We enjoyed a beautiful evening at Bougainville. This restaurant located on Dam Square in Amsterdam is beautifully decorated with warm colors, paintings and has very nice acoustics. The service and sommelier are very driven, friendly and knowledgeable. This will make you happy! The kitchen also makes a name for itself. What delicious dishes they know how to make! Various amuses beforehand. We then chose the chef's signature menu, including turbot, langoustines, wagyu A5 and fallow deer. Finished with various sourdoughs where popcorn ice cream with caviar and the chocolate dessert were top notch. All dishes are accompanied with delicious wines. What is special here is that the wines are explained after the dish instead of before. Very nice to stimulate attention to the wine, after all taste it carefully and guess what it is. This restaurant is a winner in the Netherlands and therefore highly recommended. We will definitely come back.

The Bougainville is a lovely place with a wonderful atmosphere. It’s one of those places that stands out, particularly for its outstanding service, thanks to a truly remarkable team. The waiting time was acceptable, not perfect, but certainly not long enough to complain about. As for the food, I had mixed feelings. While the presentation of the dishes was undeniably artistic and impressive, the flavors didn’t quite meet my expectations. For example, the main course was cooked rarer than I’m used to, which made it difficult for me to enjoy fully. This may be more reflective of my personal preferences than the quality of the dish itself. The staff was attentive and responsive, clearly committed to ensuring a good experience for their guests. However, at that point, I decided not to request a replacement dish. The atmosphere was another highlight. It was tastefully decorated, calm, and quiet enough to have a comfortable conversation with friends or loved ones. If you’re someone who enjoys gastronomic cuisine and values attentive service, it’s worth giving The Bougainville a try. Overall, it was a pleasant experience.

Smiling faces, very helpful and polite people around, very flexible with menu changes / combinations. Best of the best. Big big compliments to the team!!! - Best deer I have ever had. We ate in Bougainville in September. It was definitely worth the price. The food was phenomenal and the service left nothing to be desired. Right at the beginning we were greeted with champagne and then the staff noticed that we spoke Swiss German and the staff at our table was immediately replaced (nice lady from Tyrol explained the menu to us in Swiss German throughout the evening). Will definitely come back sometime!

location is very nice in the City center. Parking is possible at qpark bijenkorf of qpark on the damrak. Restaurant is on 3th floor and they have 16 hotel rooms also. The personal is friendly. We did a 7 course for 235 eu. Wine menu included. The Wine was in an nice balance per course. But the Food presentation looks nice but the taste was nothing special. No highs and no lows in flavours. That was a shame. For me it 's was not Michelin star worthy. You can get this also in a normal restaurant for far less money. For us a one time visit, not special enough for the price you have to pay.

We had dinner (vegetarian menu) in Marc at Restaurant Bougainville. An exceptional experience! The dishes were creative, each one a delightful surprise and the interior strikes the perfect balance between elegance and coziness. The stunning wall of wine on stock adds a special touch. We were lucky to sit by the window with a direct view of Dam Square and the Royal Palace creating a memorable setting. The service was great, with a different server for each course, and the presentation of the dishes was like a performance, adding an extra layer of excitement to the evening.

Although I usually prefer more down-to-earth cuisine, this was top notch!!

Top notch service ! The taste and flavor is also very unique. Not something you see in other Michelin star restaurants.

We chose the two long menus, the waiters are friendly although each time a different waiter brings you a dish. The dishes are well cooked except for the wagyu, which was brought to us dry and hard. I don't know if it was something specific, although it was well presented (my husband didn't want to eat it and returned the plate). In general the dishes were good, but what they need is to put a little more different ingredients and although they are well cooked and prepared, they are all things that you eat at home (a carabinero, a turbot, a sirloin...)

What a wonderful experience we had here. The first time we ate at Michelin level, but Bougainville opened a completely new world for us. Both the service and the food were perfect, highly recommended.

Overall had a wonderful dinner. Service was excellent, atmosphere was spot on. Food was very good, wagyu was not the best but fine. Pacing was a little slow and Carolina cocktail wasn’t great. Aside from that would highly recommend for an anyone looking for a memorable evening.

