This was our second time dining with Gilbert and his team. I think everyone should eat at Studio once for this experience! We received a warm welcome and were so impressed with the menu that we didn't have to worry about choosing. The menu was available online beforehand. (Although it was much more delicious than we anticipated, as each dish combined so many different flavors.) You can still choose from 6, 7, or 8 courses. (In reality, there were 5 more courses for the starter and dessert.) All the dishes were small and nicely spaced out, with the right amount of time between them. The dishes themselves were true taste experiences. High-quality ingredients were carefully selected, with the perfect texture, flavor, and quantity. Different flavors like sweet, sour, salty, etc. were perfectly combined, and you were searching for the different flavors with every bite. The staff also described each dish in detail beforehand. You could hear the passion in their stories, and they told them so engagingly that you could almost taste it 😉. Extensive wine selection, with high-quality selections. The staff knew exactly what was special about each dish and where they came from. Open kitchen, beautiful decor, and the tableware is unique and handmade. It perfectly matched the atmosphere. There was a great atmosphere among the staff. They were well-attuned and had a good understanding of each other. A close-knit team that elevated the atmosphere. Although this restaurant is on the higher end of the price scale, it's more than worth it! Closed during school holidays and weekends. And make sure you book well in advance or get on the waiting list 😉! We will definitely be back!

From the very first course, it was clear: The cooking here is done with passion, creativity, and the highest standards. The ambience is calm, stylish, and at the same time pleasantly relaxed. Particularly lovely: the open kitchen, where you can watch the chefs at work – every detail is perfect. A glass of champagne to start, followed by a matching wine for each course – perfectly matched and a dream in terms of taste. The presentation of the dishes was artistic without being over the top. Each plate was a small work of art. Taste: magnificent. Great combinations, subtle nuances, perfect balance. You can tell that real passion is poured into the dishes. A restaurant that begs for a repeat – and it certainly will. 👌

They have a particularly long dinner waiting list on Friday evenings. It's still worth it for the flavors, presentation, and attentive service.

A fantastic Michelin-star experience! The food was simply sublime, from start to finish. A small, personal, and informal setting. The staff was truly fantastic; friendly, knowledgeable, and always up for a laugh. Everyone, including the chef, comes to your table at least once. In short: highly recommended!

We had a wonderful evening with our children. Our youngest daughter, only 12, doesn't like everything, so they adapted her menu so she could enjoy every course. Top chef and team.

A smaller restaurant – seating 25 people in total – with a sleek interior, yet relaxing and inviting thanks to the natural materials: plenty of wood, a brick wall, and attractive table settings. The eye-catcher is, of course, the open kitchen, which is simply part of the space where you can watch Chef Gilbert and his team at work. The service is friendly and informal, and the chefs themselves bring the dishes. As an aperitif, we choose a classic Grand Cru Champagne from Pierre Arnould. Clearly a house brand here, as this house also features several times during the wine tasting. Four appetizers follow, some hot, some cold, culminating in a delicious oyster. Then comes the actual menu: you have a choice of five to eight courses; we opted for the latter. We start with two fish dishes: hamachi and tuna. In both dishes, the main ingredient in its pure form takes center stage, complemented by primarily oriental flavors like maitake, lime, and sesame. The duck liver – not normally one of my favorite dishes – paired with the tuna also doesn't disappoint. We pause for the chef's signature dish, Pommes Szymkowiak: mashed potato with mackerel, accompanied by a delicious jus and a dollop of caviar. If you choose the matching wines, you can choose from a few options, including vodka – a nice touch. Then the menu alternates between fish and meat. First with turbot, again with Eastern influences and another delicious sauce; followed by my favorite of the afternoon, the Angus short rib. We conclude the starters with pike-perch and a variety of mushrooms. For me, it was the least impressive dish, mainly due to its spongy texture, but that's a personal preference. The roe deer, the main course, thankfully makes up for it: another phenomenal sauce, perfectly cooked, and lovely side dishes like the tomato compote. I choose cheese for dessert; it's pre-selected. Something for everyone, and especially local cheeses from both Belgium and the Netherlands. Luckily, my companions also let me try the regular dessert: macadamia ice cream with peanuts and another Asian sauce. A delicious coffee and chocolate crunch completes the experience. If you still have room, there are some mignardises to go with the coffee, of which the madeleine is definitely worth a try. Another quick shout-out to the paired wines: each one a fantastic pairing with plenty of variety. German Mosel wine, Italian Grillo, but also South African, French, and Portuguese wines are featured. Clearly recommended and more than worthy of its star rating. Definitely worth a visit!

