A beautiful place in Amsterdam. They invite everyone to eat 1 course in the kitchen. This is very special and personal! Our menu did not contain meat and there was no option to add it. I thought this was a shame. For the ultimate experience, I would have liked the combination of vegetarian, fish and meat that evening. The food was very good, but if I am very honest I expected a little more from a 2 star restaurant. I didn't have the stunning wow effect, due to very special combinations that you could never have thought of yourself. Really enjoyed a beautiful restaurant, good service and delicious food. My only feedback would be, give customers the option to add a meat dish and dare to make slightly more eccentric combinations.

We went to Flore last July and now in January we are still thinking about that fantastic experience - definitely one of the best, if not the best, fine-dining experience we have ever had. The flavours of the dishes were incredible. The atmosphere of the restautant is even better: we absolutely loved eating one course in the Chef's kitchen. A big shout-out to the Head Sommelier Antonello, who we remembered from the previous restaurant he worked at and we were so happy to see him again at Flore. It is because of him that I've truly understood the beauty of pairing food with drinks (wine, sake, non-alcoholic... Antonello does it amazingly with anything). Still remember some of his pairings today! Thank you for an unforgettable evening that we still remember and talk about 6 months later.

I booked a table at restaurant flore on New Year’s Eve to celebrate my girlfriend’s 30th birthday. I chose well! Our experience, from the service to the exquisite menu, was more than I had expected from what I had read on the restaurant. It’s a very special touch also, that for one of the courses you get to experience eating it at the chefs table in the kitchen, which is a once in a lifetime opportunity. For anyone dining there wanting a non alcoholic drink pairing, you are in luck because the effort and love they put into it is unmatched and just as important as their alcoholic pairings. The memories we have from our time spent there will be with us forever. We arrived at 7:30pm and left at 11:30pm, but only as it was NYE, we could have spent another hour there otherwise, and it flew by! This is testament to how comfortable and un rushed the time spent there is.

Classy restaurant with excellent, extremely friendly staff. We were allowed to sit at the Chef's Table in the kitchen for two appetizers. The energy and mutual enjoyment radiated from it. The dishes were very well prepared, mostly small dishes that looked beautiful. No dairy products are used, so you get coffee with oat milk. However, we did not all find the dishes equally tasty or special. Still a successful visit to this top restaurant.

Wat een top beleving gisteren in restaurant Flore, op een unieke locatie in hartje centrum Amsterdam. 6 gangen kerst menu, kundig en ontspannen team en een paar prima flessen wijn, nothing more to wish for. Natuurlijk prachtig opgemaakt, zeer smaakvolle en afwisselende gerechten. Geen rundvlees en zuivel, maar zoveel te doen met een heleboel groeten, vis en wild. In goed tempo gereserveerd. De ruimte en aankleding kan een opknapbeurt gebruiken, wat ook volgende maand gaat gebeuren. Hoogtepunt van de avond was aanschuiven in de keuken voor een van de gangen. Niet de eerste keer dat we een kijkje in een keuken mochten nemen, maar iedere keer ben ik weer gefascineerd. Heerlijk die bedrijvigheid en met name de precisie waarop dingen daar gebeuren. Ook het enig gerecht dat me me, daarom, niet zo goed meer kan herinneren. Stond al lang op de lijst, eindelijk geweest, fantastische middag gehad. Dank voor alles en sorry dat we niet betaald bleken te hebben 🙈. Goed gekomen, tot een volgende keer.

Highly recommend for all aspects! The setting is great, with a great view on the canals if you get to seat by the window. We really liked the room decoration and dishes style, simple, elegant. The service is great, everyone was friendly and welcoming, we had a great time. The food was superb - perfectly balanced between complex aromas, with quite a few discoveries - while staying familiar and approachable. No dish was too hard to understand or appreciate - the 'unexpected' was always in a good way. Every dish had long-lasting flavors. Wine/juice pairings are original and great complements to the dishes. Finally, and for me, it's the cherry on the cake: the restaurant's approach to sustainability (no farm animals, only responsible fishing and game hunting), and sourcing of its products is really something that makes it stand out and demonstrates a commitment to our planet - compared with other restaurants of this level, this is a big big plus.

