What a wonderful evening I had here. The atmosphere in the restaurant is incredibly intimate and the presentation of the dishes is truly beautiful, such as that one course served with a subtly burning candle in the middle of the plate. Everything was perfect down to the last detail. The staff was very attentive and the wine selection paired perfectly with the refined flavors on the table. I would love to come back here again.

The service and atmosphere was absolutely amazing! We felt very welcome and almost at home in Denmark. We did the wine paring together with the menu, and I must say that was a good choice! The wines were on point, and likewise was the food. Especially the bread, seafood with foam and nigiri. We could have skipped the extra cheese and orange wine dish, just because only one of us is into cheese and we’re not much fan of orange wine. The Sake was a good one, especially for somebody who prefers grape wines. Overall we’re very pleased with the experience, and we’ll definitely come back if we’re in Amsterdam. We live in the neighborhood and for years we have said we want to check this place out. Fine dining is something my husband and I enjoy. This fantastic restaurant and the lovely couple who single-handedly (double-handedly?) co-own/run it gave us one of the best dining experience we have had since we moved to Amsterdam. Everything was so lovingly thought out and well executed. Loved the subtleties in the food and the wine. They paired so well together. The cozy ambiance was the cherry on top for a perfect evening. Last Saturday, I dined here with my son. Every now and then, we go out for a fine dining experience together. First of all, a warm welcome from Amy in this cozy restaurant. After a delicious aperitif, the dishes arrived at a leisurely pace. All the dishes were delicious, and according to my son, the accompanying wine pairing matched perfectly. Amy is a very pleasant hostess who also takes the time for you. Her partner is in the kitchen preparing the amazing dishes. We had a wonderful meal and found it more than worthy of a Michelin star. Astonishing food, beautifully prepared and served by a lovely couple who look after you in a careful understated way. The fish is all delightfully prepared and very tasty. Definitely worth going for the wine accompaniment which is well chosen. Highly recommended for a special occasion.

We had a wonderful meal! Unique dishes and delicious wines. The atmosphere was pleasant and intimate. We thoroughly enjoyed it.

An okay experience at a place that tries to make you feel it’s much better than it actually is. The wait between the 2nd and 3rd courses was around 45 minutes - completely unacceptable. The dessert was just yuzu ice cream - nothing special. The “5-course” menu costs EUR 110 per person, which is nowhere near the value delivered. The wine was one of the biggest disappointments ever: the first natural wine was extremely sour, almost spoiled, yet the co-owner/waitress tried to convince us it was normal. I appreciate that she agreed to replace it, but the second wine (rated 4.0 on Vivino and costing EUR 71) was still far below expectations. The trout was delicious, and some of the other dishes were good as well, but overall, the food is far from worth the price. There are much better places in the area and in Amsterdam for that money.

Nice, cozy restaurant with good food and lovely wines. Both my dining companion and I found the portions a bit small and still left feeling a bit hungry.

Yesterday, JA hosted dinner at the Champions Lounge. The food was delicious and the service was superb.

Relatively unknown gem in Amsterdam.

My already high expectations were exceeded. I couldn't say which was best: North Sea crab, langoustine, or dry-aged turbot. The pairing was also excellent. We'll definitely be back!

It was a nice experience overall. The food felt safe, but that’s understandable given it’s only the chef and the sommelier running the whole show. The waiting time between courses was on the longer side, though again, I can see why. But the nigiri course — calling that “nigiri” is almost insulting. The rice was at once mushy and hard, the shari nearly nonexistent, and the execution careless. It had nothing to do with what nigiri is supposed to be. Serving it under that name is misleading at best, a culinary crime at worst. If this is to remain on the menu, it needs a complete rethink from the ground up. This “nigiri” completely ruined my experience and that’s the main reason for my low rating. What I don’t understand is how no one has pointed this out before — was I just unlucky, or do people really have no idea what a proper nigiri should be?

Despite being shamefully spoiled when it comes to fine dining, every dish at @restaurantja was mind-blowing. It looked a bit like standard Michelin-starred cuisine, but every dish was incredibly well-executed, incredibly flavorful, and both incredibly delicious and highly original. Restaurant JA is a small, living room restaurant with nine tables, an open kitchen where Julius Busscher, seemingly completely relaxed and zen-like, single-handedly creates one fantastic dish after another—in an equally zen-like, tidy kitchen—while his partner, hostess Amy Delorme, pours wine all evening and ensures you have everything you need, as if you were visiting a very dear, attentive friend. Highly recommended for anyone who loves fish, Japanese food, and endless hospitality.

