The inside of each bitterballen is similar to that of a paste. The bitterballen sauce is reminiscent of a honey mustard. Love the little flags they put on the toothpicks :) also reasonably priced for a tasting platter. Overalll the meal was decent for tasting but it was a "once and done" kind of meal. I don't think I would get it a second time.
