This was our third visit and unfortunately, our experience wasn’t as special as our first two. The service was impeccable and some dishes were excellent. But too many were not. In particular, the artichoke dish was not appealing and the pigeon was not correctly finished. Some dishes had an earthy element that was overpowering and took away from our enjoyment. However, the salad served with the pigeon was excellent, and the bread/butter was remarkable. For a dinner that cost 500 Euro, we left disappointed.

Wij eten vaker in sterrenrestaurants, maar The White Room waren wij nog nooit geweest, dus met de Restaurantweek maar eens proberen. Het restaurant is gevestigd in/achter het Krasnapolsky hotel aan de Dam. Het is even goed kijken en de bordjes volgen om het te vinden. De ruimte is erg sfeervol en weer eens wat anders dan in andere sterrenrestaurants. Het beviel ons zeer goed. Omdat we in Nederland zijn, verwacht je ook primair in het Nederlands bediend te worden. Dat bleek heel lastig, al waren er een aantal mensen die aan onze tafel bedienden die in ieder geval probeerden iets van Nederlands te spreken. Nu spreek ik wel Engels, maar mijn vrouw niet. Die spreekt dan ook wel weer Portugees, wat een aantal mensen dan ook spraken, maar het maakt het dan allemaal wel wat rommelig. En ja, naast het eten is de bediening en de interactie daarmee een heel belangrijk onderdeel van de totaal-beleving. Voertaal is dus echt een aandachtspunt hier. Maar de mensen zelf waren wel uiterst vriendelijk, zeer service gericht, zeer deskundig in hun vak, dat was echt top, en maakte dan weer een hoop goed. Dan het eten, dit was werkelijk top en qua smaak-combinaties heel verfrissend en erg lekker. Wel merk je dat het thema 'zuur' bij de Chef wel een (o.i. af en toe té) belangrijk onderdeel is van de gerechten/sausjes. Soms werkt het wel heel goed en is de combinatie erg lekker, maar bij andere gerechtjes vonden we die keus iets minder geslaagd, vooral omdat 'zuur' al snel overheerst. Bijv. de ganzenlever, daar past juist een iets zoete saus het beste bij. (Hebben we in een ander sterrenrestaurant eens geproefd, vandaar dat we het verschil nu kunnen proeven). Wijnen waren prima, en keuze werd goed en deskundig begeleid. Hollandse Kaviaar was ook heel verrassend, wist niet dat dat bestond. Hoewel erg lekker, is bijv. Beluga wel wat vissiger/zouter, wat ik persoonlijk lekkerder vind. Maar goed, wel leuk om eens geproefd te hebben en het smaakt zeer zeker niet slecht. Kortom, we hebben een uitstekend verzorgde avond gehad met bijzondere gerechtjes in en erg sfeervolle ruimte met comfortable zitplaatsen. Enige aandachtspunt is de voertaal, maar wij komen vast nog wel eens een keer terug.

The tasting menu was enjoyable, though nothing truly stood out as particularly remarkable. The champagne pairing was well curated and complemented the courses nicely. From a cost-benefit perspective, I’d rate it 4 out of 5 stars. At over €500 for a meal, you expect not just great food but also impeccable service. Unfortunately, the experience was marred by the assistant sommelier’s attitude. He was unnecessarily rude and arrogant, making us feel uncomfortable throughout the night. When I expressed gratitude multiple times, he condescendingly asked if I planned to continue doing so—as if being polite was an oddity. He later claimed this was his “icebreaker,” but it only set a negative tone for the evening. For a restaurant with two Michelin stars, service should be a highlight, not a drawback. While the kitchen delivers, the front-of-house—particularly the sommelier team—needs to match that standard.

An evening at this Michelin restaurant was nothing short of magical. From the moment we crossed the threshold, we were immersed in a world of refinement and taste. The atmosphere was elegant and inviting, with an atmosphere that exuded both luxury and warmth. The staff especially Joao were extremely professional, yet personable and attentive at the same time, which only enhanced the experience. Every course was a masterpiece. The dishes were not only a feast for the eyes, but also a feast for the senses. The harmony of flavors was sublime, with the chef using precision and creativity to create a menu that was both traditional and innovative. From the delicate starter to the surprising dessert, everything was imbued with craftsmanship and passion for the profession. We would love to come back.

For me as a vegetarian, the starters were amazing amuse bouche was amazing. The main dish tasted like a bunch of steamed vegetables. I did not see any protein in my main dish and that’s my only complaint, not even carbs, just something made with celery, so it was a chunk of steamed vegetables. I was missing the smoked yogurt I got as amuse bouche.

