Tough one to score, but let me explain. Everything was impeccably orchestrated, the food the wine the service all tip top. We even saw the service staff tested with a medical emergency a few tables over and they were unflappable. Simply excellent all around. I feel bad saying, and I want to be clear this is a “me” problem: I didn’t like the menu. That’s a hell of a first-world problem, I know. To be clear: It was executed perfectly. The wine pairing handily impressed and dethroned our experience at another 2-star place. The snail and oyster soup was one of the most incredible dishes I’ve had anywhere in the world. There were bright spots, but it was overall unbalanced. What I mean is that the whole menu was heavy and rich. By my estimation, far too much of a good thing. Savory richness on savory richness. Even the dessert course was heavy and savory. Hibernation inducing dairy and butter and oil richness on nearly every plate. By the end I was craving a lemon popsicle just to cut through it all. I’ll be happy to revisit, but perhaps I’ll wait for a summer menu to add some levity to the dishes. Five stars.

We particularly enjoyed the quality of the products - the langoustine - and the same for the scallop - great quality products (and huge!) that are perfectly cooked and accompanied - those were really memorable. Same goes for the herring, the sole, and snails. The finishing chocolates that are based on the actual meals is a very smart and well executed thing. A minus which is the reason for not rating 5/5: to me it looks like the chef is trying to show-off technical mastery : For the bergamot desert - besides the wow-effect of eating snow that tastes like bergamot- I didn't find it brought as much to the taste as to the technical demonstration (the very bitter bbq'd eggplant isn't well balanced). Same goes for the black truffle entry - hidden below a transparent sugar ball - beautiful, technically impressive - but the mix sugar/black truffle/codium just doesn't taste that good - at least that's my opinion. The pigeon also featured this kind of artifact. The duck liver is beautifully hidden inside of it - and it's coated with an almost-invisible pigeon-liver foam. Technically impressive, but the heavy taste of the pigeon liver foam overwhelms the flavours of the duck liver. And the transition from two very low-sugar deserts to an extremely sugary (with additional honey!) Basque cake was too abrupt. Don't get me wrong - dishes are above-standard, and we finished every last bite - but to me the technical demonstration took its toll on the taste of some of the dishes and on the overall tasting journey. The setting is really great - and the service is also great.

Desde el momento en que mi esposa y yo entramos, nos encantó el entorno refinado y el personal atento, que nos hizo sentir completamente a gusto. Desafortunadamente, nuestro entusiasmo tomó una picada una vez que llegó la comida. Está claro que el chef está tratando de superar los límites, pero el resultado se siente menos como innovación y más como confusión. Los platos presentaban combinaciones de ingredientes que parecían completamente en desacuerdo entre sí, creando sabores que iban desde desconcertantes hasta totalmente desagradables. A veces me preguntaba: “¿Qué diablos acabo de comer?” Peor aún, algunas picaduras me marearon mucho. Incluso el postre de chocolate, un plato que debería ser casi imposible de estropear, es decepcionante. Cómo uno logra arruinar el sabor del chocolate está más allá de mí. Lo único que era remotamente agradable era el pan, pero gastar 500 euros en pan es difícilmente justificable. Para ser justos, la comida es subjetiva, como el arte. La cocina de Spectrum sin duda tendrá admiradores, pero para mí, se sintió excesivamente forzada e innecesariamente experimental. Si el chef se centrara más en los sabores armoniosos que en el valor de choque, creo que la experiencia podría mejorarse enormemente. Al final, Spectrum es el tipo de lugar que amarás u odiarás. Had a fantastic evening at restaurant spectrum for our anniversary celebration. As we arrived a bit earlier, we were escorted to the bar and had a delicious cocktail. Then our 7 course menu started with a champagne and amusements followed by second to none breathtaking dishes prepared by syndey schutte who we also met in the kitchen. One would figure that a 2-star Michelin restaurant would be pretty good, but Spectrum was a revelation. The spacious dining room leaves plenty of room between tables, leading to a relaxing and luxurious experience. It's a set menu (choose either vegetarian or not), but every dish was amazing. I had a cocktail, which was top notch. They served my wife a stale glass of champagne, but when we reluctantly complained, they fixed the problem immediately, and then apologized multiple times. Service is very professional. The prices are high and the portions are minuscule, but the quality of everything was exceptional. This is now my favorite restaurant in Amsterdam.

