazing. And speaking of experimenting. The white asparagus with black almond quenelle that has been roasted for 40 days (!!) With a big brain twister, because the asparagus are covered in a multi-colored sauce, making it look like crunchy chocolate stems. It's amazing what that does to taste and experience. Then we were served 'Ripe Potato', a dish with two preparations of potato, in which the mashed potatoes have been treated with an enzyme, which breaks down the proteins in such a way that a very layered and cheesy taste is created. Supplemented with the dark vegetable gravy, one to lick off your plate (I didn't do it, but I wanted to, hahaha). The highlight was the fried tempeh of Dutch quinoa with fresh garden carrots and concentrated vegetable gravy on a mouse of garden carrot and horseradish. The 100% plant-based and gastronomic variant of the Dutch meatball, but much tastier. Juicy, oily and full in a good way, deep and rich in flavor, with a delicious caramelized exterior. The quinoa from the Flevopolder still has a small crunch, which makes every bite feel like a flavor explosion in your mouth. The desserts were just as tasty. In honor of our 25th wedding anniversary, we received an extra dessert from the house, including a vegan chocolate brownie, flower ice cream, fresh flowers and shiso leaf powder. Then a meringue filled with hop ice cream, and two preparations of rhubarb with flowers and yarrow. With a matching glass of IPA beer from a local (secret) brewer. Soooo delicious. With the slow-drip coffee made from unroasted and unpeeled coffee beans, we received a stick of quince from the barbecue candied in sugar. wow! And finally a wine gum made from Douglas fir. Awesome! This was a truly wonderful evening full of gastronomic taste sensations. And so great that this is plant-based. What a pioneer and artist Emile is! Hopefully an inspiration for many other chefs to cook more plant-based.

After waiting for moths, we finally got our reservation. My partner is full on vegan who loved everything about the evening, the food and the drinks. So don't be alarmed by this review. Everybody's taste is different. I'm just sharing mine. What did I think of the food? That the flavors were very special and often tasty, however I didn't get the feeling this was 'one of the most delicious dinners' I ever had. That's a pity when you just spent over 500 euros for 2 people (9 courses - with matching beer and wine arrangement). For a special experience, you have come to the right place, though. The location is great. The open floor plan with kitchen for everyone to see is just stunning. From entering until we left this establishment, the staff ensured optimal hospitality. The passion for the profession was everywhere, and the team makes you feel very welcome. The warmth that is spread feels great. All the staff deserve a star for their relaxed, friendly and passionate approach. Still, the feeling, 'did I really eat that special' remains. Most dishes were very cleverly put together, looked fantastic, pure craftsmanship. I didn't particularly like all the 9 courses. I liked some, but no more than that. The drinks the same. And I get it. You can't make everybody happy, but still for the price you pay I do wonder. Was the evening extremely special? Yes, it was. Did we have a great night? Yes. We enjoyed the evening very much. I had great company as always. Will we do this again here? No, not for me and the price/food. Still, I believe that many find it worth it. Onze referentie voor een bezoek aan 2/3 sterren restaurants is een onvergetelijk diner in het inmiddels gesloten restaurant van Margot Janse in Franschhoek (ZA) in 2010: 8 x een 10 voor presentatie, exploderende smaken en geweldige begeleidende wijnen. De Nieuwe Winkel is hooguit een 7. Uiteindelijk - of het vlees, vis, vegan of botanisch is - gaat het om de smaken en daar schiet de Nieuwe Winkel tekort. De meeste gerechten zien er prachtig uit, maar de smaken blijven daarbij achter: geen enkel wow-gerecht. Over het algemeen is de bediening professioneel en prettig informeel. Bij de start ging het even fout. Wij vroegen naar de mogelijkheid van een wijn arrangement met halve glazen en kregen als antwoord dat ze standaard al weinig in de glazen deden (???). Later kregen we iemand anders aan tafel en toen bleek dat dat wel kon (op de rekening stond een "slokjes" arrangement voor 50 euro). Wat ook beter had gekund is een uitleg op de menukaart of door de bediening, dat er bij iedere gang voor de drank-begeleiding gekozen kon worden tussen wijn, bier, infusies en botanische dranken. Het is ook psychologisch niet handig om een all-in drank-arrangement aan te bieden en dan bij het eerste drankje te vermelden dat dat voor de eerste 2 gangen is. Er moet wel wat aan de akoestiek worden gedaan, want de uitleg van de bediening was vaak slecht te verstaan. Over het eten een paar specifieke opmerkingen: Er waren 3 amuses met tempeh, erg lekker. Bij het voortreffelijke brood wordt een buitengewoon lekkere niet-boter geserveerd. Het eerste gerecht was een rol op basis van de mahonieboom met een dipsaus, die met de hand moest worden gegeten. De rol was een beetje slap en dus werd het een beetje een knoeiboel. Daarna kwam er een kunstig bouwwerk van alleen puntradijs in een bouillon, dat bij de eerste hapjes lekker was, maar daarna gewoon saai. De andere gerechten waren ok, maar brachten geen geweldige smaakervaring. Op de borden waren wel heel weinig als groenten te herkennen ingrediënten te vinden. Soms wordt er geprobeerd een "vervanger" te maken van iets uit de niet-botanische eetwereld. Een voorbeeld is het kaasgerecht, dat je extra kunt bestellen voor 18 euro. Dan krijg je een puntje botanische witschimmelkaas (ter grootte van zo'n driehoekje smeerkaas) met een klein hoopje druivencompote. De basis voor deze botanische kaas zijn amandelen. Het is technologisch ongetwijfeld een hoogstandje, maar een goedkope industriële witschimmelkaas uit de supermarkt heeft meer smaak. Dus waarom zou je dit doen. Ik had liever in plaats daarvan.een origineel botanisch gerecht gehad. Voor een van de andere gerechten was een botanische witschimmelkaas-korst ontwikkeld, die nauwelijks iets bijdroeg. Voor de stroopwafel geldt hetzelfde. Knap gemaakt, maar minder lekker dan het origineel. Dus waarom ? Er is ook niet-chocolade van kastanjes. Dat is op zich een prima dessert. Je roept echter de vergelijking met chocolade op en daar lijkt het niet op. Wij vroegen aan het eind een espresso, maar ze doen alleen aan slow coffee en die zag er uit als heel slappe thee en smaakte naar niks. Als argument werd aangevoerd dat espressobonen altijd hard gebrand worden en dan zo'n bittere smaak opleveren. Dat is natuurlijk onzin want je kunt met de espressomethode ook een prima zachte zoete afterdinner espresso maken met frisse en fruitige aroma’s met bonen met een light/medium roast. Al met al een interessante eetavond, maar te veel laboratorium-eten en te weinig groenten.

