Wow, we had a truly amazing meal last week! Distinctive flavors, yet perfectly balanced. The trio of amuse-bouches was surprising, fresh, green, and layered. Of the 5 courses, the artichoke preparation stood out the most. So meaty and full of umami. We found the dessert a bit tame, in the fresh spectrum. I do prefer something a bit more opulent. The cheese course catered to that well, something with a creamy blue cheese dip. I can't remember the details, but it was amazing! The wines paired very well, even though we aren't huge natural wine fans. Everything clicked here. And the warm, professional service too, by the way. What a treat.

The nitpicking critic of the Amsterdam newspaper het Parool rated this with a 10. This has been one of our fav restaurant over a number of years and one of the most interesting places to eat and drink wine. There's a story behind every ingredient and the staff love sharing it. On our last visit in mid June we found they finally decided to get an espresso machine, and everyting else was also flawless, so we agree: this deserves the highest score.

To be honest, this evening was a disappointment. We had high expectations based on previous reviews, but this experience was not as hoped. The service leaves much to be desired. We really felt like the explanation of the wines was just making things up. There was no answer to every question we asked. How are the wines aged in the cave, in the bottle? The wait staff could not tell us. Nor did they know why this was the case. Even when we asked about the dishes, there was no clear answer. We also received crockery with chips missing twice. We have been to more upscale restaurants before, but this does not compare. The first course and the dessert were very tasty. The other dishes were fine. But overall, this unfortunately did not outweigh the ambiance and service of the restaurant.

Beautifully presented and tasty food in an open an centrally located restaurant, we were seated next to the open kitchen which was fun. The service also tried their best, but because we were in the first shift (6-8pm) we felt rushed from the get-go which took away from the experience of fine dining - if you can try secure a spot after 8

The food was more than delicious. Excellent service. The delights you can create with vegetables are incredible. A number of natural wines by the glass. I found them a bit acidic at times.

The service was fantastic. The waitress provided great recommendations on the food and pairing drinks. The food was really good especially the langoustine and white asparagus. First time eating tulips too.

The food was good, but extremely repetitive. Not really a memorable “Michelin” star experience. When they say veggie forward expect the same style of dish 4 times, with different styles of green sauce and butter foam. Bread was the only filling dish (we ordered 4 rounds for reference) and they don’t even provide a bread plate for each customer- and the table has to share one butter knife. Service was horrendous, sat idle after we finished our wine for 45 minutes, had to ask for our own bill, and remind the staff about the last dessert. 3 hours for one bottle of wine left us thirsty and bored. They did their best to apologize and gave us the wine for free, which we were grateful, but as avid foodies who were excited to come, were for sure left wanting. We also weren’t even offered a menu and had to pretty much ask what drinks they had, had to ask for prices, and after finally reluctantly being given a menu- we were able to see the offerings. I won’t be back as there are better ways to spend 100€ on butter and veggies.

Lovely vibe there. Diverse crowd, pleasant and professional staff. The food (we had the 3-course menu) is very special!! Completely vegetarian (and we aren't), but super for us too!! The wines were also fine, even though they were all natural wines. They tasted good and didn't have that 'nasty' smell....

I can still remember dining at Joel Robuchon in Paris about 30 years ago. The only thing I recall is the mashed potatoes. Today at Choux, an otherworldly dessert of cheese, pain perdu, and truffle. In the same category. A goosebumps moment, alongside everything else that approached perfection.

Exceptional food with many flavors and lots of vegetables. Little bite, lots of foam. No acoustic measures in the dining area: very noisy. Too much noise for the prices. The receipt is very unclear. The total amount spent is stated in large letters, but the amount paid in advance (€90) still needs to be deducted from that. You need a magnifying glass to find the amount to be paid. So pay attention when settling the bill.

