We had a fantastic experience at Bougainville. We ate here for my father's birthday. It starts with the beautiful ambiance upon arrival. We chose the Bougainville menu with a matching wine pairing. It's great that at this restaurant, they offer wine tastings first and only tell you what you've had after the course. You learn to think for yourself about what you're tasting. The dishes were original and top-quality. Everything tasted delicious. They even know how to make sauerkraut in the kitchen! Hostess/sommelier Kirsten helped us all evening and did an excellent job! She exudes passion and explained everything clearly with great knowledge and enthusiasm. Because we opted for half glasses, we even learned something :) Highly recommended.

One of the best restaurants I ever visited; fantastic place!

My worst Michelin experience. I went to Bougainville only because I could book dinner the same day. The Italian sommelier is the only highlight, he is charming and really knows wine. The interior looks like something out of a gold-covered gypsy fantasy, like how a poor person imagines a fancy restaurant should look. Nothing feels tasteful. The food is average at best, not even close to Michelin standards. I seriously doubt they got the star for cooking, maybe the owner’s private club downstairs helped with that…

I'm sorry it seemed like we were about to break up because of our somewhat heated conversations, but that's our moment to talk, to go out to dinner and really be together, you allowed that! This was an absolutely horrendous experience. The service was practically non-existent — random staff members dropped off our courses with minimal interaction, and not one server could describe a dish in more than three words or answer basic questions about the food. It seemed like our server was new and unfamiliar with the menu — but at a Michelin-starred restaurant, that’s unacceptable. The tasting menu took 4.5 hours, with gaps of up to 30 minutes between courses. It was clear the restaurant was having a very bad night. As for the food, the venison was excellent, but the sea bass tartare smelled off, like old fish. Everything else was unbalanced and forgettable — overly sweet, lacking salt or acidity. Overall, this was the worst dining experience I’ve had in a long time. If this is a 1-star restaurant, I’m starting to question the Michelin Guide.

Vert great experience with amazing menu and atmosphere. The service was really amazing (thank you again to the sommelier and his adaptability to fit out taste) definitely worth it!

Amuse-bouche: I don't like foie gras, but the seasoning on the outside was delicious, so it was edible. The kimchi tart was a hit! It had a strange herbal flavor at first, but the more I chewed, the more crunchy and refreshing it became, and it was absolutely delicious. Sea bass: I didn't like the QR-shaped cheese mousse... What was delicious was the fried fish skin and the mayo-like sauce, which was incredibly savory. Carrot: It was shiso risotto. It was similar to barley rice. They said it had umeboshi in it, but I couldn't really taste it. The pancake(?) on top was savory and delicious. There were carrot pieces in the risotto, and I don't like carrots, but they were sweet and delicious. Agwi: The agwi was really well-cooked. The salad on top was delicious! But the sauce underneath was a bit greasy... The bread that came with it was excellent. Valves' thymus (?): I don't like veal... It was a bit bland, but I don't think it's the restaurant's fault (?) Venus sirloin: The sauce was a bit salty... But the meat was excellent. Raspberry: Delicious, especially that pink raspberry cream!! I had a glass of Chardonnay and a non-alcoholic cocktail, but the Chardonnay wasn't anything special, and the cocktail had a variety of flavors, making it a pleasant experience.

We were having the best time! The personnel were so friendly and welcoming. The food was superb, from the amuse bouche to the dessert. Special mention to the wagyu which was the best i ever tasted. Wine pairing was perfect, enjoyed it.

Last May, we dined here with our brother-in-law and sister-in-law. Everything was, in a word, superb! The amuse-bouches were truly unique and delicious. All the flavors of the dishes blended wonderfully and were perfectly seasoned. Our favorites: the monkfish in a Thai curry, wagyu beef, the popcorn dish with caviar and ice cream, the kingfish, and the langoustine. Everything, along with the matching wines, was perfect! We were a bit disappointed with the dessert, the only course we enjoyed. The service was very well-coordinated, and there was a pleasant and warm atmosphere in the restaurant. We truly had a wonderful evening, thank you!

A visit to this wonderful restaurant is unforgettable. The very friendly and elegant decor makes you feel immediately at home. The clientele was more international and younger than at other Michelin-starred restaurants in Amsterdam, probably due to the central location. This made the noise level a bit higher, but it certainly contributed to the positive atmosphere. The food was simply wonderful, beautifully presented, and I was satisfied. There was no room for the cheese platter. The wine pairing, which was beautifully matched, was always introduced and explained after the course. This made you think more about it yourself. I also have to give the friendly staff a huge compliment, as they handled a young, slightly tipsy guest very professionally and friendly. The companion recognized the situation and cut the evening short accordingly.