In my opinion, the best 1-star restaurant I have ever eaten at, and it is on par with many 2-star establishments. Very nice ambiance and knowledgeable yet informal service. In terms of food, it's really amazing! No frills but very pure flavors and dishes. Great wine list and wine pairing also excellent.

Some staffs were nice but we don’t have a main waiter. The initial waitor only check with us one time and started to move to different table after we ordered a la carte menu. We’d have try chef menu set but our time did allow. The Wagyu main dish was delicious and cooked perfectly. The rest of other dishes were just okay. We tried different michelin restaurants and this one seemed to not meet the standards for both food and service. Our wine glasses were empty for more than 20mins and nobody has checked on us although there were some staff around. You can see our wines were all empty during our time having main dish. Wondering because we were Asian and not from the country? Honest feedback, we picked this place because of the great reviews and nice decorations, but won’t go back again because of this experience.

From top to bottom this is the best restaurant I’ve been to ! My wife and I ordered the 6 course dinner with wine pairing to celebrate our anniversary, I came with high expectations, and they rose above the occasion. The ambiance really flows, the service is unmatched, and every single dish of food was fantastic ! I would definitely recommend the wine pairing, the sommelier has a great and unique flight that serves as a perfect pairing ! Spent 3.5 hours here, Worth every penny

Dinner at Ams is at Bougainville, a Michelin-starred restaurant located within the hotel. This is also an innovative modern cuisine that combines Western and Oriental elements. The chef takes inspiration from many aspects of Japanese cuisine, and the main dishes include Kagoshima wagyu beef, eel, and yakisoba bread. Moreover, this yakisoba bread is really delicious. The pairing wine was also delicious. Even in AMS, the sweets attack in the second half is still alive and well. From a Japanese perspective, there are too many everywhere. Thank you for the meal!

One of the best restaurants I have eaten in my life...an experience worth a visit...and it does not serve pork

Came to Amsterdam for the first time to celebrate my 38th birthday and I wanted to make it extra special with my first Michelin Star dining experience. With 23 Michelin-star restaurants in Amsterdam, it was hard to decide which one. Bougainville did not disappoint. The service and food was exquisite. Our experience began with champagne and 3 amuse bouche, which lived up to the name. The staff explained every course and how best to consume it (so there was no awkwardness on our end about fancy food). I had the vegetarian tasting menu and my wife had the Chef's Signature tasting menu. Both were phenomenal at every dish and we left feeling very satisfied. I also paired mine with the wine tasting and was blown away by the impeccable pairings and unique flavors. Our dinner lasted about 5 hours. Most people were dressed smartly, as you'd expect. I'd read that Amsterdam doesn't have a tip culture, but we added a small (10%) tip to our bill anyway.

For a first in a starred restaurant, a magnificent experience in an idyllic setting, the dishes are refined and the staff attentive, in our case, my husband did not eat fish and I did not eat meat, they adapted very well to satisfy us, we came away feeling full. My husband and I had an extraordinary dinner at Bougainville when we visited Amsterdam in May. We both did the seven course tasting with the wine pairing. The food, wine, ambiance, servers, and sommelier (shoutout to Melody - you’re still invited to wine night if you’re ever in western New York!) were all incredible. We had previously gone to Epicure in Paris, and I told them that Bougainville was at least as good. We’ve been to several Michelin Star restaurants and Bougainville is right up at the top. I’m so glad we visited and if we’re ever back in Amsterdam we will definitely return!

Kagoshima A5 Wagyu, was a revelation, its intense, buttery flavor and melt-in-your-mouth texture unparalleled It was the langoustine - delicate and sweet, melted in the mouth and veal sweetbreads - that offered a luxurious, creamy richness that truly left an indelible mark, surpassing any we've encountered. The food is very special but tastes very delicious, I had the Hollands Lam and a souffle without Prosecco. The lam was very tender, cooked just right. My husband had the Beluga Kaviaar. The food was very expensive but for the good quality it was worth it. The service was very polite and chatty.