One of the best dining experience, definitely worth the star. We visited during the Christmas Eve for the Christmas special menu. The amuse bouche and appetizers are very interesting but can tell that they are "experimenting". Love all the explosion of flavors and especially the fish with vanilla sauce - totally mindblown. Endless stream of desserts that by the end of the service we were very full. Service is on point even though not the friendliest, but deservedly a Michelin star level of professionalism.

Afgelopen Kerst met mijn vrouw bij The White Room gegeten. Bij aankomst direct hartelijk ontvangen en een aperitief geserveerd. Van amuse tot dessert, wat een feest! Het wijnarrangement is bijzonder en goed doordacht. Zelfs als (amateur) wijnkenner kan je hier flink verast worden. Ook de prijs/kwaliteit verhouding is erg goed, zeker als je bedenkt dat het Kerstmis was!

Después de haber estado en varios restaurantes Michelin, mi esposo y yo podemos sentir y distinguir las diferencias menores entre dos restaurantes que llevan una estrella Michelin. Afortunadamente, para los lectores de esta reseña, hemos tenido experiencia consecutiva en el entorno Michelin los días 24 y 25 de diciembre de 2024. Observaciones: 1 . Los nombres de los servidores Diana simplemente hablaban una descripción bien ensayada de las comidas sin prestar atención a si la descripción era o no completa para los oyentes. También se mostró reacia a explicar mejor o cambiar su estilo incluso después de pedir que se repitiera. 2 . La paloma era tan... tan. Aparentemente fue el plato fuerte. 3 . Los 'mordiscos' no se servían en platos, pero nos pidieron que los tomáramos de un plato que ella sostenía mucho más alto que nuestros niveles de ojos. 4 . El maridaje de vinos fue el mejor aspecto de toda la noche, seguido por los chicos que nos ayudaron a encontrar el baño, etc. 5 . El ambiente era bueno también. 6 . Para Navidad, redujeron el número de cursos de 7 a 5. Las porciones no eran lo suficientemente grandes como para llenar una pequeña parte de mi vientre y soy un adulto pequeño. No quiero volver ni recomendar a nadie.

didnt give us towels before the meal. and the first two dishes were picked up with our own hands so it didn't make sense. i saw others were served with the plates down on the table, but we were served as the plates on the waiter’s hand, as if he was eager to take the plates back. shiitake mushroom, or Lentinula edodes were not soaked enough. two pieces of pigeons, one had tendons inside and the other wasn't tender. they boasted a “pretend that im not here” service and they asked if youre lefties or righties. but when serving desserts they gave the righties cutlery on the left side of the table. tahts not a big problem if they didnt think highly of themsleves from the start.

Excellent food. The restaurant looks a bit over the top, but do not let that stop you to dine there if it fits your budget. I did not know it had 1 Michelin star when we dined there, but I think it's well deserved. We had the gold menu which included some really interesting and wonderful tastes. With 150,=/pp - without much wine - it was not cheap, but in my opinion well worth it.

Truly an amazing experience. From the second we walk into the restaurant the service was top notch. The food was incredible and we paired menu items with mock-tales. The unique flavors and textures of the cuisine matched with drinks was an experience I may never experience again. During our latest visit to Amsterdam, our dining experiences included Bougainville, The White Room, Spectrum, Ciel Bleu. **Food** The White Room's culinary offerings were competent but lacked the innovation and excitement we've come to expect from Michelin-starred restaurants. While the dishes were well-executed and showcased quality ingredients, the flavors were familiar and predictable. The pre-dessert, a harmonious blend of Champagne, kaffir, almonds, and yuzu kosho, was a standout, showcasing a level of creativity and originality that was missing from the rest of the menu. **Service** The service at The White Room was professional but lacked the warmth and personalized attention we often encounter at top-tier establishments. While the staff was attentive, there was a sense of detachment that prevented a truly memorable dining experience. **Wine Service** The wine service was adequate, with the sommelier offering standard recommendations and the selected wine paired well with the food. Overall, the wine service felt rushed and pragmatic, suggesting the sommelier was overwhelmed by the number of tables. This created a sense that we were not a priority. **Ambiance** The White Room's ambiance is undoubtedly its strongest asset. The restaurant’s luxurious decor creates a stunning and sophisticated atmosphere. **Value** The White Room offers solid value for money. Considering the high cost of living in Amsterdam, the restaurant's prices are reasonable and align well with the overall dining experience. Compared to comparable restaurants with two Michelin stars, which often charge double the price, The White Room presents a compelling value proposition. **Verdict** Deciding between a three and four-star rating for The White Room was a challenge. While the restaurant undeniably offers a luxurious ambiance, consistent service and value, the culinary experience fell short of our expectations. I would recommend The White Room to those new to high-end dining, as the consistency and value proposition may outweigh the lack of culinary innovation for less experienced palates. However, given the abundance of exceptional dining options in Amsterdam, I am ambivalent about returning for another visit. Ultimately, I settled on a four-star rating, acknowledging the restaurant's strengths in ambiance, consistency, and value while recognizing that the overall experience was somewhat ordinary.

