Very nice setting, friendly staff and beautifully maintained and tasty paintings for dinner.

What a fantastic experience! From the moment we walked in, everything felt right. The setting immediately created a warm atmosphere, and the table arrangement was very well thought out: plenty of privacy and very cozy. The food was of a high standard, with beautiful combinations of flavors, beautifully presented, and carefully prepared. Each dish was a feast in itself. The staff was fantastic: friendly, attentive, and knowledgeable. We found the option to order individual half-glasses of wine a big plus. This allowed us to fully enjoy the perfectly chosen wines with each dish, without it becoming too much. Truly ideal: fully enjoying ourselves, yet leaving feeling refreshed! In short: we enjoyed a wonderful evening and will definitely be back! Highly recommended for anyone who appreciates quality, ambiance, and hospitality.

There were certainly some tasty dishes, but everything went very quickly, which made it feel a bit rushed. I really didn't like the pear juice as a non-alcoholic alternative. I also found the hassle with the plate of pralines where you have to choose one and it only comes later, strange - much nicer if you just get the whole plate. And if you don't have coffee, you suddenly have to pay €1.60 per praline... then just stay away from those pralines. The portions could also be a bit bigger. And please just provide half liters of water, that's more practical. If I had to give a score out of 10, it would be a 7.

Great experience where the service and kitchen pay a lot of attention to the wishes of the guests! Our various dietary requirements, including vegetarian and vegan, were converted into full-fledged menus with tasty and original dishes for every course. Both the wine pairing and non-alcoholic pairing were very popular.

Food was pretty good here, but beware that they will secretly sell you a wine package. They ask you if you would like a glass of wine and suddenly you are stuck with an extremely expensive wine package without being asked. Unfortunately not worth repeating.

Another delicious meal!! We sat on the elevated platform that rotates slowly so you can see the entire restaurant. Management keeps track of everything and ensures that you lack nothing. I really like the open kitchen, you can see how much passion and concentration the kitchen staff works with. Quality is always constant. We love coming here!

I visited Novo for the first time last year and had an absolutely amazing dining experience. You’re treated like a true VIP from start to finish. The food is impeccable, the atmosphere is both cozy and upscale, and the staff are outstanding. I can’t fault a single thing about this place and am already looking forward to returning this year.

We had another wonderful evening and a very tasty, surprising and varied meal. Unfortunately, this time we sat in a spot next to the kitchen where we had a constant view of the kitchen and also the passage to the back for the staff. This made the entire experience we had a previous time a lot less. Especially when the staff started cleaning and tidying the kitchen while we still had to get dessert. Seeing someone mopping while you are eating dessert is not really an experience unfortunately.

Dishes with subtle flavors and surprisingly composed. Broadly composed wine list with favorable starting prices. Spacious arrangement of the tables although there was a discussion when we were not satisfied with the designated table. Professional additions still need to be made there, it did not improve the experience.

Rarely have I noticed that people respond so intensively to the wishes and needs of their guests. What's more, the service sees where they can accommodate their guests (hearing impaired) and takes full account of how to make a visit as complete as possible. The explanations and stories behind every dish and every product prove the passion for gastronomy and service that this team has. The Cheese experience is the first customers can experience. What a unique experience and as previously experienced, the cheese plate in combination with the chef's story is a pleasure to listen to. Very special!

It took almost a year before I even got a table, which was also due to the fact that I had little time, but it was definitely worth the wait. Nice atmosphere and ambiance.

First off, the food was tasty, the service was okay, and the atmosphere was lovely. However, in the area this restaurant is aimed at (i.e. upscale/fine dining establishment) and it's price point (we paid close to 150 per person without alcohol), compared to similar restaurants myself and dinner companion have been to in the Netherlands and even in the same region, I would have expected much better service and a bit more innovative food.

We enjoyed a delicious dinner again, great service by super attentive and friendly staff and delicious wines served by a super lady. A nice detail was that this time the chef and 2 members of the kitchen brigade also came to serve dishes. All dishes were like paintings on the plate and a taste explosion with Japanese influences in your mouth. We had a TOP evening at a top location. It's not surprising that there is a waiting list for this Novo experience! See you next time.

We were here for the dessert bar, a little later in the evening. The dessert itself was delicious (compliments to the chef), but we had to wait about 45 minutes for it and had to ask again ourselves. Combined with an overpriced non-alcoholic gin and tonic (€15,- and therefore more expensive than the dessert itself), it was a disappointing experience, purely because of the service (understaffed?) Given the many 5 star reviews, this may have been an isolated incident. I have also read some of the poorer reviews, and see that the common thread here is the experience with the service. Instead of responding with an excuse, I would see it as a tip to do something with and make the guests' experience even better.