Everything that tastes good isn't good for a person. You can tell that everything Choux offers its guests is good for people. Healthy, green, light, but in our opinion, it occasionally just lacks a thick butter sauce. The amuse-bouches were uninteresting and lacked flavor, putting you at a disadvantage from the start. The bread with butter (which is something we sometimes go out to eat for) was actually just not good. The entire restaurant experience could go up a whole star by kicking off with a finger-licking amuse-bouche and tasty bread with butter (and salt!). Only natural wines and therefore acidity (which actually paired well with the dishes), but even that just isn't entirely our preference. Lovely staff, they all do their best, but for 40 euros less per person, we know several top spots in Amsterdam without a star, but with a thick sauce!

Had a delicious meal, friendly staff. The wine selection isn't for everyone. Good non-alcoholic alternatives. At the long table near the kitchen, it is difficult to understand each other. Having a look into the kitchen is also nice.

Had a wonderful meal. All courses were well-seasoned. You can't eat any more, but you don't feel full. Highly recommended. Order the scallops.

What a lovely surprise from my husband... St. Valentine's dinner at Choux! Exciting, creative menu and a great selection of natural wines that made the whole evening feel a bit special. The vibe is cool and relaxed, the kind of place where you happily linger over every course. Only small hiccup: the bread service wasn’t very exciting for a Michelin-starred restaurant… and they even forgot it at first 🙄 But overall a really great experience.... inventive food, great wines, and a very fun evening.

The dishes are delicious. When choosing a wine pairing, it is not mentioned that these are exclusively natural wines. Unfortunately. Particularly high acidity and, as far as I am concerned... not suitable for the dishes. So be careful!!

Fantastic! We were quite spoiled when it came to food, but at Choux we were truly blown away. What creativity on our plates and what flavors! Every dish was so delicious we practically licked our plates clean. And the service truly made it a treat. We had a fantastic evening and will definitely be back. Thanks again!

What's left to say after so many rave reviews? The food is top-notch and beautiful to look at. The staff is not only friendly but also playful and humorous. Personally, I didn't find the langoustine extra course a success, but my partner certainly did. Choux is exemplary in terms of value for money. You won't find such a good meal at this level for this price anywhere else. Downsides? It can get a bit noisy, and there's no cocktail menu. But that's just complaining for the sake of complaining on my part.

Mara Grim was right...what a delicious meal and matching wines. We had the early/theater 3-course menu with an extra Lagostine dish. Fantastic! We've rarely eaten so well. The service was also excellent. Not cheap, but worth every euro!

Very good taste, but when you're done you'll still be hungry

Top-notch dishes and delicious wines, but mediocre service. We were here on Valentine's Day. The food was fantastic and clearly prepared with great care and skill. Absolute highlights were the seitan Wellington with black pudding spices and pheasant sauce, surprising and perfectly balanced, as were the two red wines that were part of the wine pairing and, of course, perfectly complemented the dishes. Unfortunately, the service couldn't keep up with the high level of the kitchen. The service felt rushed. I understand there was time pressure, but that could have been done in a more relaxed manner. Some staff members gave the impression they weren't fully trained yet. This made the service as a whole somewhat unprofessional. I understand that this restaurant deliberately chooses an informal style with relatively lower prices, which makes good food accessible to a wider audience. Such a concept is excellent as long as the service is consistent, coordinated, and professional. Unfortunately, these three elements were lacking here.

We completely indulged in the 5-course menu at Choux. We received a pleasant welcome at 6 p.m., where we were able to choose a table on the long side. A host, a tall, young, and enthusiastic man with glasses, appeared before us fairly quickly. He checked in with us to see if we had any allergies, etc. We opted for the non-alcoholic pairing, which consisted of 5 (or 6?) rounds of homemade juices. Homemade and delicious. We started with an amuse-bouche and also opted for an extra langoustine appetizer (39 euros for 2 fine dining portions), which was delicious. It would be too much to list all the ingredients per dish, but the flavor, the texture—almost everything—is ingeniously put together. My wife did notice that the sauces started to resemble each other after a while, but I didn't mind. We did finish with an alcoholic drink: a delicious Yoigokochi Yuzu sake. The dessert tastes very refreshing and is a nice change from the more robust flavors. All in all, a very pleasant experience, and it's best to try everything and forget about the receipt for a while (-; The menu changes every eight weeks, and the wait time is about two months. However, they recommend adding yourself to the waiting list daily, as there are frequent no-shows. Next time (next year, haha), we'll sit at the high tables by the bar; it's also nice and cozy there.