A special restaurant for special occasions. If you want to dedicate an evening to pleasing your palate, then you are in the right place. You have to be open to new tastes and the general understanding of what we call a classic dinner, because this one is anything but classic. We took the whole menu with I don't even know how many courses and all the wines that come with it. In my opinion, the evening and the whole protocol is taking too long. The staff is very helpful, professional and in a pleasant way casual. They brilliantly represent each tanja, and especially the wines they serve. The location is ideal. The atmosphere is very romantic, casual and warm. Small remark - it is not necessary to serve extra champagne and cheese with the full menu. For such a price, everything should be included in the menu.

We had a great experience! Delicious surprising dishes with perfectly matching wines, some of them very surprising. The service was next level, never experienced before, not even in star restaurants. Philippe, Simão, Frederico and Diana, all top professionals with a passion for their profession, you notice that in everything, but especially the fact that if you ask further questions, it turns out that they have not just memorized a story about the dish, but know exactly how it works. The funniest part was when we asked the question about a herb that we thought we tasted but couldn't identify the name of and we received the same correct answer from 2 waiters in different languages, in unison. The fact that I was called in advance in the afternoon to ask whether we have allergies or prefer not to eat certain things was also new to me. Because of the culinary excellence, fantastic service and top location, you should be prepared to pay a little more, but as far as we were concerned it was worth every euro.

We celebrated our 1 year wedding anniversary at The White Room and we had a beyond delightful experience. The staff was hosting us in a casual yet very sophisticated manner and we felt most welcome. On the background, there was nice electronic music, which contrasted very nice with the “over the top” interior. Think of Marie Antoinette in Berghain. The different courses were playful, creative, exciting and kept us curious for the next one. Acidity is the key word of the menu, which was presented in many forms. For me, the highlight of the menu was the amuse with white asparagus ice cream, just brilliant. We did not drink alcohol this evening, but did not miss it. The restaurant offers a decent range of alternatives such as non alcoholic wines, kombuchas, mocktails etc. Then the bill, which was -for this level of cuisine- very decent. At no moment we felt that the restaurant was trying to push up the bill to the max, which -unfortunately- happens too often in high end places. The only point of improvement would be the tempo, which was a bit too slow for my taste, but that’s very personal. You will see us again!

A very grand dining room with below par food. The vegetarian tasting menu offered some interesting dishes but the overall experience was not at the highest level. Perhaps the a la carte and omnivore tasting menu are closer to the quality you’d expect. I found the watermelon dish lacking punch, the beetroot dish mediocre, the cep mushrooms overwhelmed by the drizzled barbecue sauce and the celeriac unpleasant when combined with the fermented pumpkin discs. On the other hand, I found the salted macadamia ice cream very tasty on the asparagus dish, the emulsion was deep in flavour and tied together the corn and mushroom dish, while the standout course was the delicious caramelised apple dessert. It is a traditional fine dining service in an opulent setting.

An absolutely stunning and complete culinary experience. The Green Menu is wonderful, full of taste and imagination. Every member of the staff is perfectly kind and helpful, and the Chef himself is present in the dining room every few minutes to ensure everything is going smoothly. Unfortunately it was not such a great experience dinning in this establishment. The atmosphere of this restaurant is like a dark room In back side of the hotel and if you want to use washroom you need to access to the guest rooms lift! Majority of floor staff are doing their job like a robot (just bring the food short explanation and go). The worst part of this dining experience were cocktails and seasoning of the dishes (cocktails were no flavors only pure alcohol and no unique type of garnish for different types of cups) (Most of dishes were cold and super salty) Very sad to say that, with spending this amount money t here are plenty of great places to choose from....