Unbelievable experience. With Michelin restaurants, you always know the service will be excellent but the food is often a question mark unfortunately. But the food here was INCREDIBLE. Every bite was a party in your mouth. Just delicious. Plus the staff were some of the best I've ever had at a michelin restaurant. They were professional but also so down to earth and sooo funny. They were just wonderfully perfect. We did the full tasting menu and wine pairing. We did a half pour of each wine and were still pretty intoxicated by the end. I also love that all the seating are on these super comfortable sofas. I really felt so at home I loved it.

Without you realizing it in the hustle and bustle on Dam Square, in my opinion this is one of the very best restaurants in the Netherlands. Immediately upon entering you feel that you are going to have an excellent evening and nothing could be further from the truth. Everyone works very well together and you notice that in everything. The food, the matching wines and the overall service. We ordered the full menu with all supplements and there was really nothing that did not meet the high standard. Really amazing.

From the moment we arrived, Azzee welcomed us with exceptional kindness and politeness, explaining every detail of the dishes and making us feel very welcome. Catarina Jorge also deserves to be highlighted, sharing her extensive knowledge about wines with a contagious passion, further enriching our experience. As for the food, it was simply an explosion of flavors and joy! I highly recommend a visit to Bougainville to enjoy an incredible meal and impeccable service.

We now come there more often and for good reason, it is ideally located on the Dan in the heart of Amsterdam. Always friendly reception. Enthusiastic staff and kitchen brigade. Maybe spice up the music a bit, but that's really the only downside... do I even have to start talking about the food? I think Bougainville is an incredibly top restaurant in terms of the total quality of interior, service, location and, above all, beautiful contemporary dishes with an international taste palette and beautiful layout. You will experience the restaurant in the beautiful monumental building as a very exclusive night out. The interior, colors and art exude a cosmopolitan atmosphere. Service, wines and sommelier very good and surprising. All dishes in the 6-course menu with fish and vegetarian are beautifully designed, excellently cooked and plated into a beautiful dish on very beautiful tableware. The music and volume also contribute to a real evening out! Went for dinner for the second time last Friday. It may and must be said; Bougainville remains on course to improve even further. What a party!!

I liked the atmosphere. I definitely suggest booking the VIP section; it's worth it as the restaurant can be crowded and a bit noisy. I enjoyed the food. The staff really know what they are doing. It was a new and nice experience, and I absolutely loved it. Also, the man with the glasses was really nice and, to some extent, intimidating, but I think it added to the fun and the overall experience. ( loved the chocolate desert from the chef menu, definitely something to try)

I'll definitely return. 🪑Atmosphere (4/5) The restaurant has a beautiful view of the dam and has a lush interior, which I think is absolutely fantastic. There are seating areas in small alcoves on benches and spacious square tables. We sat across from each other at a square table. - Small point: sitting comfortably is of course wonderful, but there was SO MUCH space between me and my husband that we had to lean far forward (over the table) to be able to talk to each other. Not very romantic. At the end of the evening my back was hurting and I sat next to him during dessert. Fortunately, this was possible, because no one was sitting next to us anymore. - Music wasn't really my taste: a bit old-fashioned 80s. In my opinion it did not fit with the luxurious interior. 🥷🏽Service (3/5) We were greeted by everyone upon arrival. What was striking was that almost everyone asked “how we felt”. Service was young, very attentive, but it sometimes felt a little “forced” and awkward. A lot of water was added, great! Unfortunately, our wine glasses remained empty too long and too often. A big 10 for this wonderful restaurant. Everything, absolutely everything, was worked out to perfection. The staff is very enthusiastic and excellent at working with each other. The dishes are sometimes daring but very tasty. The restaurant itself is very tastefully decorated. Don't forget to have a cocktail at the adjacent bar first (reservations required).

The service was absolutely amazing! Everyone was super welcoming ,friendly and paying attention to even the smallest details. 10 for the service. However the food didn’t meet our expectations! This is just a personal opinion but it was quite tasteless overall, with the exception of one or two dishes. We both had the Bougainville 6 course menu. The dish we really liked was the Quail and the dessert. The rest was quite blend and the time between courses was too long of a wait.