We enjoyed an amazing breakfast here in the Hotel Twenty Seven! We had the “Big Breakfast” The browned butter with the rolls was amazing!

Just make the reservation and go. It's a true delight! The foods were spectacular. There are many different menu options. We opted for a mid-range prix fixe menu. The recipes are ambitious and exceed expectation - delicious! The somellier and other wait staff are well-educated, experienced, and offer the highest standard of service. The VIP dining room is just a small dining area off to the side; it felt like a standard small hotel dining area. Some of the tables were used as the serving stations for the convenience of the wait staff, which isn't what I was expecting. Overall, this was one of the best dining experiences that I have ever had. What a delight and again, DELICIOUS!

Let start with the spot, in the hart of Amsterdam on the third floor of a beautifull building, overseeing the famous Dam square. The restaurant is relatively small, probably 40 couverts, that gives it an intimacy, while it feels also grand and spacy. As a long person I tend to have back issues with some chairs, but these were very good. The staff, kind, knowledgeable, friendly and positively smiling. The food was matching and then some, so far my best experience in the Netherlands. Daring, beautifull, new with some classics, worldly, great presentation and the popcorn with caviar (I was sceptible) was simply perfect.

Everything was great. from the pre dinner drinks in the bar then on to the restaurant. The staff was awesome. They made sure to explain every dish and wine pairing. I couldn't have asked for a better dinner that night. The chef and team did an amazing job. My favorite was the king fish. I will return.

My family and I have been to Bougainville twice and each time has been a fabulous experience. The taste for each dish is so unique with flavors that blend so well and yet you can taste each ingredient as described by the staff. The staff treat you like you are the only patrons under their care for the evening. For a truly pampered evening, treat yourself to a meal at Bougainville. You will not be disappointed. Tip: Grab a cocktail at Bar Bougainville before dinner. It's located next to the restaurant.

It’s probably the best meal I’ve ever had. The service was impeccable. We did the Chef’s menu and wine pairing. The wine definitely elevated the experience and enhanced each dish. I’m recommending this restaurant to everyone and returning to Amsterdam for just this restaurant.

Unpretentious fine dining at its best. Cozy atmosphere, excellent food, with the expected steep prices to follow. The chef’s signature selection with drinks will run about $300 pp, but the experience itself is well worth it. The care, craft and marriage of flavors all lives up to the hype. Also, what hype? Apart from its Michelin star, this restaurant shows why it earned it and more.

We had the pleasure of dining at Bougainville three times. Our last visit was the best one yet and can’t wait for visit number four! Staff is super friendly and professional. Every visit the food has been absolutely amazing.

This resturant was amazing from checking out coats, pulling out our chairs and giving details on everything about the food. The food and cocktails were out of this world. If you are a true foodie and love exquisite things, this is the place. We did the a la carte. No meal in Amsterdam beat this meal. The Pornstar cocktail and the souffle are a perfect way to end the meal.

I felt Asian influence a lot. For Japanese people, Asian food can be boring. The Asian flavors here were sophisticated. I would have liked to have had French food, but these may be satisfactory for many guests. The way the fish was cooked, I think, was well done. The sommelier was good, not intrusive and positive in his assessment of the wines. Staff were not sometimes attentive but were fine overall.

Beautiful place and good staff but the vegetarian menu could be improved. I left two of the courses unfinished as they were underwhelming.

Phenomenal! Great service. Delicious food. Our wagyu dish had no taste. This was immediately replaced by the chef and he personally made and created another dish for us! Wine arrangement was a perfect match with unique experiences.

Decoración Las mesas están bien situadas, separadas entre sí y el restaurante en forma de L, con la cocina visible en un extremo del restaurante. Cocina La cocina de este chef local se centra en una variedad de sabores orientales - asiáticos, haciendo buen uso de salsas y especias con maridajes inusuales. La calidad era excelente y los sabores inusuales y refrescantemente diferentes. Great food and amazing wine pairing with amazing sommelier! Just what you would expect from a Michelin restaurant! Extensive wine list with 5000 bottles wine is cellar! Food flavors do not have a very consistent theme, a bit too many elements from all over the world. Some of the dish have very over powering ingredients such as the roast pistachio.

A fantastic experience, impeccable service, and cuisine worth trying at least once. If I had to find a fault, it would be the length of the chef's menu. I still recommend it.