I went to eight Michelin-starred restaurants in Europe for a month alone. Some of them had great food and some had great service. The taste of the food is a personal preference, but this place. flore was perfect. I am honored that this is the last of the eight Michelin restaurants I have visited. The service and food were both excellent, rated 3 Michelin stars or higher, and the wine pairing was perfect. Even if I come to Amsterdam again, I will come here. A round of applause for Chef Bas van Kranen.

Culinary bloom If you can prepare vegetables and fish at this level, you should be elevated to culinary nobility, which fortunately has happened. The two Michelin stars are absolutely justified. What an exquisite restaurant where everything is just right. Not only will you eat and drink at a very high level, its location directly on the Amstel makes it a magical visit. What made the dinner truly unforgettable for me was that I was served a course in the kitchen where I could watch how this fantastic team prepares the works of art on the board. This was very special that you could experience something like this as an individual guest. I will never forget this evening, because the kitchen and service surprised me at the end of the evening when they handed over the special bottle of champagne that I had drunk and everyone had signed the bottle with white felt-tip pen. This was not only a heart-warming gesture but also an unforgettable souvenir and this bottle now serves well as a bookend in my library.

Todo sobre nuestro almuerzo en Flore era perfecto. El personal era atento, encantador, servicial, bien informado y sobre todo profesional. El ambiente era prístino sin ser pomposo, elegante pero cálido y acogedor. La música reflejaba el ambiente tranquilo y relajante del canal fluyendo justo más allá de las ventanas. Flore: een blik op de toekomst van fine dining Wie kent niet het traditionele beeld van fine-dining restaurants; stijve bediening, uitgebreid couvert; klassieke gerechten met dure ingrediënten en zware sauzen. Wie dat een aantrekkelijk beeld vindt v een avondje uit, mijdt beter Flore in het De l'Europe in Amsterdam. De locatie in één van Amsterdams beste en meest klassieke hotels doet niet zondermeer dit frisse moderne restaurant vermoeden. En misschien niet onterecht want lang was dit de thuisbasis van het voormalige Bord'eau (*). Enkele jaren geleden heeft de restaurantcrew echter besloten eens goed naar fine dining in de 21e eeuw te kijken en zichzelf opnieuw uit te vinden waarbij Duurzaamheid (en terecht anno 2024!!) een boventoon kreeg. Het hele restaurant-team heeft besloten hun ster aan de wilgen te hangen en is On A Mission gegaan en dat is fantástisch uitgepakt. Met inventieve locaal gesourcte ingredienten, een focus op groenten, lichte ingrediënten en sustainable seafood slaagt Flore erin inventieve smaakcombinaties te presenteren die voorbij gaan aan het standaard klassiek Langoustine-AnjouDuif menuutje dat je bij zoveel Michelinboeren in den lande kan eten. En dat deze strategie een vruchtbare is, is ook in 2022 onmiddellijk door Michelin gewaardeerd met **. Zelf heb ik in 2022 al eens bij Flore mogen eten en wat me toen trof was niet enkel de geweldige menu-opbouw met verrassende, inventieve, vernieuwende en ook zeker duurzame smaak-combinaties maar ook de uitstraling van de chef en het hele team. Men heeft in Flore het licht gezien; heeft als één team de schouders onder het concept gezet en gelóóft in wat men doet. Niet alleen brengt dit een geweldige culinaire ervaring maar de hele brigade slaagt er door hun enthousiasme ook in dit uit te stralen naar en over te brengen op de gast waardoor men zich echt onderdeel van dit vernieuwende concept voelt. Recent heb ik het genoegen gehad een 2e keer in Flore te mogen dineren en enkele vrienden hier te mogen vergasten. Ik heb een zeer rijke ervaring in alle toprestaurants in Nederland maar Flore specifiek uitgekozen om hun visie en menu-opbouw in combinatie met de professionele passie van de brigade. En Flore is erin geslaagd zichzelf te overtreffen. In de voorbereiding naar de diner expererience toe heb ik het management meer dan bereid gevonden samen met mij aan een unieke ervaring voo rmijn gasten te werken en hen op een heel bijzondere wijze in de smaken en bereidingswijzen van Flore wegwijs te maken en hen dat ook zelf te kunnen laten ervaren waarbij mijn gasten niet enkel van een geweldige ontvangst en gerechten hebben mogen genieten maar ook een waardevolle insight gekregen hebben in bereidingswijzen en zelfs een bijzonder pakket hebben mogen ontvangen om zelf thuis dit te kunnen herbeleven. Een flexibiliteit en professionaliteit van het hele Flore team die ik niet mogelijk geacht had zonder een team dat écht gelóóft in hun moderne duurzame aanpak, die úitstraalt de gast hierin mee te willen nemen en dat hierin gastronomisch Nederland de weg wijst naar de toekomst van fine dining. Flore is het bewijs dat passie-en-geloof-in-een-visie de meest bijzondere ingrediënten voor tóp gerechten zijn!

