Well worth its Michelin star. Truly exceptional food, with a lot of earthy tastes (smoke, jerusalem artichoke, cauliflower, chestnut). All in truly original and tasteful combinations. Also don’t miss the incredible wine pairing. Clear value for money even if this type of deliciousness will never be cheap. Great modern setting with a lovely view of the open kitchen. Very friendly and attentive staff, can’t recommend them highly enough!

What an evening! It started off great with a refreshing kombucha and a delicious amuse-bouche, followed by a six-course dinner with paired wines. Everything was perfectly prepared. Be sure to book the Chef's Table; it's fun to watch the chefs at work. Every course was creative and delicious. The wines complemented it beautifully. We'll definitely be back!

High disappointment for a Michelin Star restaurant in comparison to others. Food was ok but not at the level expected for such a place. Atmosphere is cool however I did not see any creativity in the dishes served. Overall pricy for what it is ! Dessert was the summum of disappointment with no flavor in the ice cream. Signature dish was good giving the impression that the menu set for restaurant week was deliberately designed as basic. 2 stars given overall because of the food !

I had vegetarian options, the food was good, not great. Out of our 6 courses I disliked 2. Unfortunately, the service was sub-par for a michelin star restaurant. Our main waitress was very helpful and professional, but each dish was served by 2 different people that were probably still in school and had no idea what they were serving. They had no love or passion for their job and were at times very disinterested and unaware of what they were even serving. We also had a pregnant person present, and they kept mixing up the veggie, pregnant, and meat/fish options, to the point were we just let them make their expected mistakes and shuffled our plates once they left. I know the Netherlands hires teenagers in all their stores, but if I pay 700 EUR for a dinner, I'd like the service to match that price tag.

The hostess's pants were covered in white stains and she wasn't very friendly. 💰Cheap in the Michelin-star category. 🍽️ This Michelin-starred restaurant was number 14 on my list, and I found it really substandard and not Michelin-starred compared to its counterparts. 🅿️ Nearby garage - Amsterdam price :) 💡I preferred Wils Bakery, and it's half the price. You get a seat downstairs instead of upstairs.

The experience we had last night at Wills was exceptional in every way. The food is fabulous, the presentation is beautiful. It's a surprise with every course. We're French and used to a certain style of fine dining, but we discovered a new chapter in gastronomy and pleasure, in essence and indulgence, with incredible, spicy, and tangy flavors. It was very, very good, the team is amazing, very friendly. The fact that the chefs came to serve us and chat a bit to explain the dishes was a very pleasant touch. It's both relaxed and chic. It's accessible, it's a new experience that our friends and we enjoyed last night, and it's excellent value for money. So, it's truly an experience not to be missed when you come to Amsterdam. The wine list is superb, and we were able to try a Grange des Pères! Thank you. Sincerely. And Bravo.

My bf quite liked it. I absolutely did not. Such a posh disappointment. We booked during what appeared to be an influencer event which for a 1 star restaurant should happen outside traditional evenings because the attention of the managers was clearly more on the show delivered to influencers rather than on the real customers. Gault&Millau zegt “nog meer gastvrijheid… Chef Thomas Val regeert met rust en overzicht”. Rust zeker. Overzicht dat zou ik niet zeggen. The chef seems unfortunately to have become a chief marketing officer instead of a 1 star restaurant chef and barely did nothing in the kitchen during the whole evening (except scrolling on his mobile to like some Instagram posts and doing PR with the influencers and smiling to the sexy ones). Food was good, rather strong tastes, cookings on point, some interesting dishes, nothing phenomenal. Unfortunately influence marketing won’t save them for long. 16,5 euro for a watery Aperol Spritz :/ Please follow a cocktail masterclass… we had to ask for bread because they forgot it, cutlery was missing, dessert was frightening, portions were small, 35 minutes before the first dish… Such a disappointment. Staff is cool and brave and do what they can to compensate the jaded chef.