Very attentive service that kept us wondering the whole evening what can happen next, but quite a number of errors were made (keeping in mind that this is a one-star restaurant). During the serving of one of the courses the saucing pot was clearly leaking and a few drops fell not only on the white-cloth table but also on my lap. I understand that things can happen but no apologies followed. The table next to us had found a hair in their plate — this was handled nicely and a replacement course was made. The waiting times between courses were very different — sometimes 10 minutes, sometimes 30-40. The whole experience took us 3+ hours. The food was mediocre at best. Almost all dishes were overloaded with various flavours that just didn’t fit together. The best taste had amuse-bouches. They were simple, had almost no sauces and offered a nice texture and flavour. Most pescatarian dishes (yellow fish, scallops) were okay, but could benefit from a simpler presentation and less sauce. Main course (lamb and wague beef) had a side dish that could be served as a separate course itself. Dessert was also served as a two-parter that had no cohesion whatsoever. Pouring mint tea into a wine glass is also a strange choice (aesthetically pleasing one though). The bill is served in a sealed (!) envelope that is being printed onsite with a loud printer device only to be opened 5 seconds later. General impression: this is an odd place that is a little bit old-fashioned. I guess chef’s tastes and idea of a good meal just did not click with ours and that’s fine.

Highly innovative vegetarian preparations. Had the 7 course dinner. Everything was freshly prepared and served. The presentations were awesome and the service was just perfect.

One of the best restaurants I’ve ever been to. The food, the presentation, the vibe, the excellent sommelier suggestions and explanations, everything was outstanding. This js a one star Michelin restaurant but I’m pretty sure they are aiming for the second one.

Even though we only had breakfast at Restaurant Bougainville inside Hotel TwentySeven, we opted for the Breakfast Experience—and it was absolutely to die for! The sheer variety of options was overwhelming in the best way possible, with every dish crafted to perfection. From the impeccable service to the top-quality ingredients, everything exceeded our expectations. By the end of our meal, we genuinely regretted not making a dinner reservation. Next time, it won’t just be breakfast—we’ll be back for the full experience!

Excellent food and world class service. It was not too salty which is a common problem with fine dining. The wine pairing made this place exceptional for us though! Very cool where they let you experience the wine first then tell you about it after. I think one of the best things about this finding restaurant was the wine tasting experience

First, I’m a dummy and booked for the wrong night but they still fit us in-so that was nice! Second, this is our 10th Michelin restaurant and the reviews had me worried about the food profiles being boring—but they were so wrong. We did the Chef’s Signature Menu + Bougainville oysters and everything was on point! Don’t be scared of the popcorn caviar, it is one of the best things I’ve ever eaten. The espresso cocktail is amazing! Pictures don’t do it justice but this place definitely deserves their star!⭐️

The food was delightful, with the sweetbread being both tasty and unique. The ambiance was great, the service was attentive to detail, and the music was pleasant without being overwhelming. We had a wonderful tasting menu experience.

Exquisite, intense flavors packed in a 6 course dinner offering. One of the best, if not the best, places to celebrate a close-friends birthday. Surprising amouse-bouches like mango tuna tartar, pani puri and other mind-blowing sense-awakening masterpieces of culinary expertise. Brilliant service and architecture. Only 2 comments I'd make is: 1) take a bit more time to explain the dishes in a bit more detail (we are not all experts in chef techniques) and ensure guests assimilate the explanation, prompting for questions. 2) don't wait until the last dish to bring the birthday bite. It is too close to paying the bill. Otherwise, a perfect afternoon.

Wat hebben wij genoten van een mooie avond bij Bougainville. Dit restaurant gelegen aan de Dam in Amsterdam is prachtig ingericht met warme kleuren, schilderijen en heeft een hele fijne akoestiek. De bediening en sommelier zijn zeer gedreven, vriendelijk en hebben kennis van zaken. Hier wordt je blij van! Ook de keuken laat zich niet onbetuigd. Wat een heerlijke gerechten weten zij te maken! Vooraf diverse amuses. We kozen daarna het chef’s signature menu onder andere met tarbot, langoustines, wagyu A5 en damhert. Afgesloten met diverse desems waarbij popcorn ijs met kaviaar en het chocolade dessert top waren. Alle gerechten worden begeleid met heerlijke wijnen. Bijzonderheid hierbij is dat de wijnen na het gerecht worden toegelicht in plaats van daarvoor. Erg leuk om de aandacht op de wijn te prikkelen, immers goed proeven en raden wat het is. Dit restaurant is een topper in Nederland en daarom een absolute aanrader. Wij komen zeker terug.