Absolutely delicious food and everything was perfect down to the last detail! Table guest who was left-handed and was taken into account. Nice explanation of the dishes. The only downside is the cutlery, which was regularly damaged and you can get nicer ones. For all people it cannot be the best restaurant in the world, but of all 1 star restaurants, this one is definitely among the top! 2nd star maybe? Keep it up

In one word fantastic! Great evening-filling experience that was perfect on all sides. Six courses of vegetarian/fish with matching wines (half glasses), everything prepared with great taste, surprising dishes. Wine combinations excellently chosen. Very cordial and knowledgeable service. We spent 260 euros per person but it was well worth it. I would love to come back someday.

Attentive, knowledgeable, and genuinely invested in ensuring our satisfaction, the staff elevated our dining experience. What truly stood out was their flexibility. After informing them - on the stop - that we would not be drinking alcohol, we were pleasantly surprised when, at the last minute, they crafted a non-alcoholic drink pairing that perfectly complemented the entire menu. This level of consideration is truly commendable.

5 stars isn't enough to describe the amazing experience of dining at Bouganville. I guess 5 stars PLUS their Michelin star gives you the idea. The creative interplay of flavors and textures can only be described as masterful artistic gastronomy. I am blown away by the level of service and incredible food we had this evening. We did the Chef's Signature tasting menu. Six courses of just intense sensual input. It's pricey, (really pricy!) but it's worth it. I mean, they were voted the #1 restaurant in the world! This level of creativity and skill does not come cheap. As Paul Child once said of a similar experience "...you are so hypnotized by everything there that you feel grateful as you pay the bill."

Unforgettable experience. Kind staff... The young sommelier was perfect throughout the evening. She spoke French with us, introduced us to various wines in the form of a little game, she was passionate and exciting. The staff's continued optimism and joy of living left a deep impression on us and makes us want to come back. Tasty dishes, with finesse... Wagyu beef, what a marvel! Even the dessert - I'm not a sweet tooth at all and even less so after a big meal - was light and fresh. In short, perfect, from start to finish! WELL DONE !

Had a great time at Bougainville. Delicious food and a few absolute memorable dishes. Great wine pairing. Service was also good, with some small inconsistencies when the person taking care of the table would change.

J’y ait passé il y a quelques jours la meilleure soirée de ma vie, mon compagnon m’a fait sa demande en mariage et le personnel a été d’une gentillesse mémorable; petites attentions, compliments, service impeccable,.. ils nous ont réellement fait passer un moment magique. (Je me souviendrais toute ma vie de Melody!) Au delà de ça, l’expérience culinaire était merveilleuse; un repas végétarien sans aucune fausse note (mon compagnon travaille dans un restaurant étoilé, nous avons été manger dans des dizaines de grandes maisons et celle-ci se classe très haut sur le podium).. 前菜很有水准的一家米其林餐厅⭐，点餐前会先送两份前菜，鱼子酱手卷和鹅肝（红酒鹅肝应该）。 上菜很有特色，是两位侍应生一起端上来的，动作也是专门有培训过。菜品的话main course的鹿肉和鹌鹑不是很喜欢，和牛反正都不会出错，更喜欢前菜。甜品我这个有点难吃，还不如后面送的小点和巧克力，真的很难接受又酸又苦的“甜品”。

Top service, geweldige gerechten, wijnen en cocktails. Wij gingen voor de 6 gangen met de wijn pairing en het was geweldig.

Wow this was probably the best dining experience of my life. The 5 of us went to celebrate my daughter’s birthday. The resturant is rated as “the best Resturant in the world” which recently earned a Michelin star. The moment we entered this historic building in the heart of Amsterdam we were made to feel at home. We were t for a chefs surprise menu and wine pairing. The best part was how we were treated by the team. The Somaliare was more keen to get our feedback vs “educating us about the wines”. The host was keen to also get feedback on the food. We actually didn’t like one of the dishes and it was promptly replaced with another one. Can’t say enough about the ambiance and the courteous treatment which made us all feel right at home. Highly recommend you secure a reservation in this boutique hotel/resturant setup.