Sublime restaurant. Superlatives fall short. Perhaps the best restaurant in the Netherlands. In any case, top three in the Netherlands. This restaurant really has it all: delicious food with special ingredients and everything presented spectacularly. Staff who use etiquette perfectly but are not stiff, but extremely friendly and approachable. A chic but comfortable ambiance in an excellent hotel in the center of Amsterdam. We will definitely come here more often!

Over the past years, we’ve frequented many Michelin-starred establishments. During our latest visit to Amsterdam, our dining experiences included Bougainville, The White Room, Spectrum, Ciel Bleu. **Food** The dinner commenced promisingly with two distinct interpretations of Dutch shrimp. The first, a rich and harmonious blend of shrimp and black pudding, offered delightful contrasts. The second, featuring creamy macadamia and a sharp pickle, provided a refreshing counterbalance to the shrimp's sweetness. Unfortunately, the "Snail" dish fell short with an overly tough texture that overshadowed its flavors. The "black truffle | codium" was visually striking but failed to impress taste-wise. The "Basque Cheesecake" was a disappointment, as the truffle and honey overpowered the delicate cheesecake flavor. The Blue Lobster was a visual masterpiece that fortunately delivered on taste as well, impressing with its richness and complexity. Both the "Langoustine" and "Duck" courses were exceptional, showcasing peak ingredients and skillful preparation. The vegetarian "Watermelon" dish was an absolute revelation, showcasing the chef's brilliance in transforming humble ingredients into a culinary masterpiece. I'm consistently impressed by vegetarian options and believe they truly test a chef's creativity and execution. I appreciate Spectrum's ability to strike a balance between innovative dishes that push culinary boundaries and classic foods that guarantee satisfaction. This approach ensures a diverse and enjoyable dining experience for all. **Service** Spectrum has always been renowned for its impeccable service, but our recent experience elevated it to extraordinary levels. The bottle we ultimately chose was not only exceptional but also a rare find, as it was the last of its vintage. This added a touch of exclusivity to our dining experience. **Ambiance** Spectrum boasts a classic, clean, and spacious French-style ambiance. The space is inviting and encourages lingering, offering a perfect balance of intimacy and connection with the surrounding environment. **Value** Spectrum occupies the higher end of Amsterdam's already expensive dining scene. While the restaurant's innovative cuisine, and impeccable credentials justify premium pricing, it faces stiff competition from other establishments. However, these competitors often fall short when it comes to the level of service Spectrum provides. Considering this, Spectrum offers good value. **Verdict** Spectrum offers a commendable culinary experience, with a fair price point and an exceptional atmosphere. While individual opinions may vary on the food and overall value, the service is unequivocally and consistently outstanding. For these reasons, Spectrum earns a five-star rating in my book. What a party in the basement of the Waldorf Astoria. The highlights of the 9-course tasting menu: the buckwheat, what a taste and what a balance. The generous pieces of black truffle accompanied with codium, felt seaweed, extraordinary and served in a cracking ball. The lobster and the langoustine, technically perfect and the cooking of the langoustine in particular really wow. We couldn't choose between the duck and the lamb, so we got both. The addition of epoisses was also spot on, perfectly refined and subtly balanced. The 1st dessert of "green" was super surprising and did what it promised, fresh, sour, sweet, texture and a great example of how modern top chefs transform individual ingredients, which you do not immediately think of as a dessert, into a fantastic introduction to the conclusion of an extraordinary meal. What you can expect at this level is excellent service and that is what we received. As it goes, there was a lot of attention and the team felt the atmosphere at the table perfectly. Excellent wine arrangement to match every course, sometimes with bold choices and distinct flavors. What struck me personally was the rhythm of the menu and the service, which approaches perfection without you as a guest feeling the effort that the entire team has to make to achieve this. Could anything be better? Of course, if I had to be critical, I thought the lamb was less successful. Super daring and experimental to combine lamb with preserved sardines. That worked a bit with the slow-cooked neck but not so with the lamb fillet. Where the chef and his team excelled in harmoniously bringing together flavors and textures throughout the menu, they were simply less successful here. Michelin does not have to look long if a third star needs to be awarded in the Netherlands, this team would deserve it.