The Studio identity is palpable in every fiber. And the Studio team is genuine, not one for "plastic" table gimmicks and standard table talk. The close-knit team exudes friendship, and you sense that as a guest. And yes, then you end up not just a satisfied guest, but a satisfied and, even more importantly, a loyal guest. In short, you even become friends of the Studio house. So yes, we had a wonderfully fun and delicious evening in every respect. The one from August 18th. An exceptional experience from start to finish. The food was simply outstanding. Each dish is executed with precision, balance and evident respect for quality ingredients. Flavors were rich yet refined, with just the right amount of complexity to elevate the meal without overwhelming the palate. From the amuse-bouche to the final course, everything was impeccable. The service matched the caliber of the cuisine. Attentive without being intrusive, the staff demonstrated genuine professionalism that made the experience all the more enjoyable. Timing was perfect, wine and dish explanations were thoughtful and every request was handled with kindness and efficiency. We strongly recommend Studio, in Maastricht. Certainly the best experience we've had in the city and among the very best we've ever had.

What a treat our visit to STUDIO was. Enjoyed from start to finish. The taste experience with every dish was SUBLIME! A feast for your taste buds. Supported by wonderful biodynamic wines. I have celiac disease and therefore don't eat gluten. In my experience, the rules are often stripped down, the gluten elements are removed. Here at Studio, the dish was slightly adapted, but certainly not stripped down. It was a true feast! We highly recommend it, and we would love to come back again.

A fantastic experience! Definitely worth a Michelin star. (Just one, perhaps?) Everything was perfect. Every course was a taste explosion. The Gilbert team is a well-oiled machine. What we particularly appreciated was that the chefs served each course themselves and passionately explained the ingredients and preparation methods. Each course was paired with a wine, which was also passionately discussed.

This was our first time fine dining and it exceeded all expectations. Besides discovering delicious new flavours, the atmosphere is very personal and the presentation, hospitality and calmness and coordination in the kitchen are great to see (we always thought that fine dining kitchens were like Gordon Ramsay's). A real recommendation, your taste buds won't know what hit them, in a good way!

We went to Studio for dinner on Friday 13th June for my husband's 40th birthday. Although Friday the 13th is considered an unlucky day, it was our lucky day! The Studio staff really spoiled us with their great service and amazing dishes. The team was perfectly attuned to each other, it was just beautiful to watch. Everyone who worked there stood at our table for a while, which made the whole experience very personal. Nice! Because it is not 1 person who serves you and explains everything, everyone tells their passion at the table. The dishes were all great for the eye, but even more great for the taste buds. We have been to many luxury restaurants, but we had never tasted these flavors together. It may sound exaggerated; but sometimes tears of pleasure come to your eyes at the next bite of such a fantastic dish. I am pregnant, and they recently also have a matching 0.0% arrangement. Not just anything, but delicious special juices with ingredients that make you think: "how did you come up with that?" My husband had the matching wine arrangement. Both were also amazing. What else can I say.. You just have to go there to experience everything. And I haven't even mentioned the beauty and ambiance. The toilets that are neatly cleaned for cleanliness after almost every visit. A deodorant, a container with tampons for the ladies. Everything has been thought of! A big 10!!!! P.s. We took a photo of each course (to talk about it together and with family/friends) but deliberately did not post it here because we believe that you have to experience everything yourself! Also fun fact: not everything is on the menu, and there are also enough surprises. We really thought that was great!!

We were looking for a special restaurant in South Limburg and ended up at Studio in Maastricht. We opted for an 8-course dinner that lasted from 7:00 PM to 11:00 PM, and it was a true experience. The atmosphere in the restaurant is intimate and relaxed, without excessive etiquette. The staff pays a lot of attention to the guests and provides an extensive explanation of the dish and the accompanying wines with each course. Even when you have questions, you notice that the staff really knows what they are talking about. The wine pairings were definitely a highlight; we started with a delicious champagne as an aperitif and were surprised by wines that we did not know existed. What was especially striking was how perfectly the wines matched the dishes, which made each course something special. The dishes themselves were all special and beautifully balanced in terms of taste. The complexity and challenge in the taste profiles ensured that we were always amazed by the tasty combinations. Thanks to the great team at Studio for an unforgettable experience! A dinner that will certainly remain in our memories for a long time.

The food was good and the wines were excellent. The decor was also good. The staff was friendly and made very nice contact with us. Only the wines came too quickly, we had not finished one and then the next wine came. Our dinner started at 19:30 we were the last guests, but I really had the feeling that the serving of the dishes had to be in line with the guests who had served earlier. In addition, the pouring was done sparingly. It was definitely worth it

It is not often that we are surprised in a restaurant, but this certainly happened here. The interior is simple and stylish. The tables are far enough apart so that you have enough privacy. More importantly: the food and drinks. I had chosen a wine arrangement and these wines were spot-on. Surprisingly beautiful original choices. And an excellent combination with the dishes. The amuses were also absolutely great. I think I had counted about five. The flavors were perfectly balanced. We had chosen the six-course menu. Each and every dish was excellent. Correct proportions with a wonderful structure in terms of the order of dishes. Add to this the excellent (young) service, who clearly enjoy working in this gem. We look back on an excellent lunch and will definitely go back soon.