Restaurant Flore is quite possibly the best restaurant experience I have personally been to, or heard of. The service is of course impeccable. All of the staff are extremely friendly, helpful, and attentive, while at the same time making you feel comfortable. You do not have to feel too formal or stuffy here, they are very friendly despite the restaurant's high class status. The food is on a next level. Every bite is a rollercoaster of flavors, with multiple tastes and textures that is unlike anything you've eaten before. If you have not gone to Flore and you are a foodie, then go!

Yesterday night I had my first dinner at restaurant Flore and it was amazing. We had the Omnivore menu with the seasonal wine pairing. It was an extraordinary gastronomic journey, beginning with four amuse bouche where I fell in love with the fried oyster in miso, then we continued with seven dishes where colours and flavours combined like magic. The main course was the lamb, it was very juicy and extremely tender. We had the opportunity to taste this dish inside the kitchen at the chef’s table and it was great seeing the chef’s team at work. The dinner closed with an amazing dessert, that combined tomatoes with raspberry, and with the friandise. Everything was perfect. Sommeliers, waiters and chefs moved lik ballet dancers in the room, incredible.

Ayer por la noche tuve mi primera cena en el restaurante Flore y fue increíble. Teníamos el menú de Omnivore con el maridaje de vinos de temporada. Fue un viaje gastronómico extraordinario, comenzando con cuatro bouche de diversión donde me enamoré de la ostra frita en miso, luego continuamos con siete platos donde los colores y sabores se combinaron como magia. El plato fuerte era el cordero, muy jugoso y muy tierno. Tuvimos la oportunidad de probar este plato dentro de la cocina en la mesa del chef y fue genial ver al equipo del chef trabajando. Restaurant Flore has been on our list for a while since we moved in Amsterdam. For my birthday, I chose to bring my wife for a full experience, leaving to Flore's team the opportunity to express their capacities on the selection of ingredients and wine paring to be combined with. "Omnivore menu" is an absolute culinary journey between fresh and preserved ingredients, with outstanding textures and presentation. Wine paring goes from Kombucha, Sake, Sherry and biodynamic wines, adding an incredible feeling to each course. We also ordered Krug 171eme by the glass, such a treat. Flore also has an extended wine list (recently awarded recognition by Wine Spectator), with big names and well chosen vintages. Staff is friendly, very professional and caring. Detailed and well prepared each time you need more info regarding items on each dish or questions on the wines. Looking forward to be there again this year.