I'd been wanting to go here for ages and was lucky enough to get a spot on the waiting list. It was everything I'd hoped for! Great, friendly service, surprisingly beautiful dishes, and a pairing of both very interesting wines and non-alcoholic juices. Plus, the atmosphere is fantastic; it's truly upscale, but not stuffy. A fantastic experience!

Top quality! Must try for the experience

Without a doubt, one of the top restaurants in Amsterdam with a down-to-earth atmosphere. And an enchanting menu. We found the wine list a bit lacking. A truly 10 from Mara.

Two days after the dinner I still am in doubt about our visit to the most wanted/ most popular restaurant in town, due to their recently earned Michelin star and the 10-rating in Parool. Choux serves 5-6 courses with small experimental tasting plates/ dishes. The consequence is that you quite often don't have a clue what you are eating (despite some explanation upfront by a crew member, which can barely be heard due to the bad acoustics). There just a few dishes made us say "WOW", and it was hindsight the post-dessert (some kind of white foam with some kind crumble) which we enjoyed most. Most original were the mushroom which had a similar texture as meat, and the langoustine. Very friendly crew, and a no nonsense sober atmosphere which is part of the package. 6 courses + 1 aperitif + 1 shared bottle of wine was EUR 140 pp, which is market rate for Amsterdam.

What an amazing experience. The staff were very kind, fast and attentive. The food was great and also very pleasing to look at. Highly recommend going here. The atmosphere is very chill too and we sat on the higher tables in the corner which felt very intimate :)

Five delicious courses (and appetizers) in a cozy and relaxed setting. Friendly and knowledgeable service. The wine wasn't quite as good as the food, but it was a wonderful evening worth repeating.

Great service and a lovely seasonal menu where the flavours of the ingredients shine through. My only wish is that I recorded what the server described cos now 1 week later, I can't remember the finer details as the combinations were really quite surprising!

The most memorable meal that we had in a two week European vacation, and it wasn't particularly close. We loved the creativity and fresh, seasonal ingredients, the wine/beer/juice pairings, and the exceptional service. We have, and will continue to, recommend this to everyone we know. I went to Choux last week with high expectations, and they were even exceeded. Everything was perfect! All the dishes were so surprising, exceptionally tasty, and beautifully presented—what a wonderful evening out! Special compliments to the service; you don't often find them in Amsterdam.

Damn, what refinement! The flavors are so precisely layered. Each one equally subtle, yet with tons of depth! The food was truly amazing. The funky wines aren't my cup of tea; that's a style choice. I did ask the waiter if it couldn't be a bit different, and indicated I was getting tired of them. The question wasn't greeted with enthusiasm, and the next glass was brought to the table with a long face and little explanation. I was disappointed, but they had tried to accommodate my request. Fortunately, the atmosphere improved when I expressed my satisfaction with the wine.

Outstanding food, great wine pairing, and excellent service

Relaxed atmosphere, very knowledgeable staff, delicious and creative food, and impressive natural wine pairings. All with an approachable and friendly vibe. We went to De Kas the night before and Choux won hand over foot. A great visit just outside the typical Amsterdam scene you love and know.

The food was good, but the wines they serve to go with the different dishes had definitely a vinegary taste, in other words, they were terrible. I am from Italy, and it seemed to me that I was drinking the cheapest house wine.

Great restaurant! Nice young energetic team. chefs come to the table to explain the dishes, I always like that. Food is well thought of and versatile. A lot of surprises and very seasonal. On top of that affordable and very tasty. And that combined with a great variety of beautiful natural wines. A great all in all experience!