The impeccable service from the moment I walked in set the tone for an extraordinary evening. Chef Sidney Schutte's masterful creations, paired perfectly by Cas, the restaurant operator, showcased the Michelin-starred excellence of this establishment. The minimalist, white decor created an unassuming canvas that allowed the vibrant, creative, and impressionistic presentations of each dish to truly pop, reminiscent of Dutch masters like Vermeer and Van Gogh, whose brilliance lies in the details and the interplay of light and color. Every plate was a masterpiece, from the intricate amuse-bouche to the show-stopping desserts that offered a delectable conclusion to the meal. However, the Blue Lobster, despite its vibrant presentation, was a rare miss. The flavors didn't quite come together as expected, and the caviar, which should have been the star, was lost in the mix—a wasted opportunity in an otherwise stellar lineup. Recognizing my disappointment, the team promptly provided a customized palette cleanser before the next course. The strawberry yuzu sorbet was a delightful interlude, offering a refreshing burst of energy that perfectly prepared my palate for the subsequent duck dish. This thoughtful touch was greatly appreciated and demonstrated their commitment to an exceptional dining experience. The entire front-of-house team delivered a seamless, coordinated performance. Water glasses were magically refilled, wine was topped off just when it was needed, and they guided me to the restroom, ensuring I returned to a pristine setting. Their attentiveness and precision never faltered, making the dining experience smooth and enjoyable. In sum, Spectrum is a must-visit for anyone seeking a top-tier dining experience in Amsterdam. Food was decent, although not noteworthy at the price point and prestige. Bread and blue lobster were great though. Service was quite slow, we had specifically requested increased pace on the serving time but ended up sitting for nearly four hours anyhow. Took half an hour at times to get drinks, and we explicitly needed to request the wine menu. Team seems very kind and made up of wonderful individuals, but lacks finesse and coordination.

Fui a Spectrum el sábado 15 de junio. 2024 . Ya que esta es la última de mis visitas estelares al restaurante para este viaje, voy a resumir mis experiencias recientes. Había ido a dos 1 * s en casa en Atlanta justo antes de este viaje, además de los restaurantes de cuatro estrellas que he visitado en este viaje. En los últimos 18 días, he estado en seis restaurantes con estrellas. El número total de diferentes restaurantes con estrellas en los que he estado ahora es de 37 con varias veces múltiples (tres de los restaurantes incluidos en los seis eran repeticiones). Antes de que comenzara mi servicio, pero después de que se sirviera un poco de pan desmenuzado, nadie desmenuzó mi mesa. Fue molesto que el primer plato se había servido en migas, pero asumí que el personal profesional en un 2 * notaría inmediatamente las migas, e inmediatamente lo abordó. Me equivoqué. Después del tercer plato moví el camarero y probé un pequeño experimento. Le pregunté qué le pasaba a mi mesa. Estaba confundido. Ten en cuenta que mi casa estaba cubierta de migas. Se lo expliqué. Pregunta si hay otras cuestiones. Interpreté eso como: “¿has notado algo más?” Entonces, respondí. Uno, fue que me vi obligado a pedir agua dos veces. Obviamente, se trata de una cuestión de formación. La otra fue que los vertidos de degustación fueron ridículamente pequeños, particularmente en el último plato. El tipo se puso beligerante y dijo que yo ordené el “pequeño vertido”. -Sí. Un vertido de sabor es de 2 oz/ 75 ml, no de 1/4 oz. La comida era muy buena. Tengo muy mala memoria —gravemente, daño cerebral severo— pero recordaría cualquier cosa “sorprendente”. Algo sorprendente siempre ha sido mi estándar para un 2 o 3 estrellas. Tal vez, me he vuelto difícil de impresionar. El espacio en el restaurante es enorme, por lo que hay un espacio increíble entre las mesas. Sin embargo, encontré la decoración sosa ¿Recomendaría Spectrum? Estas son las gradaciones: 1 . ⭐️⭐️⭐️⭐️⭐️ We had an extraordinary dining experience at Spectrum in Amsterdam! Opting for the non-vegetarian menu, we were treated to a delightful 7-course meal. Each dish was a symphony of diverse tastes and flavors, showcasing the chef's creativity and expertise. For the main course, we had a choice between duck and lamb and decided to try both. An extraordinary foie gras served with the duck made the experience unforgettable. Both were perfectly cooked and exquisitely presented. The Chablis wine Clos Beru 2018 paired perfectly with our meal, enhancing the overall experience. The ambiance and service were exceptional, making our evening truly memorable. Highly recommend Spectrum for anyone seeking a culinary adventure in Amsterdam!