Price-quality very strong. Very attractive place with attentive and correct service, explosions of taste in dishes and very good matching wines (very good female sommelier), this culinary temple is highly recommended. Small point of interest: the lack of a map. We would appreciate it if you could go through in advance what everything costs. You could already find some of this on the site (food/wine package costs), but not everything. That's why it felt double as you don't really know how much all this will cost at the end of the day. (coffee/water/pralines/supplement first course/tasting/aperitif) A little notice in advance would have been nice. Tip!

Had a delicious meal at NOVO New Dining, a regular meat eater as well as a vegetarian. Both enjoyed alcoholic wine pairing as well as homemade and exclusive non-alcoholic drinks that perfectly complimented the dishes. A special experience where we could enjoy NOVO's own caviar with a changing view in the restaurant because we had taken a seat on the "carousel": a plateau that rotates completely once every 1.5 hours. 10/10 experience due to perfect service and dining.

The food is of a high standard, but the service and wine selection detract from this. Enjoy delicious, high-quality dishes (highlight: the haddock). The cheese cart is fantastic, with passionate explanations from the chef/owner. Unfortunately, there was a lot to criticize about the service. Some points: - almost everyone who came to our table abruptly interrupted the conversation (they did not wait briefly before speaking). This may have something to do with the fact that there were too few staff - male employee did not smell fresh and made physical contact with people at the table - wines in the wine package were not special and price-quality was not in order - with the non-alcoholic arrangement it was seen that one of the drinks came directly from Albert Heijn. It's a shame that homemade drinks are not served as a non-alcoholic pairing, as you see at many other restaurants.

For me, this restaurant is the absolute number 1 in Maastricht! I could eat here every week, but we limit ourselves to every 6 weeks :) Everything is just right here, whether it is the food, the crockery or cutlery, the beautiful wine glasses or the perfectly made cocktail, the beautiful interior or the warm smile from the sommelier or hostess, you couldn't ask for more. I haven't even mentioned the fantastic food that chef Rodney and his team prepare for you. A picture to look at every time, eye-catching, but just amazing how your taste buds are taken to a higher level. Every bite makes you want more :) The hostess and sommelier have an eye for everything down to the little details and are very nice people. A big round of applause for this great team, great that we can come again next week!

Very high expectations before visiting this restaurant. Either we had a bad night or it's not to our taste. Stunning location, everything very nice and elegant. Open kitchen. Slow service, too. We arrived at 7.30pm, water was served at 8pm and the first course arrived at 8.45pm. 5 courses to finish at 10.30pm!!! The dishes are unbalanced. The only thing worth mentioning is the meat. Very good, the others turned out poorly. Sin

Had a fantastic evening here. Everything was simply perfect. The food, the ladies and gentlemen of the service did their utmost to make you feel very special as a guest. Top restaurant with food and wines that caress your tongue. A particularly beautiful experience.

The female manager came across as very unprofessional. We were sitting at the table near the bar and could hear how she spoke to the other staff, in other words how she had been snapping at them all evening. It can happen that things don't go well on an evening, but addressing your staff in such a way is not polite and correct and certainly not at a volume where guests can hear it. This meant that we did not feel comfortable all evening, but the rest of the service was top notch! Especially the Belgian and English speaking ladies!

Wow! What a surprise! Managed to get a table despite short notice. Even if our flight was delayed, the staff managed to rearrange things in order to accommodate us. Exceptional nice atmosphere! Great service! If you have the opportunity, we highly recommend trying the extra, Italian caviar. What a taste, what a flavor! Een heerlijke avond gehad! Novo is een hele mooie zaak met heerlijk eten en super bediening. De aangepaste wijnen worden met veel kennis en wat humor voorgesteld. En dit is hetzelfde met de niet-alcoholische dranken. De zaak is stijlvol ingericht en over het niks dan lof.

Ge-wel-dig. Ik kan niks anders zeggen dat het een fantastische ervaring was. De gerechten zijn met combinaties die je je niet kunt voorstellen. De wijn erbij was prima en fantastisch. De bediening kan ik niks anders dan lof over spreken. Zeker de Amerikaanse en de rest van de personeel was fantastisch. Jullie hebben onze avond onvergetelijk gemaakt.

Fantastische avond gehad bij NOVO. Het eten was geweldig, de service nog beter. Bij het menu hebben we genoten van de aangepaste dranken, zowel de wijnen als de non alcoholische versie. Dit was een grote meerwaarde, en werd met interessante uitleg gebracht. Zeker een aanrader :)

A hip restaurant at the fifth floor of a repurposed industrial building. Access is with a lift into a chic interior. Pleaser cost seating, there is also a curved central table. Professional and friendly service. The highlight is the food, fixed menu. Creative presentation good taste combinations with good products. Wine pairing was good. It seems one must reserve a table months in advance and it is clear why.