Werkelijk en top avond in prachtige kerstsfeer. Het 5 gangen menu was iedere gang een ware smaaksensatie.

Voyage Amsterdam Jour 2 : après une journée de musée, dîner au restaurant BOUGAINVILLE. Exceptionnel!! Vraiment. Un repas menu du chef savamment composé qui monte en gamme à chaque plat avec des saveurs et goûts merveilleux, qui s approche plus d un 2 étoiles. Le bœuf était divin. Le décor est sympa, un peu bling bling. Mais un service attentionné et chaleureux 🥰. Vraiment je recommande Si post utile, merci pour le like!

Heerlijk Gegeten met een groepje van 6, met daarvan diverse wensen.dit was geen enkel probleem met alles was rekening gehouden.wijnen waren echt klasse.Het eten buiten gewoon goed.de koks jurrien en koen en de keukenbrigade klasse.bedankt voor deze ervaring

Most of the courses were absolutely amazing. My highlight for the night was the Souffle (Passion fruit) and the Amuse Bouche. The souffle was so good, I ordered it twice to complement my tasting menu. I had the Bougainville tasting menu and almost all the courses tasted great. The front of house staff were magnificent. I also have to make a mention of two front of house staff members that were exceptional in their service; Sylvia, and Ronald. You both made my stay more welcoming and fun. I believe two stars may be within reach if they continue at the levels of excellence.

Bougainville bevindt zich op de 3e etage van een luxe hotel op het damplein in Amsterdam. In de lobby van het hotel aangekomen werden onze jassen aangenomen op de BG. Hierna met de lift naar het restaurant. Boven werden we ontvangen bij de ingang van het restaurant door de gastheer en naar onze tafel geleid. Wat direct opviel was de luxe sfeer en het prachtige uitzicht over de Dam. Eenmaal aan tafel bleek de stoel niet lekker te zitten, maar binnen een minuut werd dit verholpen door een van de obers door een ander type stoel te halen. Goed hoor! Wat in mijn ogen wel anders moet is de enorme ronde tafelpoot. Ik zat gewoon echt niet lekker. Mijn voeten kon ik niet goed kwijt en rustten schuin op de tafelpoot. Dus qua comfort aan tafel was het iets minder... Wat erg gezellig was, is de gezellige muziek die subtiel, maar goed hoorbaar aanwezig was. Dit bracht veel sfeer! Dan het diner en het wijnarrangement. Wij hebben inmiddels aardig wat sterren zaken aangedaan en worden niet zo snel meer omver geblazen. Deze avond helaas ook niet. Het eten en de wijnen waren uiteraard van hoog niveau, maar sommige gangen misten wat magie. Bij sommige gerechten ontbrak de wow-factor en hadden wat meer verrassing mogen hebben qua smaakexplosies e.d. Leuk om te vermelden is dat de wijn blind geschonken en dus geproefd wordt. De uitleg vd wijn volgt na de gang. Dit vonden wij erg leuk, omdat we konden raden wat we dronken. Beetje een quiz aan tafel! P.s. sommelier erg leuke man met veel passievolle kennis! Na het restaurant zijn we naar de naastliggende bar gegaan voor een drankje. Mooie luxe setting met erg goede cocktails. Wel zijn deze aardig aan de prijs! Naderhand zijn wij nog benaderd door de manager van het restaurant. Hij wilde onze ervaring in het restaurant en de bar weten. Zo kon hij naar eigen zeggen de kleinste kritieken op detailniveau verbeteren. Dat is nou eens echt klantenservice!!! Al met al wel een heerlijke avond gehad!

Wonderful atmosphere, the staff was very careful and explained every course. Dishes were not only food, but piece of art - all 3 amuse-bouches and 7 dishes. Wine pairing was also very good selected with every course. I expected a little more from the dessert. Worth to visit. Need a reservation weeks/months ago.