We arrived with no expectations and left pleasantly surprised. Perhaps one of the best restaurants I've ever eaten at (the quality and aroma of the flavors, in my opinion, are superior to some of the Michelin-starred restaurants I've tried). A vegetable forward experience. Very innovative use of mushrooms and vegetables in a super taste explosion meal. Superb service. Immensely enjoyable if you’re open minded to not eating meat. Unconventional- no menus, very little meat.

From the moment we walked in, we felt welcome. The staff is not only incredibly friendly but also clearly very knowledgeable. Their passion for their craft shines through in both the service and the wine recommendations. The 5-course menu offered a wonderful variety of vegetarian and fish dishes, each with surprising combinations and refined presentation.

Had a business dinner here which was super lovely! I wish the meal could have been a bit faster in pace as we ended up being there for almost 4 hours, but the amazing food made up for it!

We were really looking forward to this meal since we heard good things and had high expectations- and Choux did not disappoint. I even made the mistake of assuming all dishes would be vegetarian (not true) and they accommodated me last minute which was incredible. All the staff we interacted with were excellent! Special shout out to Igor and their customer service- it was above and beyond :) The food was full of flavour, with really creative combinations which are rare to find in plant first cooking. All the dishes were so beautifully presented, and staff took their time explaining them to us which we appreciated. I only have the picture of the first course because we genuinely were just took busy enjoying all the others the moment they arrived!

Simplemente debes saber lo que obtendrás antes de decidirte por este lugar. Mi agente de viajes lo recomendó, y fue un completo fracaso. Si hubieran publicado algún tipo de menú o incluso fotos en su sitio web, tal vez habría tenido tiempo de evitar este desastre. Nos sentamos y pedimos una bebida (no hay barra libre), así que nos ofrecen una ginebra, que no es mi estilo. Luego pido champán, pero el camarero me lo desaconseja y me pide algo que me recomiendan: básicamente, una mala sidra. Vamos a la comida. No llegues esperando obtener proteínas. En los 5 platos solo teníamos unos calamares fríos entre nuestras diversas verduras insípidas. Nos reíamos cuando llegó el momento de pedir el postre sabiendo que solo podía ser un sorbete de bayas exóticas dados sus ingredientes limitados: ¡bingo! Si quieres una pretenciosa obra de arte en bandeja, hazlo. De lo contrario, puede elegir literalmente cualquier otro lugar de la ciudad por menos de 100 dólares por persona.

We hadden een geweldige avond. Het menu is verassend, veelzijdig en super lekker. Veel en veelzijdig gebruik van groentes. Bediening was geweldig, persoonlijk en geïnteresseerd. Echt een topavond.

Last evening in Amsterdam and wanted to go out on a high. Choux did not disappoint. Wonderful food and staff and couldn’t have asked for more honestly. Had the 5 course menu with wine pairing and it was unbelievable. Venison jus out of this world. It is expensive, but truly worth the money.

Is this the best and most fun restaurant in town? In any case in the top 10. Food great, wines surprising. But especially the atmosphere and the service. How chill can you eat fantastically there. In terms of price/value really bizarrely good. The babis 5 courses is still under € 80. That is 3x as good food for 1.5 times the price. Go as soon as possible. Soon they will have a star, the food will remain good, but will the clientele remain so pleasant? Thanks. It was another great evening.

I think it is well known that you can eat more than delicious food at Choux, but everything is right there, the atmosphere, the nice informal service! We had such a wonderful evening there again.. Well done team Choux

Heerlijk gegeten, het ene gerecht nog lekkerder dan het andere. De gerechten zagen er ook prachtig uit. Vriendelijk en deskundig personeel. Leuk ook het non-alcoholische drankarrangement, bij elk gerecht weer een ander lekker bijpassend drankje.

The cafe is fine for a quick coffee, but not very special. Inside it was a bit dark and noisy.