The best thing about this restaurant was the bread. The other (extremely meager) courses had poorly matched flavor and texture, heavily focused on grassiness. We left hungry and hassled because the service was prolonged as well. Despite our clear requests upon booking and arrival at the restaurant that we finish in 2.5 hours, they failed to complete service in under 3 hours, and we raced to the airport to catch our flight. To provide context, we have eaten in Michelin restaurants for over 30 years throughout Europe and the US, and this was the most disappointing meal to date. We have allergies and dietary requirements, which were fully communicated to the restaurant in advance, but they still struggled to serve a first amuse-bouche after 45 minutes of waiting. The staff became defensive, saying they had to adapt to the diets causing the delay, but this information had been provided long in advance. They simply were not prepared. One amuse-bouche of kohlrabi with sour broth and gummy mini dumplings lacked seasoning and enjoyable texture. It was served in a partially- hollowed kohlrabi on a bed of leaves, but 95% of what was plated was inedible. We regretted not having a goat with us to enjoy most of what was served. This dish also resulted in a stomach ache for my son, leaving him in the bathroom for much of the meal and unable to eat any further courses. (More on that later!) The other amuse-bouche of a cucumber and leaf with green oily pesto was incredibly messy to eat. In general, it seemed like the chef had never tried to eat what he served because it was clumsy to eat the courses as presented with crockery and cutlery. A potato spaghetti dish was impossible to twirl on a fork and too big for the round, awkward spoon. I could go on and on about how they missed the mark on making food that was both delicious and elegant to eat. The dessert was a green, grassy dish that did nothing to finish the meal with any sweet satisfaction. The texture of swallowing leaf after leaf was wholly unenjoyable. One of the most glaring errors of the lunch was the plating of the post-dessert bite... a rhubarb custard was served in a clamshell on a bed of real snail shells. How inappropriate in general, but especially for the vegetarians in our group! As stated earlier, the only item anyone in our party would want to eat again was the bread, BUT when we asked for more, we were told that they only make enough rolls for the number of people booked each day. They managed to find one squashed piece for my son, but that was the only one left. Back to service and my son... as I mentioned, the strange vegetable combinations in the amuse-bouche gave him a terrible stomach ache, and he was unable to eat any of the further five courses in the meal. The staff NEVER asked if he was okay, despite my hinting that the food triggered his illness. They were more focused on fussing about, folding his napkin in a perfect triangle as he came and left from the bathroom. At the end, they tried to seem accommodating by offering to "make an exception for him" and serve him French fries not on the menu, but greasy food was not what a sick teenager needed. Their insensitivity is inexcusable. They charged him the full 150 euro, despite having eaten nothing because of his pain. As a point of comparison, we were at Taillevent 20 years ago, and one person in our group was ill and only eating small bites of every course. When the bill arrived, there was no charge for the ill gentleman's meal. We even enquired if there was a mistake, but the maître d'hôtel insisted that the restaurant only charged those who could enjoy a full Michelin gastronomic experience. Flore could learn something from the French. The arrogance and incompetence that we felt throughout the meal at Flore left us wondering how they maintain a 2* Michelin rating. The restaurant is oblivious to true client needs and incapable of making an exceptional dining experience. They operate in a little bubble within a luxury hotel, catering to tourists looking to be impressed by strange flavors and textures, rather than truly delicious ones.

Fantastische dinerervaring met onvergetelijke smaken en gastvrijheid Deze dinerervaring was werkelijk een beleving! De borden waren een kunstwerk op zich, met een explosie van smaken. Een onverwachte gang in de keuken maakte de avond extra bijzonder. Hier kregen we een kijkje achter de schermen en konden we met eigen ogen zien hoe de chefs onze maaltijd bereidden. De service was eveneens onberispelijk. De bediening was vriendelijk, attent en behulpzaam, en zorgde ervoor dat we ons de hele avond door welkom en gewaardeerd voelden. De ambiance was perfect voor een avondje fine dining. Het restaurant een stijlvolle inrichting en een prachtig uitzicht op de grachten van Amsterdam. Kortom, dit diner was een onvergetelijke beleving. De perfecte combinatie van heerlijke gerechten, gastvrije service en een fijne ambiance. Een echte aanrader voor iedereen die op zoek is naar een bijzondere avond uit.

At Flore you eat at the highest level, but in a very casual atmosphere. Impeccable service led by Roos Stevens and a top team of sommeliers. Antonello Nicastri came over from the Peruvian restaurant Nazka on Van Woustraat after the departure of Wouter Denessen and his original wine choices are not only surprising, with often unknown houses or regions, but above all incredibly exciting. Antonello is a jovial, cheerful, enthusiastic and consummate host and connoisseur. The other sommelier Lars Kleverlaan, whom Antonello jokingly called his son, was no less equal. We did not see the wine list. We also did not opt for the wine pairing. Instead, we were presented with 3 or 4 different choices several times with a clear explanation of the flavor profiles per bottle at the table. Very nice. A Portuguese white wine from the house As Olgas from the Douro with 13 different grapes was truly fantastic. Just like the red Le Puy from the Bordeaux region near Saint Emilion and the white Schiste from Savoie, very tasty wines, all biodynamic, that combined wonderfully with the dishes. Don't expect cheap wines (prices € 135 or € 145 per bottle). Of course there are, but if you really have something to celebrate, let yourself be tempted. I took the vegetarian Botanic menu, my table companions the Omnivore menu. Both menus cost €225. The lunch menu is cheaper at €150. The dishes look 'simple', small simple paintings, the flavors are spectacular. Bas van Kranen and his brigade have perfected the 'simplicity' of the dishes of their predecessor Richard van Oostenbrugge. On the menu you read 2 or 3 words to describe the dish, the flavors are pure, stimulating, grand, intense and compelling. I was most impressed by the eggplant with sisho and blueberries, (last year the day after King's Day I got the eggplant smoked and barbecued with blueberry juice and a vegan bordelaise sauce, really fantastic dish) the celeriac with spruce and plum , the grains, maitake and onion and finally the signature dish with vegetables and herbs mentioned above. It is amazing how you can create such beautiful flavors and textures on the plate with very simple ingredients such as celeriac, eggplant and potato. That requires craftsmanship, perseverance and endless creativity and that is what Flore excels at. We ate a course in the kitchen. We chatted extensively with the chefs there and I have already showered them with compliments. The main language is English because it is a hodgepodge of nationalities, but there were also a few Dutch-speaking chefs walking around. At that time, Bas van Kranen himself had already descended to his lab, one floor below, to work on the undoubtedly spectacular menu that will be served in 2 weeks. In all those years, for the first time in 1986, I have occasionally eaten at Excelsior/Bord d'Eau/Flore. It has never been as good as it is now. Flore has 2 * Michelin. I don't know why the 3rd * won't be added in the foreseeable future. This is dining at the highest level! Not cheap, and you understand that when you work with more than 150 suppliers, a kitchen brigade of 14 chefs, and at least 6 more in the restaurant for about 30 guests, but a great experience that I can heartily recommend to everyone!