This review is a year late bec we were there in April of 2023 for the tulips season. Amsterdam does not have 3 star Michelin restaurants but they do have 2 stars and Spectrum is one of them. Located on the ground floor inside Waldorf. We were surprised how good each dish was from start to finish. I remember there was a veggie dish that was supposed to taste like a steak and it actually did and was surprisingly very good; no clue how that was even made possible! We would definitely eat here again!

@lydieats 💕 A two Michelin star restaurant located in the basement of the gorgeous Waldorf with a garden view so feels private & intimate without being stuffy. Has the classic white tablecloth charm but the cooking is more contemporary and the team is great at welcoming you. As expected from hotel fine dining, service is exceptional and a fantastic experience overall! Dinner starts with a creamy white asparagus dish followed by two versions of Dutch shrimp. Kinda salty but paired well with their sig cocktails 🥂 First course is a crab dish with a bergamot meringue topped with freeze dried foie gras. Super interesting textures, the floral soft crunch & metallic icy powder contrasts well with the mushier (?) crab and eggplant base. Then my favorite part of dining - the bread 😍 First round is a toasted brioche that’s simply a buttery delight. We get another interpretation of white asparagus. Lighter this time with strawberry and tonaka beans with a carmelized parmesean globe. I rly enjoyed this but thought the fruit to be too mushy? It felt a bit off in contrast to the asparagus crunch so maybe grapes/apples would have been better & the globe was kinda thick so it overpowered the dish. Rly sharp shards too. But this was one of my fav from the night 💕 Another round of bread - two loaves of country bread with Jersey cow and carmelized goat butter (so stinking good). Crunchy on the outside & soft insides. I had to stop myself from finishing the whole loaf and you should too bc the dinner is just starting. Here we have a gorgeous beet marinated scallops on top of eel & truffle cream. Kinda confusing together but loved the scallops by itself, fresh and slightly sweet. The sepia was another fav 😋 Super tender and the peanut sauce & goat cheese combo was very interesting! Langoustine is quite rich and covered in a chipotle/kombu marinade that’s quite strong in flavor. The pickly sourness from the lions mane mushroom rly helped balance it out. We were STUFFED by the time we got to the duck. That being said, done very well. Peking style so has the crispy skin & tender meat. It’s served alongside a rich herbal broth with some kind of foie gras ball that popped. Desserts start with a pumpkin creme wrapped in carrots. I hate carrots so I wasn’t a fan but the next green sorrel dish?!!! This was THE best dish of the night 💯 Rhubarb wheels with white chocolate mousse, fennel, and wheat grass juice. It’s simple yet complex and just so SO refreshing. Such a smart dish. Bravo 👏 Then we get a chewy bite filled with calamansi followed by a table side plating of a truffle basque cheese cake. Both a tad too heavy tbh. Finally, some gorgeous bonbons. They are created using the ingredients from different dishes so you can try guessing which one it is! Cute & fun ending to our 4hr dinner. 🌷Tasting Menu €250 A four-hour dinner to celebrate the holiday! Michelin two-star Spectrum located in the very pretty Waldorf. I was a little worried because it was in the basement, but it didn't feel stuffy because it had a garden view. The interior itself has a classic and old feel, but the dishes are modern. As expected from a luxury hotel, the service is the best 💯 The course is heavy. It starts off heavy and I become more and more reluctant to eat it, but I think it will be okay when paired with wine. There was a lot of food, so I was almost full during Oricos. The bathroom is far from the dining room, so it's good for digestion and escape 😂 The best dish of the day was the rhubarb dish that came as the second dessert! Wajeon is green, refreshing and fragrant. It would have been better if this had come out earlier. If you read the reviews here, there is a lot of talk about the vegetarian course. Next time I go, I want to try that.