Ugh.. That I have never left a review after all these years. Of all the times (I think at least 6/7 times) I have never left disappointed. Dishes are always perfect, beautifully balanced and always a real work of art in terms of presentation. Service is fast and on point, nothing is missing. Wine list is of unprecedented level with beautiful natural wines. And all this in a relaxed atmosphere. I would give a thousand points if I could.

Ik heb hier vaker gegeten en altijd voortreffelijk. Ik dacht dat het niet beter kon. Nou ik had het mooi mis. Gisteravond, gerecht na gerecht, waren wij verbluft, tot aan het emotionele toe over de bijzondere smaak en textuur combinaties. Het was weer een sublieme ervaring. Ik kijk nu al uit naar het volgende keer.

Great food, disappointing service I had high hopes for this restaurant based on the menu and food reviews — and I have to say, the food did not disappoint. Every dish we tried was flavorful, well-executed, and clearly made with care. The ingredients were fresh, and the plating was beautiful. It’s clear the kitchen team knows what they’re doing. Unfortunately, the service really soured the experience. From the moment we arrived, the staff seemed disinterested and inattentive. We waited far too long to be seated, and even longer to get our drinks. At no point did we feel welcomed or looked after. Simple requests were met with eye-rolls or forgotten entirely, and there was a general lack of professionalism and warmth throughout the evening. It’s a real shame — the food deserves better representation on the floor. With improved service, this place could be something special. But for now, I wouldn’t recommend it unless you’re very patient.

The food was very tasty and surprising, but the wine arrangement was very disappointing. Tasteless slobber and a self-indulgence. We did get an alternative, but that shouldn't be necessary. The portions are small and after 5 courses we still had an empty feeling in our stomachs. When we said something about it laughingly, the answer was 'you can order extra bread, right?' Well, as if we came for a piece of bread. Too bad

We had a great time at Choux! The 5 course meal was very innovative and unlike anything we had experienced before. The highlight, though, was their thoughtful and attentive service. I have slightly complicated dietary restrictions, and they accommodated them with ease and expertise. My partner had the menu as usual and they ensured that I had equally as delicious food that worked for me and my body. Overall, would definitely recommend if you are looking for something on the more expensive side and vegetable forward!

You don't come here to eat bread... Ordered 5 courses, main course consisted of 1 whole asparagus with some on the side. When we said it wasn't very much and we were actually still hungry, she said: you can order bread with it. Huhhh? I don't come here to eat bread, right? The dishes were tasty, but this was/is a letdown.

In awe of the depth and combinations of flavours, plating, textures. Vegetarian dishes are out of control good.

Just had dinner there with friends. Fine dining, the staff was extremely lovely and kind! The food was AMAZING: super fresh ingredients, different consistencies froths, crumbles, stocks, fresh crunchy vegetables, even the bread with butter was super (actually: sourdough bread and cultured whipped butter). Mostly vegetarian with a lot of earthy flavours. There is also a wide selection of drinks made by them and fermented. I was going to forget my dessert: truffle honey, french toast, cream cheese, cheese and another cheese with different ages and consistencies, incredible! (Not really sweet, more soury, different from a dessert we are used to, but amazing). I would recommend this to everyone! For those who are not sure to be "full" after the dinner: don't worry, you will definitely be! We had a 5 course menu+1 additional dish+some drinks, spent around 100€.

I visited Choux 1st time 10 years ago when it was just open. It was nice place but now it has been developed to a completely different level. Very creative dishes and combination of the ingredients.