This is the first time ever we have dined at a Michelin Star restaurant. We had the Green Menu and wine pairing. Both were excellent. The tastes and flavours were genuinely unlike anything we have had before, food was delicious. Worth every penny (euro!). Service was great, staff extremely knowledgeable but not imposing. Na een vriendelijk ontvangst zijn we aangekomen in de oudste zaal van Amsterdam. Het kan niet anders dat je fantasie je meeneemt naar 1885. Ook de maître zorgt ervoor dat de geschiedenis van deze prachtige zaal wordt uitgelicht. Chef Tristan heeft hele mooie gerechten. Maar laat ik ook niet de sommelier vergeten, wat een leuke jonge man die ons op een enthousiaste wijze mee nam op de wijnreis. De wijnen sloten naadloos aan bij het fantastische diner. I ate at The White Room last night and it was absolutely fantastic. I have been to many fine dining and Michelin star restaurants in Amsterdam and think I found my new favorite. Both the vegetarian and the gold menu were delicious. I am currently not drinking alcohol and they served me fantastic alternatives, including a very interesting smokey kombucha. The service was very welcoming and friendly. We had a great evening and will for sure be back! Well worth the trip to the busy center which I usually try to avoid on weekends.

A very enjoyable evening. The service and food was top notch. We both did the tasting menu with wine pairing. My partner did the vegetarian option. As an avid meat eater this might be the first time when trying my partners dishes that was I was jealous. Mine were amazing but hers were beautiful. The pumpkin dish was a highlight.Wine pairings were excellent and different to wine we would normally order. The service was great from all the staff especially the front of house manager and sommelie. The dining room is also great with a nice atmosphere.

Really terrible experience… I eat gold menu for 149 pp. But!! I got food poisoning yesterday night which make me go into a coma and ringing in my ear after three hours. Btw, my friend eat bones in main dishes, Lol. for me, I couldn’t believe food quality here… The waitress just say an excuse and then just say sorry.. They say they should check but they didn’t carefully check. Funny excuse! I never experience such terrible dinner on Michelin restaurant. Never try this one! Don’t waste money at here!

De eerste keer eten bij dit restaurant. Ontvangst was hartelijk. Wij werden keurig naar de tafel gebracht. Wij krijgen een 7 gangen Gold menu. Dit hebben wij vooraf bij het reserveren aan geven. Alle gerechten vonden wij heel erg lekker. Te veel om op te noemen. Kijkt zelf maar naar het foto van de menu. Ee lopen genoeg personeel rond en ze doen alles, zodat je een geweldige avond ervaren. Tijdens mijn verblijf in het Anantara Krasnapolsky Hotel heb ik het genoegen gehad te dineren in het met 1* Michelin gewaard The White Room restaurant. Ik had er al eens eerder gedineerd en had dus enige referentie. Het restaurant zelf is een vorstelijk plaatje, bijzonder sfeervol ingericht en heeft allure. The White Room had ik eerder ervaren als klassiek, erg klassiek in alles, de bediening zeer formeel en strak en de gerechten herinner me toch ook wel klassiek. Maar er is duidelijk iets veranderd, de bediening onder leiding van Maître Bram Hommes is minder formeel en dus losser en heb ik verder als vriendelijk en attent ervaren. En ik ben er van overtuigd dat ze met de nieuwe Portugese sommelier Frederico Caultier Parain de Figueiredo eindelijk iemand hebben gevonden die bij het niveau van dit sterren restaurant past. Ik heb deze avond gekozen voor het 7 gangen Menu Gold, waar dan nog amuses bij komen. Daarbij had ik het bijpassend wijnarrangement. De ‘gambero rosso’ en de ‘zolderspek’ sprongen er vond ik duidelijk boven uit, zeer verfijnde smaken en dus WoW-momenten. Verder heb ik genoten van de verfijnde smaken bij het hoofdgerecht ‘eend’ en de laatste gang ‘kreeft’ was een bijzonder mooie afsluiting. Complimenten aan Chef Tristan de Boer. Gedurende de avond serveerde sommelier Frederico heerlijke bijpassende wijnen. Bijzonder mooie avond en ik kom snel eens terug.

If you find yourself in Amsterdam and over the frites, falafel and pancake scene, go to the white room. We chose to do the green menu and try the vegetarian cuisine. Nothing about this menu was basic, standard or, expected. They say it's a 7-course meal, we ended up with 11 or 12 courses. It is a 3- hr experience but will worth it. One of my all time favorite meals.