We enjoyed a beautiful evening at Bougainville. This restaurant located on Dam Square in Amsterdam is beautifully decorated with warm colors, paintings and has very nice acoustics. The service and sommelier are very driven, friendly and knowledgeable. This will make you happy! The kitchen also makes a name for itself. What delicious dishes they know how to make! Various amuses beforehand. We then chose the chef's signature menu, including turbot, langoustines, wagyu A5 and fallow deer. Finished with various sourdoughs where popcorn ice cream with caviar and the chocolate dessert were top notch. All dishes are accompanied with delicious wines. What is special here is that the wines are explained after the dish instead of before. Very nice to stimulate attention to the wine, after all taste it carefully and guess what it is. This restaurant is a winner in the Netherlands and therefore highly recommended. We will definitely come back.

Nada especial. Come 6 platos durante un período de 4 horas, lo que es demasiado. El servicio no era lo suficientemente atento para una estrella Michelin. La comida era meh - sobre todo pescado crudo. El postre era con alcohol. Tristemente no nos sentimos bien después de comer. No entiendo la publicidad de este restaurante. Elegimos esto debido a la alta calificación aquí en Tripadvisor, pero ambos estaban muy decepcionados con la comida / servicio. Obtendría 2 de 5 porque el ambiente y el precio era bueno. The Bougainville is a lovely place with a wonderful atmosphere. It’s one of those places that stands out, particularly for its outstanding service, thanks to a truly remarkable team. The waiting time was acceptable, not perfect, but certainly not long enough to complain about. As for the food, I had mixed feelings. While the presentation of the dishes was undeniably artistic and impressive, the flavors didn’t quite meet my expectations. For example, the main course was cooked rarer than I’m used to, which made it difficult for me to enjoy fully. This may be more reflective of my personal preferences than the quality of the dish itself. The staff was attentive and responsive, clearly committed to ensuring a good experience for their guests. However, at that point, I decided not to request a replacement dish. The atmosphere was another highlight. It was tastefully decorated, calm, and quiet enough to have a comfortable conversation with friends or loved ones. If you’re someone who enjoys gastronomic cuisine and values attentive service, it’s worth giving The Bougainville a try. Overall, it was a pleasant experience.

We ate in Bougainville in September. It was definitely worth the price. The food was phenomenal and the service left nothing to be desired. Right at the beginning we were greeted with champagne and then the staff noticed that we spoke Swiss German and the staff at our table was immediately replaced (nice lady from Tyrol explained the menu to us in Swiss German throughout the evening). Will definitely come back sometime!

location is very nice in the City center. Parking is possible at qpark bijenkorf of qpark on the damrak. Restaurant is on 3th floor and they have 16 hotel rooms also. The personal is friendly. We did a 7 course for 235 eu. Wine menu included. The Wine was in an nice balance per course. But the Food presentation looks nice but the taste was nothing special. No highs and no lows in flavours. That was a shame. For me it 's was not Michelin star worthy. You can get this also in a normal restaurant for far less money. For us a one time visit, not special enough for the price you have to pay.

We had dinner (vegetarian menu) in Marc at Restaurant Bougainville. An exceptional experience! The dishes were creative, each one a delightful surprise and the interior strikes the perfect balance between elegance and coziness. The stunning wall of wine on stock adds a special touch. We were lucky to sit by the window with a direct view of Dam Square and the Royal Palace creating a memorable setting. The service was great, with a different server for each course, and the presentation of the dishes was like a performance, adding an extra layer of excitement to the evening.

He cenado en un montón de restaurantes increíbles, varios con estrellas Michelin, y esta fue con mucho la mejor experiencia de restaurante que he tenido. Tuvimos la comida más increíble, de principio a fin. El servicio fue impecable, la comida completamente mental - alucinante y el vino perfectamente combinado con cada plato por el maravilloso sumiller. Fue una comida sorpresa de cumpleaños para mi pareja y se quedó tan impresionado que inmediatamente reservamos un viaje de regreso al Hotel Twenty Seven, y por supuesto a este restaurante, para otra experiencia especial. Muy recomendable! También nos gustó el ambiente formal pero muy relajado y moderno, incluyendo la música y la decoración.

Although I usually prefer more down-to-earth cuisine, this was top notch!!

Top notch service ! The taste and flavor is also very unique. Not something you see in other Michelin star restaurants.