Just PERFECT! Can we one day get two stars with a plate of fries and service in a T-shirt? I dare say so, chef Joris Bijdendijk and his team deserve it! First of all, you're outside the city center. You don't really understand where the taxi is taking you and drop you off in the middle of nowhere, facing a pitch-black stadium on an equally dark forecourt! You think you're a bit lost before you see the bright light. This sets the tone; at wils, we like to go off the beaten track and surprise you a little! There are restaurants that have it all! It's not easy to create a fun and entertaining Michelin-starred restaurant! The line between chic and convivial and simplistic is very thin! Here, the exercise is perfectly mastered! The chef wanted to create a fun and friendly place with a kitchen completely integrated into the dining room. You have to sit back and observe. On the food side, the cuisine plays the score of fun and comfort, like the quail with butter chicken! The spicy squid starter is worth the trip alone, and the mushroom sundae is simply amazing. The service, while still in T-shirts, is very professional but above all, ultra-friendly. The team loves working here, and it shows! They hug each other, they help each other, and constantly ask if everything is okay! If there are two of you, you absolutely have to eat at the counter to see this spectacle of delicate energy. And I have to finish with the restaurant's last huge plus: probably the best wine list in town! In other Michelin-starred restaurants, it's either bland or completely overpriced, even outrageous! Here, you'll find some amazing wines (Grange des Pères, Arnaud Lachaux, etc.) at very reasonable prices. No speculation, just the pleasure of doing your job well and allowing enthusiasts to enjoy some truly delicious wines! You can feel the passion of this young and adorable sommelier! In short, I could say even more, but I'll stop there! Huge congratulations and thank you! Definitely one of my best restaurants this year! I could come back to Amsterdam just for Wils!

The first stop on my ‘Joris Bijdendijk Restaurant Tour’ in Amsterdam (sometimes business trips can be a real treat) was Restaurant Wils, and wow! What a sensational treat Joris, Tomas Val, Tanja Yabra (what am amazing dessert) and the amazing kitchen team conjured up. Fresh, creative flavour combinations, some of which I had never experienced before, simply world class, and I had the best view of this great team. Add to that a sensational non-alcoholic accompaniment and wonderful service, and I was even allowed to go straight into the kitchen to watch one of the courses being prepared 🥰 Many thanks to Joris, Thomas and the team for this extraordinary evening of indulgence.

The oysters were delicious as a starter, the egg mayonnaise was nothing special, the steak tartare was delicious, but the bouillabaisse was a small amount for a lot of money. It consisted of a few pieces of cod, cherry tomatoes, and a cup of watery broth, which was a shame. Price-quality ratio: 6. We wouldn't drive out of our way for it.

Menu was a bit pricey for what was served on the chefs menu. Also no amuse for a 6 course menu? Food was a good standard but no special dishes. One dish (runner bean/almond) was too bland and one note. Service tried to upsell a cheese board but they had less cheeses since some were sold out. It felt a bit stingy. 6.5/10 overall. We had high expectations but left slightly disappointed. Not an experience worth repeating.

Yesterday I enjoyed a culinary experience at Restaurant Wils. The quiet atmosphere provided an intimate setting and more personal attention. The 6-course menu with the Wine Discovery was perfectly composed, where the taste of the wines matched the dishes perfectly. Tasting different cheeses in between was a pleasant surprise. It was a unique experience to sit so close to the kitchen and follow the cooking process. I am already looking forward to experiencing this again. Very rude staff, we were enjoying a glass of wine when the bill was thrown on the table. We indicated that we wanted to stay longer but we had to pay. It was not busy at all. When we entered we were given a drink that was so sour that all the guests left it. The oysters were really disgusting, that may be personal taste but we saw that the other guests were certainly not happy with the food and the staff. Too bad we had high expectations.