Hele gave en unieke ervaring gehad bij de Nieuwe Winkel. We kregen in totaal meer dan 15 kleine gerechtjes die allemaal plantaardig waren. Veel ingrediënten hadden we nog nooit eerder gehad of wisten we niet eens dat het eetbaar was. De bediening was zeer vriendelijk en maakte de sfeer compleet. Ik zal eerlijk zijn dat we het ene gerecht lekkerder vonden dan het andere gerecht, maar het was vooral leuk om bij elk gerecht echt stil te staan en samen te bespreken van wat proef je nu echt, wat springt er uit en waar lijkt het op? De gerechten zagen er stuk voor stuk heel mooi en verzorgd uit en ook de niet alcohol drankjes waren een feest om te proeven en ontdekken. Wel jammer is dat er geen gratis water beschikbaar was, €6.50 voor een kleine karaf water, en de drankjes zonder alcohol kon je vooraf niet op de dranken kaart zien dus wist je ook geen prijs (€9.50 per glas). Ook is het niet mogelijk om een cadeaubon oid te kopen om dit als uitje aan iemand te geven. Naast het feit dat het heel lastig is om te reserveren, maar dat ligt waarschijnlijk vooral aan vraag en aanbod, er waren ongeveer 30 plekken in de zaal waar wij zaten.

Los daarvan is het fijn als je eerlijke feedback geeft als hierom wordt gevraagd, dat je je gezien en gehoord voelt als gast. Ook dit bleek kennelijk niet mogelijk. Met verschillende ervaringen bij diverse sterrenzaken, hadden we hier toch iets anders verwacht. Het eten is niet zo bijzonder, de bediening adequaat maar te joviaal en de akoestiek slecht waardoor je de uitleg van de kok en je gezelschap nauwelijks verstaat. Kortom, geen aanrader.