Begin dit jaar gegeten bij Novo en zo enorm genoten! Alles klopte: bediening, chef, sfeer en uiteraard het fantastische eten en drinken. We genieten nog steeds na als we eraan terugdenken. Wauw!!

Review voor 10-01-2020: Gigantisch! Helaas niet per se geschikt voor grote eters. Maar alled wat op het bord ligt is subliem, fantastisch ! Lekkere wijnen ook. Alles was fantastisch, we hadden een wijn arrangement en ze deden niet moeilijk om een glaasje wijn bij te schenken! Update voor 10-01-2023: Lang getwijfeld of ik mijn review wilde updaten, omdat iedereen zo positief is, maar ik ga het toch doen. Wij kwamen binnen met de eerste lichting en de eerste en tweede gang gingen redelijk snel (a 30 minuten tussen elke gang), alleen zat tussen de tweede en de derde gang bijna 55 minuten. Wij hadden ontzettende honger en de wijn was al 45 minuten daarvoor uitgeschonken, dus die was allang op. Toen wij er wat van zeiden, werd gezegd: "ja ik had het al in de gaten." (doe dan iets? :-)) Toen werd gevraagd of we de gerechten nu snel achter elkaar wilden, waarop wij ja zeiden, want we hadden echt ontzettende honger. Toen stonden we ineens binnen 20 minuten buiten. De wijn werd ook veel te vroeg uitgeschonken, die was elke keer al lang op. Toen we vroegen om een extra glas zeiden ze: "Ja, maar dan moet je wel extra betalen, want de wijnen worden strak afgestemd...blabla" Het was sowieso al mijn intentie om extra te betalen voor een glaasje wijn, maar werd naar mijn idee beetje standvastig om gedaan, vooral als ik dan terugkijk naar hoe ze er in 2020 mee omgingen. Uiteindelijk hoe ze het hebben opgelost, was echt prima qua service en het eten was ook echt fantastisch, qua smaak is daar niks op aan te merken en ze hebben dat glaasje wijn voor de moeite van de rekening afgehaald. Enige minpunt is dat het eten – in prijskwaliteit – wel echt ontzettend weinig is wat je krijgt. We hebben al vaker 'zo' gegeten en dan was het echt wel meer. En al helemaal voor de tijd die tussen de gangen zit :-( We vonden het ondanks alles dus alsnog een erg teleurstellende ervaring, aangezien we bijna €200 hebben afgetikt. Daarom geef ik drie sterren, voor de service opzichstaand en de smaken van het eten, zou ik nog steeds 5 sterren geven, maar de opeenstapeling van dingen in combinatie met wat we hebben betaald, was het zeker niet voor herhaling vatbaar, vandaar dus 3 sterren. Sorry!

Gisterenavond met vier vriendinnen een bijzonder fijne avond beleefd bij Novo New Dinning. Genoten van een vijf gangenmenu en heerlijk verwend geworden, echt een aanrader.

Mooie en sfeervolle zaak. Sommelier heel vriendelijk en kundig. Bedienend personeel wat stijfjes en afstandelijk. Prijs-kwaliteitsverhouding van de vegetarische gerechten viel tegen in verhouding met de vlees- en visgerechten. Weinig smaak en variatie in de gerechten. Bijna geen creativiteit, goedkope produkten. Gebakken bloemkool zonder smaak, gebakken tofu zonder smaak! Ondanks de lovende reviews, geen bijzondere smaaksensaties w.b.het vegetarisch menu. De vis-en vleesgerechten waren goed.

Bij binnenkomst valt meteen het moderne maar ook sfeervolle interieur op. De dessertbar is van marmer en heeft een prachtige chique uitstraling. Het team verwelkomt je bij het openen van de lift en begeleid je naar de tafel waar je telkens verrast wordt met heerlijke gerechten waarbij je zintuigen geprikkeld worden door de verschillende smaken. Het bijpassende wijnarrangement is perfect gecombineerd bij de gerechten en de sommelier weet alles van de herkomst van deze wijnen. Alles bij elkaar was het een fantastische ervaring waarbij je de gehele avond in de watten gelegd wordt door het informeel maar professioneel team. Ook de chef neemt de tijd om met de gasten een praatje te maken. Wij komen er graag weer terug!

Vol verwachting klopte ons hart,....... maar vond het tegenvallen. Smaken verschillen nu eenmaal, maar begrijp niet 'echt' waar iedereen zo lyrisch over is,....(prijs kwaliteit verhouding?) voelde geen warmte van de bediening, en miste de "Explosie" van elk gerecht,......... wat jammer, weten we dat ook weer.

Qua prijs/kwaliteit mijn nieuwe nummer 1 in Maastricht. Perfecte ambiance. Mooie gerechten met goede wijn pairing. Verslavingsgevoelig.