A wonderful evening in a wonderful ambiance. Peace in the interior, decoration and distribution of tables in the space. A chef who cooks with the greatest eye for detail and works systematically. Everything visible. Delicious matching wines, even beer. Everything in order and nothing is forgotten. Not too much wine, not too much food but everything balanced. Top!

Exquisite! Every single dish was creative, flavourful and elegant, the chef is super talented! Probably one of my favourite dining experiences in Amsterdam.

I liked the unique taste and flavors in the menu. Definitely worth to try. Brioche was absolutely fantastic! Nigiri was also amazing. I liked the fact that all dishes were somehow cooked and served in different ways. Dry aged turbot comes with the bone and may not be everyone’s taste to have it on the plate. The place is clean and decorated very neatly. Service was excellent. I can mainly criticize the popcorn in the dessert. As it includes ice cream, cotton candy and popcorn, I didn’t feel any specific taste to feel a leveraged flavor. I wish I could just finish this meal with that brioche (again) or without any desert. Recommend this place to experience!!

Wonderfully relaxed atmosphere at JA due to the fantastic hostess. In terms of dishes, we expected a little more garnishes or vegetables and the wines by the glass were a bit sparse for the price. Have a nice evening!

Simply excellent. From food to service. The whole menu was thought through, 'travaillé' and beautifully presented, next to being super delicious. An amazing experience that you rarely get in Amsterdam, even in Michelin restaurants (I find them often overcombined and too complicated). JA became our favourite place in whole Amsterdam. We will be back!

We visited JA last night, March 6. a restaurant run by the owners, without any other staff. Amy, who does the service, is such a great woman. Every guest receives her attention with her knowledge of the food and the accompanying wines. In the meantime, Julius prepares the ingredients for the many courses on the menu. the quality of every dish is surprisingly original and delicious. We say a resounding YES to this restaurant. What a stunning experience from start to finish - one of the best dining experiences I’ve had in Amsterdam! Julius and Amy have created something incredibly special with Restaurant JA - from the modern but cosy and intimate decor, to Chef Julius’ passion for sourcing local ingredients and fusing with French & Japanese flavours, to the always spot-on drink pairings with the dishes thanks to Amy. We were blown away by the creativity and flavours in each dish, and the fact that Julius and Amy do this all themselves shows the passion for their craft. We found it hard to pick which dish we liked most as all of them were amazing. Thank you for a wonderful evening!

Delicious food, great service and fantastic surroundings/atmosphere

Fantastic restaurant, I will be going for the fourth time in April! It really is my favorite restaurant in Amsterdam. The atmosphere that Julius and Amy know how to create is great. The most beautiful dishes and wines pass by. A new card regularly. I would like to go there every month. Great respect for how they do this together! Let it be April soon.

Absolutely amazing restaurant. Great welcoming. The restaurant is cozy, about a maximum of 20 seats I would say, mostly tables for 2 when we were there. Atmospheric! Quality of food was amazing and the dishes where very creative. Both the alcoholic and non-alcoholic could have been from one of the top tier cocktail bars in the world with surprising twists. Back to the food, several courses of intermittent bite sizes and bigger portions all creative and delicious. Good wine recco’s. And then finally, the dessert. Man, I wish it would have been possible to order an extra one, so delicious!! We will return!

What a wonderful, nice and warm place. We were incredibly pampered with lots of personal attention. The food is fantastic - and my guest and I are critical when it comes to food. Beautiful dishes, high in taste, great textures, not too trendy, but with many classic Japanese influences. The wines were very good, but quite expensive. Non-alcoholic was also special with homemade cocktails by the chef. Nice interior and comfortable seats. Small number of place settings, max 8 tables. In short: highly recommended!

Absolutely fabulous. From the amuse bouche till desert we were dazzled by tastes and displays never experienced before. The tangarine lacquered dry-aged seabass! A small place with 20 seatings handled by a young, capable and super-friendly staff of 2 (!). Everything flowed at the right pace and the wonderful food was experienced by all guests unisono which worked very well in the atmosphere too. We will be back soon!

What a pleasure to have eaten at Restaurant Ja. Amy received us in a very friendly and natural manner in the attractive and 'cozy' restaurant. We immediately felt 'at home'. All of chef Julius's dishes were of top quality and Amy's wine advice matched perfectly. Without neglecting the other dishes, the celeriac with boletes and squirrels, and the Dry-aged Turbot with Beurre Blanc were the highlights of the evening. We will definitely come back again.