The restaurant is a bit hidden in a large building that you have to walk around from the road and then take an elevator to the third floor. The view is of the Olympic stadium. The kitchen is open and there is an open fire, which creates a certain atmosphere. They don't do appetizers, although you do get a small snack immediately upon arrival. The chairs and benches are comfortable, although the color scheme is not to my taste. Management is young and pays close attention. Water is constantly updated with new bottles, but of course there is a 6 euro pound bill. So be it. All dishes were incredibly tasty and creative. The flavors are well matched and the appearance is more than fine, see the photos. In addition to the 6-course menu, we also took the wine arrangement. The wine was poured by different people per course. Sometimes the 125 ml, but also below. In my time, 6 glasses came from a bottle, but nowadays 5 is common. Suggestion: spend an hour pouring wine glasses (with water) with the entire serving staff to get the right amount in hand. We also exchanged sweets for cheese, with delicious tawny port and we also tasted the special ratafia (see video), but it was found to be too sweet... all in all we had a wonderful evening and can therefore highly recommend this restaurant.

El chef una vez hizo un gran libro de cocina y YouTubes. Abrió su propio restaurante en Amsterdam Sur en un edificio modernista recientemente renovado. Después de salir del restaurante, sentimos que la inversión que tuvo que hacer para esta ubicación y el tamaño del restaurante debe haber sido demasiado. Era tan insatisfactorio. Wils was fantastic! A great group of young international chefs putting on a masterful showing of culinary skill. Service was attentive and warm, food options were generous and the wine options were plentiful. Seating at the chefs table was entertaining and highly recommended! Watching them grill and prep all the dishes was a fun experience. We opted for a la carte as opposed to the tasting menu and it was great! We had a great Cab Sav, sweetbread dish, fantastic steak and really good pork dish with a chimichurri sauce! Overall, really good experience and highly recommended to anyone in Amsterdam.

Unfortunately, our visit to Wils did not meet our expectations. Although the food was of good quality, the experience was overshadowed by the mediocre service. Upon arrival we were placed at a table right next to the dishwasher for the glasses. This device ran almost continuously and was regularly loaded and unloaded, which was very disruptive. In addition, after taking a seat we were completely ignored for more than 20 minutes and eventually had to ask for attention ourselves. We had opted for a wine pairing, but the coordination between the kitchen and the service left much to be desired. Dishes were sometimes served too quickly, meaning our glass from the previous course was still half full. In other cases we were first served a dish and then had to wait 10 minutes for the matching wine. After dessert we ordered coffee and tea, but after waiting 30 minutes our order turned out to have simply been forgotten. Finally, the bill was incorrect, which ended the evening on a negative note. For the price Wils charges, there are more than enough restaurants in Amsterdam where the food is just as good and the service is up to standard.

Fantastic spot in the Stadionsplein. Excellent assortment of meat cuts and garnishes, served with very friendly advice from its staff. We had the Baambrugs Big, perfectly cooked and seasoned, the Simmentaler ribeye, the quail and a new interpretation of French Toast, very similar to a crema catalana. Definitely recommended.

Despite excellent dishes, I would not return here in a hurry. The welcome was very warm and the service from most colleagues during the evening was excellent. However, there were also a number of big (or actually small) disappointments. 1) The dishes were very small (amuse size). 2) The wines were served in an unprecedentedly sparse manner, especially by the non-Dutch speaking 'sommelier'. After commenting, it turned out that this was due to our eyes and not the quantity. By the way, the wines were excellently chosen, all the more disappointing that you only got two sips. So better order a bottle and not glasses if you want to dine here. 3) I don't think the lack of appetizers is appropriate for such a restaurant. According to the restaurant, this is a conscious choice that fits 'their concept'. 4) Communication about the prices (which were much higher than on the website) was poor. In short, far too expensive for too little 'experience'. Especially for a restaurant with a star.

Nice large place where you can view the open fire from your table. We were well received with a small snack (Brussels sprouts with hazelnut) and a home-made mango kombucha. And to start we had an oyster and a glass of champagne. Oyster came with red wine vinegar with shallot and a smoked lemon sauce and went well with the champagne. But don't expect appetizers or appetizers, because you won't get them here. Our dinner started with various preparations of radicchio. Followed by the oyster and then as an extra course we got the sepia. All three dishes were well prepared and highly flavoured. The sauces for all courses were fantastic! Rich in taste, the right acid, salt and taste, really very tasty. The potato in the next dish was a surprise. Good flavors and quite large in size. The truffle was a good addition. The head just wasn't entirely to my taste. The fermented berries made the dish way too sour and in combination with the red cabbage the dish got a very earthy taste. Not my thing. Fortunately, the dessert of bread and brulée and cinnamon was delicious! All in all we had a wonderful evening and I will definitely come back!