Many months after visiting this restaurant I’m still telling everyone how spectacular my experience was at Spectrum Amsterdam. Spoiler alert: this was hands down my favorite restaurant experience of 2023 in Amsterdam. This is what I tell everyone: 🥷Service (10/10) I rarely give a 10/10, but the service was impeccable. Right when you walk into the Waldorf Astoria Amsterdam, where you'll find restaurant Spectrum, the service kicks in. They took my coat and led me to the bar for a drink. I forgot my phone in my coat, No problem. They didn't make me go back for it. Just asked which pocket it was in and brought it to me. Amazing. 🤗What was interesting is that at the time they were working with a few “new” team members. If they hadn't told me, I would have never found out. Compliments to the people who trained them. Fun fact, the junior sommelier was 18 y/o. 👀Adding to the amazing experience, we got an exclusive peek of the kitchen and wine cellar. Thank you to the team for this amazing add-on experience… 🍴Food (10/10) We took the regular tasting menu and the vegetarian tasting menu. Both were incredible, but the vegetarian menu was my favorite. The food was very experimental, but with recognizable flavors. If you’re a foodie, you will LOVE this restaurant. A lot of the dishes shared a common thread, which was sweet/savoury/sour. I made me think of Asian food. 😍The dishes that still to this day stuck with me: - (Vegetarian menu) Mashed potato (literally, kitchen staff comes to your table with a hammer and mashes the potato) with freshly shaved white truffle, cinnamon and egg yolk - (vegetarian menu) WATERMELON with lemongrass, tomato, horseradish, pistachio, mint - It made me think of a croissant because of it’s shape - (vegetarian menu) - Chocolates: they made chocolates with a reference to a few of the dishes we ate that night. It even came with a card. We treated it like a little game. SO FUN! 🥂Drinks (9/10) I started with one of their signature cocktails, Tulipa. It was a foamy mildly sweet cocktail with vodka, rhubarb amaro, grapefruit juice, elderflower, aquafaba. I loved it. For the wine I chose a classic Meursault from 2019. First glass missed some body, but after some oxygen the acidity lowered and the oak and butter came through. Tip: give it time to air. Later I wanted a pisco sour. They had it and let me choose what pisco I wanted to be used. The pisco sours were too mild for my taste, but the fact that they cold show me 2 types of Peruvian pisco's warmed my heart (since I am partly Peruvian). Another surprise effect. 💫Atmosphere (8/10) The restaurant is in the basement of Hotel Waldorf Astoria. It is intimate as it only hold around 10 tables. The interior is very minimalistic. I typically don’t like that, but since the food is so experimental, I understand that an other interior might give an overwhelming feeling. I think it’s well though through and balances the overal experience. Conclusion (9,3/10) ⭐️⭐️⭐️⭐️⭐️ Wrapping up, Spectrum Amsterdam is more than just dining; it's an unforgettable experience that still has me raving months later. The innovative flavors, attention to detail, and personalized drink selections just added to the magic of the evening. Fun fact: we had so much fun we were the last ones at the restaurant... (see last picture lol) It's EASILY my top Amsterdam restaurants of 2023. Here's hoping it gets that third Michelin star it so clearly deserves. ⭐️⭐️⭐️ I'll be back soon!