We chose the two long menus, the waiters are friendly although each time a different waiter brings you a dish. The dishes are well cooked except for the wagyu, which was brought to us dry and hard. I don't know if it was something specific, although it was well presented (my husband didn't want to eat it and returned the plate). In general the dishes were good, but what they need is to put a little more different ingredients and although they are well cooked and prepared, they are all things that you eat at home (a carabinero, a turbot, a sirloin...)

What a wonderful experience we had here. The first time we ate at Michelin level, but Bougainville opened a completely new world for us. Both the service and the food were perfect, highly recommended.

Overall had a wonderful dinner. Service was excellent, atmosphere was spot on. Food was very good, wagyu was not the best but fine. Pacing was a little slow and Carolina cocktail wasn’t great. Aside from that would highly recommend for an anyone looking for a memorable evening.

I think the star is deserved. The atmosphere was nice relaxing . And a beautiful building with one beautiful location

In my opinion, the best 1-star restaurant I have ever eaten at, and it is on par with many 2-star establishments. Very nice ambiance and knowledgeable yet informal service. In terms of food, it's really amazing! No frills but very pure flavors and dishes. Great wine list and wine pairing also excellent.

Some staffs were nice but we don’t have a main waiter. The initial waitor only check with us one time and started to move to different table after we ordered a la carte menu. We’d have try chef menu set but our time did allow. The Wagyu main dish was delicious and cooked perfectly. The rest of other dishes were just okay. We tried different michelin restaurants and this one seemed to not meet the standards for both food and service. Our wine glasses were empty for more than 20mins and nobody has checked on us although there were some staff around. You can see our wines were all empty during our time having main dish. Wondering because we were Asian and not from the country? Honest feedback, we picked this place because of the great reviews and nice decorations, but won’t go back again because of this experience.

From top to bottom this is the best restaurant I’ve been to ! My wife and I ordered the 6 course dinner with wine pairing to celebrate our anniversary, I came with high expectations, and they rose above the occasion. The ambiance really flows, the service is unmatched, and every single dish of food was fantastic ! I would definitely recommend the wine pairing, the sommelier has a great and unique flight that serves as a perfect pairing ! Spent 3.5 hours here, Worth every penny

Fantastic culinary experience, top level.

Dinner at Ams is at Bougainville, a Michelin-starred restaurant located within the hotel. This is also an innovative modern cuisine that combines Western and Oriental elements. The chef takes inspiration from many aspects of Japanese cuisine, and the main dishes include Kagoshima wagyu beef, eel, and yakisoba bread. Moreover, this yakisoba bread is really delicious. The pairing wine was also delicious. Even in AMS, the sweets attack in the second half is still alive and well. From a Japanese perspective, there are too many everywhere. Thank you for the meal!

One of the best restaurants I have eaten in my life...an experience worth a visit...and it does not serve pork

Came to Amsterdam for the first time to celebrate my 38th birthday and I wanted to make it extra special with my first Michelin Star dining experience. With 23 Michelin-star restaurants in Amsterdam, it was hard to decide which one. Bougainville did not disappoint. The service and food was exquisite. Our experience began with champagne and 3 amuse bouche, which lived up to the name. The staff explained every course and how best to consume it (so there was no awkwardness on our end about fancy food). I had the vegetarian tasting menu and my wife had the Chef's Signature tasting menu. Both were phenomenal at every dish and we left feeling very satisfied. I also paired mine with the wine tasting and was blown away by the impeccable pairings and unique flavors. Our dinner lasted about 5 hours. Most people were dressed smartly, as you'd expect. I'd read that Amsterdam doesn't have a tip culture, but we added a small (10%) tip to our bill anyway.

Unbelievable dinner. Absolutely perfect. 10/10. The food was perfect and served with impeccable knowledge of each dish. The wine pairing was the added icing on the cake.

Service was flawless and atmosphere beautiful and tasteful. Food was fantastic, I are aka cart and SO from tasting menu, both meals were great. Wine list is extensive. Would love to go back in the near future.

Everyone was great - food by chef Giorgio and his team was delicious and presentation was amazing (desert with ice cream and caviar was an unexpected and delicious combination), extremely friendly and professional service by Azeddine, Lara and Silvia. Highly recommend this restaurant!

For a first in a starred restaurant, a magnificent experience in an idyllic setting, the dishes are refined and the staff attentive, in our case, my husband did not eat fish and I did not eat meat, they adapted very well to satisfy us, we came away feeling full. Little extra, great diversity and choice on the wine list.