I have a bit of mixed feelings about our dinner yesterday. The food was delicious. Not exceptional, but very original and good. As always small dishes, but not completely satisfied after 6 courses and a cheese board. Service was fine. Very nice to see everyone working in the open kitchen. The ingredients are often local and sustainable. What was surprising in a negative sense were the prices of the menu and wines. Of course we know that you pay for high quality at these types of restaurants, but we made a reservation based on the prices that were and still are on the website. One of the owners was present as well that evening. He constantly licked his fingers or spoon after preparing dishes and then prepared other dishes/used the spoon for other dishes. That happened throughout the evening about 20 times and that is a no-go especially in an open kitchen environment. The food was good as well as the service and the overall experience, however, the chef's behavior was disgusting.

Shame on you chef. Food loving people, don't bother taking the elevator up if you like excellent food, true hospitality and a cozy atmosphere. You will not find it on the third floor. We had a truly disappointing experience and will not recommend going here. Sadly the loveless mediocre performance also reflects badly on the perfectly fine bakery on the ground floor.

Not convinced at the end of the evening. I kind of had that feeling when I ate here 2 weeks ago. Received in a friendly and original way. Restaurant is very stylish. A lot of attention has also been paid to non-alcoholic pairing. But what was it about… the service was the final conclusion. Many different people at the table, little interaction and enthusiasm. Very businesslike, monotonous explanation of the dishes, sandwich at a strange time and just not the social interaction that I expect and am used to at a 🌟 restaurant.

Great night with my family but unfortunately a very bad experience with the staff at the end of the night as we had paid the bill and then they had forgotten to include a bottle of wine and staff came over and pressured us to pay for their mistake and then wanted my daughter to pay even after I offered to go 50/50 on the bottle of wine which he would not except totally unacceptable and ruined our night out with our family staff who make errors have to stand by their errors and not expect or heavy handed pressure rise customers to pay for their mistakes totally unacceptable and I will be looking for their Michelin star to be taken away totally unacceptable and ruining our evening

I don't usually get excited about set menus, but this 5-course experience really stood out. The food was excellent from start to finish - every dish showed real skill and creativity. I'm already planning my next visit to try more of their cooking. What I really liked was the relaxed atmosphere. The open kitchen adds a nice buzz to the place, and it's refreshing not to feel the stuffiness you sometimes get at high-end restaurants. You don't need to whisper or worry about which fork to use - it's all about good food without the fussy extras. The service, though, had some mishaps that stuck with me, especially since the restaurant was only half full, by my estimation. I could see that both the waiters and kitchen team are quite young, and while they're clearly talented and well intended, they still need time to learn how to deliver the polished service you expect at a Michelin-level restaurant. All in all, I am already looking for the next occasion to visit Wils!

Restaurant Wils provided an unforgettable first fine dining experience! I was nervous at first, but Rosaria, our waitress, made the entire evening wonderful with her pristine customer service and deep knowledge of drink selections. The five-course meal came with soft pairings, including a unique selection of kombuchas that perfectly complemented the dishes. Each course was absolutely delicious, and the thoughtful pairings elevated the flavors even more. I was so impressed by the entire experience that I can’t wait to return for another round! El otro error que lamento es permitir que el ambiente del restaurante reste valor a la cena. Situado junto a una gasolinera y encima de un concesionario de automóviles, el ambiente ikea - como desmentía la gastronomía interior. Hicimos algunas suposiciones sobre la comida antes de pedir, basado en la decoración, y eso también fue un error. Lamento dejar esta comida para el último de nuestra estancia en Amsterdam, por lo que es imposible volver para el menú degustación completo con maridaje de vinos. No cometas este error. Great experience. I would only make a suggestion on the bakery. Its not on par vs the rest of the experience. Its the weakest. All the breads were just normal. And the first stick you received was stiff and old. A pretzel wouldve been better… Service is ok. All the details were in line too. From the kitchen table we had a front row seat to watch the chefs concentrate on preparing and serving the various dishes. A very nice experience. The Chef's Menu is definitely recommended. In 5 courses we were served different dishes, real works of art, each with exciting taste sensations. The wine recommendations matched the taste of the dishes exactly. The service was nice and subtle. All in all a very nice experience, and definitely worth keeping an eye on.