Great experience, third time we visited the Studio and every time we see the culinary skills and creativity increasing. A strong team which works wonderfully together. Great wine pairings, although with the quality of the food being served they may want to start thinking of offering in addition a premium wine selection as well to accompany these dishes, they deserve it. Certainly worthwhile a visit, hard to beat this experience in Maastricht.

Vanaf de hapjes bij de aperitief tot en met het dessert : Alles was overheerlijk. Wat me vooral ook beviel is de originele combinatie van de diverse ingrediënten bij ieder gerecht. Zeer gemoedelijke en vriendelijke bediening. Voor een sterrenrestaurant ook helemaal niet prijzig (zowel wat het menu alsook de wijnkaart betreft). Overtreft wat mij betreft heel wat tweesterren restaurants die we hebben bezocht!

Met 4 personen gedineerd bij Studio en wat een heerlijke avond is dat geweest. Ondanks het feit dat men een terechte ster heeft verdiend heerst er nog altijd een gezellige en informele / ongedwongen sfeer. Het eten is van de buitencategorie begeleid met lekkere passende wijnen.Kortom een geweldige culinaire avond die zeker een vervolg gaat krijgen.

For our 30th anniversary we travelled from North Holland to the south. In addition to an overnight stay in the super fun Boutique hotel Cousins ​​we had dinner at Studio for the (surprise) dinner. It could not have been a better way to spend the evening, a warm welcome, a nice atmosphere and a top brigade that spoiled us with a palette of special flavours. The dishes were of course accompanied by matching wines that complemented them perfectly. Delicious on their own but even better in combination. All in all an unforgettable evening and we can do nothing but warmly recommend Studio to anyone looking for something special in Maastricht. Compliments!

Wat zijn wij enthousiast over Studio. De sfeer, de passie, het eten en de wijnen. Voor ons was het 10/10. Op vrijdagavond hier het volledige 8 gangen menu gegeten. We bezochten studio voor de derde keer. Dit keer met onze volwassen kinderen. En we blijven enthousiast over de prachtige smaakcombinaties, met gebruik van diverse technieken, kruiden en specerijen. Ook onze vegetariër aan tafel kreeg de volle aandacht met een geheel eigen menu. De bediening is zeer attent en professioneel. De keuken komt zelf aan tafel met de gerechten en de uitleg. Dit keer kozen we niet voor het wijnarrangement, maar voor enkele flessen. Wij vonden dat ook wel weer een andere beleving. Kortom echt een avond genieten in dit kleine maar fijn Maastrichtse restaurant.

We recently dined at Restaurant Studio in Maastricht, and while the overall experience was pleasant, it ultimately fell short of expectations, earning just four stars from us. The quality of the food was commendable, and the service was open and friendly, creating a welcoming atmosphere. However, the experience lacked that little extra touch that elevates a meal from good to memorable. The dishes missed the element of surprise, both in taste and presentation, leaving us wanting more creativity and flair. We were seated with a view of the open kitchen, which, unfortunately, was not ideal. It was disconcerting to witness some kitchen practices that raised concerns about hygiene, such as staff tasting food directly from the same spoon they used for plating and licking their fingers before handling our dishes. This lack of attention to detail detracted from our overall enjoyment. While we appreciated the evening and the effort put into the meal, we have certainly had much better dining experiences in Maastricht. I hope Restaurant Studio can refine its approach and focus on the finer details to truly impress its guests in the future.

Yesterday we really enjoyed a dinner at Studio Maastricht restaurant. Everything was perfect again. The chef (Gilbert von Berg) who has a great love for beautiful food and takes great care of the dishes with great passion when serving them. . The ladies at the counter are very friendly and keep a close eye on everything. It is a well-oiled team. I have been there at least 10 times now and always went home super satisfied afterwards. Fantastic restaurant with the loveliest staff. Most delicious food!!! A must stop in Maastricht for anyone who would like to have an unforgettable experience!