Came here on a quiet Thursday evening alone. The staff cared a little extra attention and that made me feel like I wasn’t truly alone. I went for the vegetarian menu with an exception of the duck as a main course. The food was truly amazing and the wine pairing was exciting and very well thought out. Absolutely loved the food here. We went in for a vegan lunch here and the food was amazing. They were able to accommodate vegans no problem. The service was also really good, and we were treated really well despite wearing casual clothing (shorts, etc). I don't think there was a bad course. Dinner at Flore. On a quiet Friday evening, everything was done to please us. Chose the omnivorous menu without game. Amazing opening with appetizers and first dishes. Invited into the kitchen at the chef's table. The kitchen is an oasis of traditional tranquility with smart, contemporary chefs. Accessible too. Seen many restaurants, we are very open to plant-rich menus. Especially the first 2/3 of the menu was perfect. What quality. Can you still wish for something? No matter how strongly we embrace the choices, we miss the cheese at the end. Despite the great view of the water, there is contemporary room for improvement regarding the interior and the music. The interior is stylish and neat, but nothing more than that. The music misses an open opportunity to make it more 'cosmopolitan going out'. This is the place, what a service! From the start till the end you wish there is no ending. Because the staff can surprise you every moment. Delicious diner and combinations, it is a true magic moment to combine this with the wine. So please ask the sommelier for the best wine in combination with the diner. A very solid middle of the pack 2 Michelin Stars restaurant. Not the best 2 star, not the worse, but for the price (also dependent on exchange rate if you're from outside EU like we are) you do get what you pay for and arguably a bit more Food: Food was generally well thought out and executed, although nothing too innovative or wows you. The bread / pastry and dessert were a bit weaker than expected. The chef's table course (where you get invited for a course at the kitchen) feels a bit forced. You simply get sat down at the kitchen, given a short explanation for a course and get led back to your table. Not very interactive or interesting Service: Service was attentive. Some dishes weren't explained clearly - as each server had a slightly different (English) accent and some spoke way too quietly. One of the waiters had a huge grin on his face and was very, very enthusiastic and animated. I think it was funny/okay but some might find that a bit uncomfortable to deal with at a dinner. Overall I was happy with the service from start to end Atmosphere/ambience: The view was amazing if you get a table by the window as you see the canals and boats passing by. Tip: Do arrive early and spend some time outside taking in the views and take a few pictures!

Staff very cordial, nice location, the main course is served in the kitchen which I believe is a brilliant idea. About the food, I feel like there is a higher focus on the process/having the most complex preparations rather than on the taste of the dish itself, which for some courses was left behind. Food pricing is adequate, wines are expensive.

A restaurant worthy of their 2 Michelin stars and 2 green stars. Service is impeccable, first and foremost (something that is, unfortunately, rare in Amsterdam and The Netherlands). From the synchronisation to the attention to detail, the staff is topnotch. Kitchen crew is also funny. And of course the food! My favourites were the cuttlefish “noodles”, the dry-aged seabass, and the 25-vegetable dish (available for all their seasons). Definitely worth a visit. Next time I want to try their veg menu.