We tried this place last night and really enjoyed it. We sat at one of the kitchen tables so we got to watch all of the action, which was pretty cool. The space is on the third floor of a building overlooking the Olympic Stadium, which was all decked out in orange for the EK. We tried six courses off the a la carte menu (four savory and two sweet) as well as one of the bites. The food was consistently good and perfectly balanced. The amuse was a charred carrot with a five spice glaze and a small glass of kombucha, which was a nice way to start. We then enjoyed the bite of lamb tartare, which was served on a crispy kale leaf. The next course was a red gurnard with artichokes and beans in a tomato vinaigrette. This dish had a very subtle smokiness that was rounded out by the vinaigrette; this was my wife's favorite item. Next was fennel on a bed of apple puree and fermented buerre blanc which was really nicely balanced between the fresh and rich notes going on. Following this we got cod with a trout roe sauce, which also incorporated some smoked roe. Between this course and the main we received a second surprise of broccoli dashi which was really interesting. The main was a grilled quail stuffed with a morel in a purslane sauce, Chinese broccoli stuffed with fermented vegetables, and bimi and fingerling potatoes in a buerre monté sauce. Each element of the dish worked perfectly, and this was my favorite course. For dessert we got the Pavlova and the corn crème caramel. The crème caramel was like a flan, and was topped with a buerre blanc ice cream. The Pavlova was really interesting, almost not sweet at all but very earthy with a buckwheat cookie, rhubarb, and horseradish ice cream. I've never had anything like it as a dessert but it was tasty. The service was friendly and attentive, even with a huge group of 30 dudes coming in about halfway through service (it was actually cool to watch them prep for such a huge group). All in all I'm glad we finally got around to coming in, I would definitely return.

My partner and I had a wonderful meal here. We chose the multiple-course tasting menu and highly recommend this! I am gluten-free and my partner is not, and they were able to accommodate both of us wonderfully. The staff was absolutely amazing. They are very good at their craft and they know their food very well. With each dish, one of the chefs would explain what it was, how it was allergy friendly, and how to eat it. It was one of the best meals I’ve ever had. I loved watching the chefs prepare each meal in the open kitchen layout. It was like watching your own personal cooking show. I would highly recommend Wils to anyone, especially if you seek an incredible gluten free fine dining experience.

We were almost in the kitchen and yet it took until the end of our 5-course menu before we finally had real contact with the (busy!) kitchen brigade. Chef de Cuisine Thomas Val gave us a 'rhubarb candy', made from the heart of raw rhubarb encrusted in a mix of sugar and black pepper. I really hate those boiled rhubarb strings, but this was so delicious! And who would have thought that you could make three delicious desserts from olives, celeriac and pistachio? Chef pastry chef Tania Yabra, who is working so happily, can do it! Star chef Joris Bijdendijk has created a fine restaurant with Wils at his star firm. The bread is delicious and comes from the bakery on the ground floor, where you can buy it in Wils Bakery Café. Doing!

Very disappointing experience. The burger was extremely dry and almost tasteless. The vegetables felt undercooked and added no flavor at all. We asked to replace the burger with a steak, but the steak arrived after a very long wait and looked honestly terrible. It was not properly cooked, so we decided to cancel it altogether. The fries were another letdown — both too dry and too oily at the same time, which made them unpleasant to eat. The only thing that was somewhat okay was the mac & cheese, but unfortunately one decent item can’t save the overall experience. For the price and expectations, this was far below standard. I wouldn’t normally write a negative review, but this visit really missed the mark.

Food is good, service is terrible. 5-6 waiters all wandering around but pretending not seeing us even until 40-50 minutes after we’ve finished our dishes. This is something incredibly rude that I’ve never seen before in any Michelin-star restaurant. Prevent going to this spot if possible.