Geweldige ervaring, top avond! Allereerst moet ik vermelden dat ik niet vegan ben maar langzamerhand me wel besef dat we met z'n allen drastisch ons eetgedrag moeten gaan veranderen. Dat geldt zeker voor vlees maar vooral over het algemeen dat we minder moeten consumeren, een goed voorbeeld is te beleven in dit geweldige 2 sterren + 1 groene ster restaurant dat niet voor niets als beste groente restaurant ter wereld is verkozen! Een heerlijke verwennerij in dit restaurant, een avond van diverse zelf gecreëerde kleuren, smaken en geuren van lokale groentes, bloemen en andere lekkernijen.Ben je opzoek naar fietsende engeltjes over je tong moet je hier zijn, beter kan het niet. Personeel is erg aardig, gastvrij en vaardig. Verder zeg ik niets over de opgediende kunstwerkjes want beleef zelf de verassingen die opgediend worden. Ik geef 5 sterren omdat er niet meer te vergeven zijn, ga het beleven!

Gister avond hier gegeten: wat een ervaring. Bij binnenkomst werden we begroet en voorgesteld aan een aantal van de personeelsleden (bediening/chef-kok). Hierbij zeiden zij ook de voornaam, dit maakte het gelijk persoonlijk. De manier van bedienen was simpel en uniek: geen moeilijke termen maar gewoon waar het op staat. Dat in vergelijking tot de gerechten: wat een smaakexplosies en unieke combinaties. En dat veganistisch, dat maakt het heel bijzonder. Als je extra dingen wilde weten over het gerecht wist het personeel je hier overigens genoeg over te vertellen. We hadden de all in versie waarbij ook de dranken zaten. Normaliter krijg je een wijn, maar hier werden bij de gerechten ook bieren en alcoholvrije versnaperingen gematcht: erg leuk en lekker. Bij sommige gerechten had je de keuze (bier/wijn/alcoholvrij) zoals bij het extra te kiezen kaas menu. De "kaas" smaakte echt naar brie, echter waren de extra elementen die erbij zaten overheersend waardoor de kaas niet helemaal goed tot z'n recht kwam. De koffie na de tijd was wat aan de slappe kant, maar wel een leuk concept. Personeel was erg aardig, oplettend in alle aspecten en vroeg ook wat persoonlijke dingen, waardoor je je goed op je gemak voelt. Al met al een unieke en verassende ervaring!

Hoge verwachtingen van dit restaurant. Samen met vriendin en vrienden gegeten en gedronken. Leuke en losse bediening. De 'Haka'-achtige yel uit de open keuken was grappig en dient ook echt een doel. We hadden het 9 gangen menu gekozen. Het eten is erg lekker vooral als je weet dat dit volledig groen is. De presentatie van de gerechten is subliem. Uitleg van gerechten kregen we soms van een kok, wat een persoonlijk tintje geeft aan het gerecht. Mocht je de kans krijgen, dan moet je hier zeker een keer gaan eten.

Tja, wat zet je nog in een review als het net tot beste (vega) restaurant ter wereld is verkozen.... zeker niet goedkoop, maar dit moet je een keer gedaan hebben. Ook voor de traditioneel vleeseters is dit een openbaring.. dus even sparen en dan snel proberen te boeken (dat kon nog wel eens lastig zijn)... fenomenaal!

Verrassend wat ze met alleen plant-based eten kunnen doen! Erg lekker eten. Met het 9-gangen menu heb je ook veel verschillende gerechten. Met het drank menu erbij krijg je bij elke gang een bijpassend drankje bij het eten.

My very first Michelin Restaurant experience. More to that, the restaurant is fully plant-based (Vegan) and also has non-alcoholic botanical drink pairings. So thank you so much Restaurant De Nieuwe Winkel 🫶🏻 I can’t describe this heartwarming experience in words, amiable staff and gourmet chefs, with entertainment of their culinary arts 👨‍🍳 And all the dishes were mind-blowing with quite a sustainable elements.

Lovely restaurant, the high tea was fantastic! There was a good balance between sweet and savory, we especially loved the mustard soup and the cherry cheesecake! The decorations create a cosy atmosphere, and the staff were very welcoming and friendly 😊 Would highly recommend it to everyone!