We dined here in September 2023 and tried both the Botanic and Ocean menus. Sorry to say that we found the food pretentious, cliché, and redundant – so many, many foams, custards, and dashis… I remember everything being served lukewarm or cold; after a while I was really yearning for a nice hot meal. As our “last hurrah” meal in Amsterdam, we left disappointed and in need of something sweet (the nori-buried dessert on the Ocean menu did not satisfy.) Service also seemed overwrought. On the one hand, it was nice have a tiny side table for my purse, but there were so many servers it was hard to have a relationship with any of them. The woman whose sole job it seemed to be dispensing water was so nervous she overfilled my water glass, leaving our table with a huge puddle for the rest of our meal. Huge positive: they did accommodate my request to have a window table for our special dinner and the canal view is wonderful, very entertaining for your 3+ hour meal. And they were very gracious about letting do single glasses of wine instead of full wine pairing. But in the end, the experience really did turn me off the whole “fine dining” thing, hopefully not for good. Find something better in Amsterdam and then please tell me about it.

You can see the upgrade from 1 michelin star and 2. The experience is 3-4 hours and they explain you in detail all the ingredients and processes, add to that a serving of wines and the sommelier will impress you with each drink. We really enjoy it, my only advice is be patient is a whole night experience. I love it! Enjoy a once in a lifetime experience.

Really really great experience. The menu is absolutely imaginative and elevated. I can see how some of the dishes would lean towards a more eccentric palette so be ready for your taste buds to branch out a bit. The wine pairing was excellent, the service was the BEST we’ve ever had (sampling overall 5+ starred restaurants ranging from 1 to 3 stars and many that could be). The food was very very good. It is a close second to the best dining experience we’ve ever had (please read that as a compliment). We really had no negatives at all, everything was presented perfectly and the ingredients were incredibly fresh. Absolutely worth the visit!

Very nice location within the hotel. Good views over the water in front of the hotel. Food was very nice, using a lot of locally sourced ingredients. They do offer a full vegetarian menu as well. One of the dishes I enjoyed most was the crayfish, which is an invasive species in the Netherlands. Did not know that they actually tasted good.

Bei dem Restaurant Flore handelt es sich um ein sehr gehobenes Etablissement im fünf Sterne Hotel De L‘Europe, welches nicht umsonst mit zwei Sternen (+ einen grünen) im Guide Michelin aufgeführt wird. Das Ambiente ist sehr edel und der Ausblick auf den angrenzenden Kanal traumhaft schön. Das gesamte Serviceteam sorgte sich bestens um das Wohl der Gäste, verfügte über hervorragende Kenntnisse zu den einzelnen Gerichten und konnte auf Sonderwünsche ohne Probleme eingehen. Wir hatten dort das Signature Lunch Menu, welches aus fünf offiziellen Gängen bestand und durch einige Amuse-Bouche ergänzt wurde. Die einzelnen Kreationen überzeugten alle für sich und glänzten mit hervorragender Balance zwischen Säure, Süße und Bitterkeit. Der saisonale und regionale Bezug war deutlich spürbar. Insgesamt bekommt man hier ein sehr gutes Preis-Leistung-Verhältnis für eine Küche auf höchsten Niveau, insofern kann ich es jedem nur wärmstens empfehlen.

This was one of a few times I’ve eaten at a 2 star Michelin restaurant so I expected nothing but perfection and that is exactly what we got in almost every area. The food was delish and fresh and every course was better than the last. The service was out of this world and such a well oiled machine. We loved the part where we were brought back to the chefs table area too such a nice touch. The ONLY major downside I would give this (fully well understanding the length of some of these meals) was that it just felt way too long as the entire dinner experience was over 3.5 hours in total.

Restaurant Flore 难得找到个不是奶呼呼的米其林,荷兰也能算是北欧,没有奶制品的餐食做的真不容易,并且我们四个人,点了三个海鲜餐,一个纯素,搞得一桌子各种复杂的东西,这家餐厅不仅不用奶制品,还不用肉类,说是养牛会排放太多二氧化碳,不环保……总之荷兰人丹麦人等等,在环保这件事上有非常多的道理和措施…… 于是他们用了很多杏仁奶,豆奶等,一些酱汁用鱼骨乳化,加入了日式的调味,菜做的很有道理也有仪式感,套餐并不贵180多欧一个人,我们四个人加上茶水和部分酒,以及开瓶费100欧,总共买单1200欧,在上海是吃不到的这个价格,阿姆斯特丹的米其林2星基本在酒店里,我们给他算了算,如此高的人工租金等费用,只有酒店可以承受,所以米3都在各个小镇上,个人很难支撑运营,相比华尔道夫里的Spectrum,这里的滋味好太多了,Spectrum小名Librije‘Zusje,原因是当地最老的米3叫Librije,他们的厨师是Spectrum的老师,为了吃Librije我曾经跑到农村去,还住在那里,搞得半死,也不好吃😂😂两家都不好吃还这么出名,也是难得……