An amazing experience. We've eaten in many nice restaurants and hotels in different countries, and the Spectrum is amongst the absolute best. Food was amazing and the service was even better. Every single member of staff in the hotel and restaurant was very very attentive. It's all the little touches... such as our card, the tulip syrup gift, and even complimentary umberellas because it was raining when we left the hotel! Highly recommended if you are interested in trying an extensive taster menu and being looked after by exceptionally caring staff.

outstanding level of service. most of the food was very good as well. i really liked the watermelon course. i guess i didnt care for the red cabbbage based final dessert (red cabbage is great as a side dish but seems less so as ice cream or what they made out of it). its a lot of money but if you really want the best service this is where you go. they even give you something to remember them. it was better than our other 2* experience at parkheuvel.

Oh wow! I have never spent 4 hours in a restaurant. Definitely the most different and possibly the most memorable meal I have ever had. Each dish is cold which I was not expecting. Lots of sea food so be prepared if this is not your thing.Razor clam was delicious. Some unusual textures and tastes. 11 dishes served in total. Service was impeccable. A stool for my bag was a nice touch that I have only ever experienced at Ramseys in Chelsea. A must for any foodie whilst in Amsterdam.

Hands down, the best restaurant in Amsterdam. I have tried all two star restaurants in the city, and almost all 1-stars and would say that Spectrum is a class of its own. I truly cannot tell why they have not received a third star, as in my opinion they are at par will other 3-star restaurants I have visited, if not even better than some. Impeccable service and attention to detail. The chef’s ability to bring out the best in the dishes is exceptional, where even ingredients I don’t normally love such as duck or liquorish truly shine. We felt really spoiled and surprised, particularly when it came to the desserts. Truly a memorable experience.

We had the pleasure of dining at Spectrum in Amsterdam. I don’t usually go for the vegetarian menu but this vegetarian menu was intriguing and I am very happy we made this choice. Service from start to finish was perfection. Nestled within the Waldorf Astoria one would expect the typical pretentious Michelin restaurants I find are quickly checking - something I gleefully welcome. Spectrum was friendly and approachable yet still refined with an upscale vibe which we very much enjoyed. The menu was so creative and not just in description but in execution which, as I mentioned, with a vegetarian menu is very difficult to accomplish. Among our favorites were: Green Asparagus: perfect balance of flavors, textures and beauty. Celtuce: cannot even describe the magnificence of this dish. Every bite was different and completely unexpected het somehow homey and comforting altogether. Watermelon: my personal favorite. Wow. Cruncy. Fresh. Comforting and heavy yet also light and uplifting. Beautiful plating but the masterpiece were the horseradish pearls. Wow. Persian Lemon: one of the best desserts I’ve had at a Michelin meal. I find that it is very difficult to find creative yet decadent, delicious and beahtiful desserrs at many Michelin restaurants - you either get one or the other (many times neither) and, rightfullt so, bringing a complexity of flavors and feelings that come together in perfect harmony is a very difficult task. Spectrum has managed to create a dessert that is visually appealing and intriguing yet also matches the impression of the eyes through taste. Bravo. Lagniappe: at the end of the meal we were given truffles with flavors from dishes we had tasted. Now, I normally don’t love this but these were outstanding and it was such a fun and creative way to remember each dish we had. I am mad at myself for losing the menu with the colored guide because it was so whimsical. Worthy mentions: Black Truffle: while the creativity was there, something was missing to make this dish a star. Delicious, sure. Beautiful, absolutely. Did I think about it days after? No. Amsterdam “Dame Blanche”: I loved the playfulness of this dish considering you wouldn’t expect a fine dining restaurant to give you a marijuana leaf shaped chocolate. It was unique and definitely memorable and a nice ode to Amsterdam. Misses: Shiso: this dish was oversalted and almost inedible. Beautiful to see yet a complete miss. I hope they edit this dish because I was very surprised and had the rest of the experience not been outstanding, I would’ve been very upset to have been served something nearly inedible. We had a marvelous time at Spectrum. Sure it was almost a four hour meal, but it was fun. It was eye-opening. It was beautiful and it was a delight to our senses.