Wow, What an amazing experience! From the moment we walked in we knew we were in for an excellent night out of fine dining. The staff was attentive, and perfectly balanced between approachable and easy-going, whilst still being professional and knowledgeable. I had a dietary restriction, which meant I had a mix of both the vegetarian and regular menu and everything was to die for. Beautiful combinations of ingredients and flavours which were surprising, in the best of ways. The sommelier was wonderful as were all the other waiting staff, and the one gentleman from the kitchen who served our amuse. Wonderful night and a big thank you to everyone at the White Room!

As first-time visitors to Amsterdam, we hoped to sample some fresh-caught seafood from the north Atlantic. This Michelin starred restaurant surpassed our expectations. We had the 4-course lunch menu on a Saturday, and the remarkably imaginative preparations and presentations of mackerel, razor clams, oysters, kingfish and cod lifted us onto a culinary Platonic plane of perfection. Here are more detailed descriptions: Amuses bouches -- 1. Macaroon with smoked mackerel + yogurt (macaroon enclosing a yogurty inside flavored of smoked mackerel); 2. Baharat crisp with razor clam + leek (baharat-spiced rice cracker cradling a mixture of creme, razor clam in small pieces and pureed leek; 3. grilled oyster in small pieces, in a foamy oystery sauce with champaigne ice cream and crispy pieces] Main courses -- 1. Kingfish in dashi with bergamot frozen pearls + japanese dried fruit + daikon slices; 2. Corn: baby and sweet, with minced mushrooms and grilled pearl onion, a baby corn leaf, served in a green leaf cracker, with corn sauce; 3. Slow cooked cod with Artichoke ‘Barigoule’ (a typical French preparation), with two sauces -- herb oil + buerre Blanc. Puffed potato topping. Jalepeno powder on potato and diced in sauce. The cod melted in the mouth. For desert -- Salted popcorn, porcini ice cream. Bacon. Dark chocolate. Grilled lemon jam. Sounds odd; was sublime. Bravo to the chef, and bravo-brava to the delightful staff. Huzzah!

In a well decorated room, the White Room provides a well executed cuisine. It alternates between flavorful classic French dishes and original revisited dishes. The service was excellent, with each plate being well described in English and in French and the wine pairing was perfect with each wine being described with precision. Finally, the atmosphere is quiet, you have the impression to dine alone which is enjoyable. Definitely one of the best restaurant I have ever done.

The white room... Il s'agit tout d'abord de découvrir ce magnifique endroit. Très lumineux et clair comme son nom l'indique. D'une grand classe ainsi qu'une disposition de tables très agréable, avec beaucoup d'espace qui offre une intimité à chaques tables. Suivi d'un accueil digne et très agréable, par des hôtes à la hauteur de la réputation de l'établissement. Nous avons été séduit dès l'instant où nous avons franchi le seuil de ce délicieux endroit qui a su par la suite combler nos papilles. Chaque plat nous a fait l'effet attendu d'un restaurant étoilé. TOUS ! Aucune déception, que des frissons... Un sans faute proche de la perfection. Un plaisir rare. Bravo au chef ainsi qu'à sa brigade pour ce travail remarquable, vous nous avez comblé, nous sommes ressorti avec des étoiles dans les yeux, nos sens ne l'oublieront pas. Bravo et merci à la sommelière qui s'est occupée de nous concocter un super accord mets et vins, ceci a également contribué à rendre le moment parfait. Cela n'aurait pu mieux se dérouler. Merci !

A great experience at Spectrum. Beautiful dishes, beautiful wines, lovely staff and excellent service. Lots of fun and surprising dishes, they dare to make exciting choices. Sometimes originality can't improve the taste. Personally, I thought that was a bit of a problem with the dish with pine, but without exception everything was excellently prepared and tasty. The restaurant looks quite classic, but the dishes and the employees are not. The dishes are modern and beautifully presented. The staff sets up plates synchronously and they know the etiquette, but they are also open to an animated and personal conversation during the evening. We were charmed by that and came up with our initiative. However, we had to indicate more than once that the pace could be a little slower and that some employees were still a bit youthful in their choice of words. But those are details in a great evening. Of course, dining here has a hefty price tag, but if you are willing to pay for it, it is definitely recommended. Two very solid and well-deserved Michelin stars in our opinion. We have now been able to visit quite a few businesses with 1-2-3 stars (about thirty) and Spectrum is certainly in the top 5.

Excellent fine dining restaurant easily reachable from Amsterdam Centraal. Came here for dinner and took the 6-course menu. The dishes were well-executed. Among the 6, the “squid & bacon” and the “royal” stood out the most for their impeccable flavour. Service was 5/5 - amuse bouche as well as palate cleanser and pre-dessert were included in the course.