Let’s walk you through the whole experience… please consider that I’m a critical person who worked in the service industry. I’m not super rich but just a hardworking person who loves food. The staff is correct and friendly and international but they don’t ask if you speak English, they just head on. The staff is horribly dressed with ill fitted suits and the shoes are supposedly privately owned which you can see. The interior decoration is boring, yellow carpet, boring linnen and dito porcelain. It lacks any personality. Whille the staff is continually talking about the local ingredients etc, the environment is 1 in a dozen, totally impersonal. The menu is vegetarian and that is admirable, but…. nothing has a wow or zing, nothing stands out besides of the bread and the sauce that comes with this dish. Dish after dish with ingenious ingredients, prepared in many different ways but I had not a single moment of woww or zing or tears in my eyes like I had with, for instance, Martín Berasategui in San Sebastian, Spain. Fermentation and all those very complicated ways of preparing dishes maybe very imposing to some people but a nice crunchy cookie with my coffee would have done miracles for me. Last but not least: I’m a very small woman but I left hungry…

Атмосфера неуютная, было очень шумно и напоминало скорее бистро, чем ресторан с двумя звездами. На месте нас ждал неприятный сюрприз, в ресторане в наш день подавали только овощной сет, при бронировании об этом не было ни слова. Некоторые блюда были достаточно вкусными но не могу сказать, что что-то было запоминающимся. Некоторые блюда были слишком солеными. И почти во всех блюдах был уксус, вкус некоторых блюд это портило. Также мы брали безалкогольное сопровождение и первые два напитка были вкусными, но в других пяти везде был уксус. Кажется это очень странно добавлять уксус в напиток, пить это невозможно. Сервис на высоте. Но еду ждать приходится очень долго. На ужин из 7 блюд понадобилось 2 часа и 40 минут.

The wine list was awesome in every respect. It was not just expensive wines that everybody knows, it leaves you with a wide range of excellent choices, depending on personal taste and financial freedom. As a Sommelier I am always looking out for rare pieces and a 1996 Clos de Coulée de Serrant (Nicolas Joly) and a 1995 Hermitage (Guigal) for very acceptable prices were such treasures. Outrageous and almost unbeatable. Worthy of 3 Michelin stars. We were allowed to visit the wine cellar and if you know the grape varieties of the 2 wines I mentioned earlier by heart, you will appreciate visiting it. The food - we had one omnivore and one botanical (= vegetarian) menu - also easily lived up to the 2 Michelin stars. Apart from food and drinks, the atmosphere, the view out of the window, the refreshing idea of offering to enjoy one course at the Chef´s table and last, but not least, the passion of the staff, service and kitchen, was the cherry on the top. Easily one of our best 3 experiences in Michelin Star restaurants ever - and we have already seen a bunch of them and never forget that it takes an awful lot of work to be awarded one star, let alone 2 and keeping them.

Tough one to score, but let me explain. Everything was impeccably orchestrated, the food the wine the service all tip top. We even saw the service staff tested with a medical emergency a few tables over and they were unflappable. Simply excellent all around. I feel bad saying, and I want to be clear this is a “me” problem: I didn’t like the menu. That’s a hell of a first-world problem, I know. To be clear: It was executed perfectly. The wine pairing handily impressed and dethroned our experience at another 2-star place. The snail and oyster soup was one of the most incredible dishes I’ve had anywhere in the world. There were bright spots, but it was overall unbalanced. What I mean is that the whole menu was heavy and rich. By my estimation, far too much of a good thing. Savory richness on savory richness. Even the dessert course was heavy and savory. Hibernation inducing dairy and butter and oil richness on nearly every plate. By the end I was craving a lemon popsicle just to cut through it all. I’ll be happy to revisit, but perhaps I’ll wait for a summer menu to add some levity to the dishes. Five stars.