The best restaurant experience we have ever had. My wife and I have been doing a Michelin star restaurant tour over the past couple of years. Spectrum, in our view, presented us with a fabulous meal, where dish after dish would exude creativity, presentation, and a taste. The staff were professorial and playful. They accommodated our allergies the chef improvised on the spot but swapping out certain ingredients. Highlights include the watermelon/mint/tomato dish, the cockles, the sepia, venison, the and chocolate/weed (non THC) cake. A non-pretentious setting, great quality ingredients, amazing textures, just the right quantity, extraordinary tastes, and a great staff. If you are in Europe, this place is worth being a destination.

When I visited Spectrum in October 2022, it didn’t live up to my expectations. After leaving a review, the manager reached out and very kindly offered to invite us again so we could try Spectrum one more time. Besides apologizing for some confusion that happened on our first visit, the restaurant actually implemented some changes and showed that they listened to our experience. This made us feel heard and appreciated and it showed a certain maturity to improve after mistakes. The food was delicious and balanced. I think some if the dishes were a bit large, and their supposed signature watermelon dish wasn't my personal favorite. The appetizers and desserts were the best dishes of the night and deserve the most praise in my opinion. I'm very happy we were invited back and we had an amazing evening. The service was wonderful and I truly appreciate Spectrum's attitude to embracing and incorporating any type of feedback.

When we first paid a visit to Spectrum, it didn’t meet our expectations and we were disappointed, but the manager very graciously offered us an invitation to try Spectrum once more. We had a lovely evening and everyone was welcoming and kind. My partner and I really appreciate that some change was made and that they had acknowledged what had gone wrong previously. The food was tasty & you can tell that they create their dishes with care. The main Shiso dish of the evening was my favorite creation & it surprised me the most because I’m not a fan of shiso, but it was lovely. The stars of the night were the desserts. Marie is an extremely talented chef & they were some of the best desserts I’ve ever had. You have to try them. I truly appreciate the unique take on every ingredient used and it makes me happy that there was a fully vegan menu that was carefully thought out. I do think there needs to be a bit more balance with the enoki & watermelon dishes, but overall, everything was great. Thanks for the great evening!

A beautiful place in Amsterdam. They invite everyone to eat 1 course in the kitchen. This is very special and personal! Our menu did not contain meat and there was no option to add it. I thought this was a shame. For the ultimate experience, I would have liked the combination of vegetarian, fish and meat that evening. The food was very good, but if I am very honest I expected a little more from a 2 star restaurant. I didn't have the stunning wow effect, due to very special combinations that you could never have thought of yourself. Really enjoyed a beautiful restaurant, good service and delicious food. My only feedback would be, give customers the option to add a meat dish and dare to make slightly more eccentric combinations.

Visited on 8/1/25 at 7pm. Met by a rather unfriendly and odd waiter/maitre d’, who seemed confused when we said we had a booking. He asked us if we wanted a glass of champagne. We said we’d wait until we were seated. He then disappeared for a couple of minutes leaving us standing there, then reappeared without explanation for his absence and took us to a table. There was only one other diner in the restaurant at this point, but we were seated directly opposite him so watching each other eat for the evening. Not ideal. We were again asked if we’d like some champagne. Thinking this must be complimentary we agreed. When we came to pay we realised we had been charged for the champagne. Not impressed. However, apart from this waiter, the other staff were lovely, and most importantly the food was superb. We chose to have 3 courses, and they tailor a menu for you. We are vegetarians and they produced some wonderful, creative and beautiful dishes, as well as amuse bouche, pre-dessert and petit fours. I believe there is a new chef at Vermeer, and I’m not sure if the restaurant still holds a Michelin Star; the food certainly deserves it, but the gentleman who ‘greeted and seated’ us definitely needs some training in basic manners and common sense, and not pushing expensive drinks on customers already paying €350 for a meal for two.