"French-inspired" 5-8 course open kitchen concept. The venison and soup courses were good. But the rest wasn't very memorable, as it was mostly overwhelmed in butter and vinegar. The food is highly overrated for the price you pay. 170/person (including 170 for my child who ate maybe half the courses), they didnt have many gluten or wheat free options (they gave me some cheap GF bread from Albert Heijn)...and no organic wines? Seriously? This place seems amateurish. Not only do I prefer organic due to environmental and health reasons, but I'm sensitive to sulfites (some people are allergic to them). And when I told them their wine had too many sulfites, they just kept offering me non-organic wines... There is also a 50 euro reservation fee which is non-refundable, even if you show up, which seems like extortion to me. Be prepared to spend half a month's rent for one lunch of slightly better than average food. There are places in Maastricht with the same quality food (or better), more integrity, more taste, and 1/5 the price. I've also been to real French places with the same concept in Lyon, France (the gastronomic capital of France), and it was far more satisfying, flavorful, they had organic and biodynamic wines (true to French vineyard standards), catered easily to gluten-free, wheat-free, and reduced sulphite preferences and allergies, and for less than half the price. As for this establishment, unfortunately I cannot recommend it, because it felt more like a tourist trap/scam.

Like many others, I could start with photos of the dishes. But that doesn't do justice to the experience of an evening at Studio. You can tell from everything in the studio that the team enjoys their work and especially with each other. Never realized that humor can be an ingredient for a good dish, because both the normal menu and the vegetarian variant were really of very well-balanced quality. The matching wines, as well as the non-alcoholic juices and teas were also a good match. We enjoyed relaxing and felt valued as a customer, and have listed Studio in our top 3! See you soon!

A lucky last-minute opportunity to dine at Restaurant Studio. The dishes are prepared with high-quality ingredients and great craftsmanship. However, the flavors and dishes were not particularly surprising, and the main dish and dessert were a bit disappointing. The service was correct but could have been more welcoming.

Delicious dishes based on 8 courses. 7 of 8 were very well received. 1 less, but that is our own taste and does not detract from the entire experience. The menu contains surprising flavor combinations and beautiful quality products with an accent on Asian. A point of attention is the wine that is served with the dishes. The wines did not grab us or surprise us. That needs some attention.

Once again a great meal, nice relaxed warm hospitality, creative interpretation of dishes where something has been done with almost every ingredient. It was another party, we enjoyed it immensely!

Fantastic. Each dish has layers and layers of flavor that require a certain concentration to fully appreciate. The wine pairings are chosen with great care, and although some other reviews mention their glasses weren't full enough, I switched to half glasses halfway through because I couldn't keep up (which in my opinion is a good thing). One thing I appreciated was that the wines were relatively 'modest', as in they weren't expensive high-end vintages, but just paired superbly with the dishes. Probably some of the best value you'll get at a restaurant of this caliber. Staff is super knowledgeable, professional, and incredibly friendly. Everyone that works there is clearly super passionate about their job and the restaurant cares about the wellbeing of their staff (evident from their policies, see website) which is reflected in every plate. Thank you for the amazing dinner and I cannot wait to visit again.

What a great evening! The evening started with a very nice welcome by friendly and spontaneous staff. We enjoyed the delicious dishes, wines and pleasant relaxed atmosphere. There is a lot of attention to detail and personal attention. Highly recommended if you are looking for a wonderful evening with fantastic food in Maastricht. We will definitely come back!

Fantastic food and a very nice atmosphere in the restaurant. Time flew by, which was a good sign for the atmosphere. Pairing wines were fine, but could have been a bit more exciting and complex in my opinion. But this did not detract from the food. Service could be just a little bit better; For example, a young lady asked if we wanted more water while she had just poured it, or did she want to take away plates while one person was still eating. In my opinion this could have been better. Rest of the staff was top notch. Definitely highly recommended, would absolutely come back.

We had a 6 course lunch here and it was great! Even though the restaurant was full, we were still able to get a seat at the bar on the day itself, which was well arranged by the nice people at Studio. The service is of a high level, but not too formal. We really liked that. The restaurant itself is beautifully designed and its size makes it cozy and cozy, without you sitting too close to other tables. The dishes were all very tasty, had distinct flavors and were beautifully presented. The matching wines are also well chosen. All in all a great lunch. We recommend everyone to visit Studio!

Everything is just right here: from the breathtakingly beautiful, handmade tableware to the most delicious dishes that are put on the table with so much love and precision. The atmosphere is warm and personal, partly thanks to the fantastic team that works here. Everyone is friendly, helpful and exudes expertise. You can feel their passion for the profession in everything, from the dishes to the explanations at the table. We opted for the 8-course menu, and what a taste explosion we experienced! Each course was a party in itself, with beautiful combinations and an unprecedented balance of flavors. Dinner was not just a meal, but a true culinary journey full of surprises. Just when we thought it couldn't get any better, after coffee and tea we were surprised with a selection of delicious friandises – a perfect end to this magical evening. Studio is one of, if not the best restaurant in Maastricht. I visited for the first time early last year, and I’m still thinking about how amazing it was. I was truly blown away by everything—the food, from the quality to the flavors and presentation; the staff, who were kind and knowledgeable; and the atmosphere, which was clean, upscale, and cozy. I’m looking forward to hopefully returning soon.