Still stunned by the news from Jonnie that reached us in the afternoon, we headed to Choux. Carpe diem, we told ourselves, and how beautiful it is to start with a tulip as an appetizer! Upon arrival we were asked to take a seat at a table near the entrance. A drafty place and the rest sat on the benches, which would also seem a lot more comfortable to me as a pregnant woman. A not very hospitable start. As a pregnant woman, I was given a sparkling aperitif that had already been opened the day before and from which the bubble had disappeared. At this level I would expect the sommelier/server to first taste whether it still has enough bubbles before serving it to guests. The green starter with ricotta was so lively that there was still an aphid on it. While mentioning this to the waiter, we asked for extra butter for the bread, and she forgot. Too bad, just after such a small incident you can make amends in a simple way, and she failed to do so. The rest of the dishes (scallop, something with a mushroom and a dish of lettuce were very good!). The piece was asparagus with tempeh and a delicious sauce, the asparagus was quite on the raw side. The cheese dish that my husband had, remeker with pain perdu, truffle and porcini mushrooms, was sublime and a real winner! Dessert was nice and fresh with buttermilk and rhubarb. It would be nice to get a menu with the dishes and ingredients listed, instead of having to order them at the table very quickly. NL and ENG are explained. In my opinion, the small chocolate with the coffee/tea could also have been 2 per person. All in all, I enjoyed it, but with a number of flaws that are not desirable at this level and could easily have been avoided.

Impeccable experience from food to service top 3 best restaurant in Amsterdam

We were thinking about why we would not rate this a 10/10.. couldn’t come up with a single reason. Just go, you won’t regret it.

The food is very nice, different tastes than usually, very creative kitchen. The atmosphere is just to loud you need to scream to each other, for that reason only 4 stars

Yesterday we enjoyed the 5 course menu with 2 extra dishes, the langoustines cru and the crème brulee epoisses This was exceptionally tasty and beautifully constructed in terms of taste and craftsmanship. We also drank a lot from the homemade non-alcoholic range, which was extremely complex and challenging! Nicely chosen!. With a glass of natural wine here and there. The extremely friendly and personal service with a lot of attention and flair made the evening complete. Thank you very much to Team Choux

One of the most amazing experiences.

Very hospitable. Informal atmosphere. Very tasty, creative, star-worthy dishes. In addition to the wine arrangement, there is also a juice arrangement that has been carefully prepared.

Exceptional place with all the serious chops of a michelin restaurant but without the snobby stuffiness. A+. Came here for a celebratory date night on a Tuesday evening and were blown away. From beginning to end the service staff treated us with the kind of self-assured-but-not-arrogant yet friendly service that only comes from lots of training and experience. Though we had several servers tend to our table throughout the 2.5 hours we dined, our primary server (wish we could remember her name) was such a pro. One of those experiences where you felt you in were in the most capable hands, where nothing could possibly go wrong. The food was insanely good. Feels weird to call it simply "food" when each course was more an all encompassing revelatory experience than just, like, eating. We literally closed our eyes during bites. We've eaten asparagus a million times in our lives, for example, but our first course of green asparagus with thinly sliced pickles and "the first strawberries of the season" had us thinking we were trying this alien vegetable with an unreal crisp texture for the first time. Hard to put into words how good this dish was. I'm already forgetting to mention the amuse bouche of broccoli florets with some kind of crispy cereal attached to the buds we were encouraged to eat with our hands - an amazing start. The following courses included a mushroom zabaglione, an incredible scallop sashimi dish, a main course of egg yolk in a purse of something I'm forgetting with chanterelles - all wonderful. We are so glad we opted for the extra course which consisted of french toast layered with whipped cheese in a puddle of truffled syrup, brought out to us by one of the dessert chefs - we thought we were tripping it was so good. Wish we had a pic of the dessert course because it was also exceptional, but we gobbled it up too fast. We weren't drinking alcohol at the time but to our surprise they had that covered too - every single course came with its own zero proof pairing made in house. The last one - their approximation of a red wine, with a base of beet juice - had a complex, savory quality that reminded me of kvass and was utterly delicious and I wish they would share the recipe with me? Only slight critique is the decor, which in our opinion doesn't match the creativity and care of everything else. Incredible place, will definitely be back.

Wow! What a wonderful place. The dishes are all well thought out and very tasty. They are also real works of art. The service is knowledgeable and friendly. The acoustics of the restaurant are also very pleasant, you can hear each other well even when it is completely full. My favorite dishes are the asparagus with strawberries and the slow-cooked scallops.
